Avocado Rice Cake Snack

I’m having so much fun at the DOLE Summit today! I cannot wait to share all of my photos and new recipes with you when I have some more down time!

Let’s talk about snacks:
I have to have snacks throughout the day. I’m not one of those people that can have 3 meals a day, I basically have to eat small meals and snacks to keep myself from getting hungry.
Hangry: (adjective) Feeling or showing anger caused by hunger. Combination of “hungry” and “angry.”

Avocado-Rice-Cake-Helathy-Snack-1
This is one of my favorite snacks in the entire world. Not only does it keep you from getting hungry but it’s a snack with nutritional value and purpose.

Avocados provide nearly 20 essential nutrients, including fiber, potassium, Vitamin E, B-vitamins and folic acid. This will satiate your sweet tooth, give you a little bit of crunch, and keep you full until dinnertime! Win win… win! POWERSNACK!

It’s funny, because I never liked avocado growing up. I loved guacamole, but that was about it. Since discovering all of my food allergies, I’ve branched out and started liking so many foods that I never did before. In California, we refer to avos as “California butter.” Avocados are super buttery and creamy and can actually be used in place of butter and oil in recipe. So if this sounds a little weird to you, try it out on toast first! Just think: butter on toast… avocado on toast… similar, and soooo good for you! The lemon, salt, and pepper add the best flavor to avos, and I’ve heard lemon pepper is bomb.com mixed in too! I need to try that one!

I’m super super excited because today I’m going on a blogger summit for DOLE!
Myself and 10 other bloggers will be joining the DOLE team for a few days dedicated to healthy eating, cooking, and nutrition! I cannot wait to meet the other bloggers, we’ve already been having a twitter party chatting up a storm!
I’ll be updating you guys on my trip via Instagram and recap all of the delish recipes for you here on my blog!

I hope that everyone had a healthy happy St. Patricks Day on Monday!

As I told you on Monday, I ate healthy green meals and snacks allll day!
The best thing about eating greens is that they’re filled with so many nutrients, vitamins & minerals, that they give you TONS of every throughout the day. I actually felt really energized and amazing all day long. Here’s a look of what I ate (huge green salad for dinner not pictured):
For breakfast I started off with a green smoothie made with a handful of spinach, 1 frozen banana, 1 pear, and 1/2 cup of unsweetened vanilla almond milk!
Green Smoothie St Patricks Day
A couple hours later I had a little snack with a half of a small avocado mashed up with a little lemon juice, and a pinch of salt & pepper on top of a brown rice cake! Best. Snack. Ever.

Then I had some delicious Mint-Matcha Chia Pudding that I discovered from Kathy Patalsky’s blog The Lunchbox Bunch!

Next up I ate an entire bowl of Kale Joy Sweet Mustard Kale Chips. Whoever decided one bag of kale chips was 2 servings is SOOO wrong. I eat the whole bag, every time!

Yesterday I worked on a freelance project all day and then went out for a paddle with my friend Blake! It was absolutely gorgeous out at the water was perfectly calm and flat and there was absolutely no wind. The perfect paddling conditions!

After Paddling, I went to Full Psycle to get my spin on. Since Full Psycle just opened their second location at Bella Terra in Huntington Beach, the instructors are bouncing around between studios, so this is their first week with completely new schedules. I’m such a creature of habit and was a little intimidated to try a new teacher last night but I did! The class was really challenging and I worked super hard!

Speaking of Full Psycle opening their second studio, I went to the Grand Opening at Bella Terra in Huntington Beach last weekend! The new studio is soooo nice! The air conditioning is amazing, the sound system is incredible, and there is tons of free parking! If you live near HB you have to go check it out! Oh, and your first class is free with the promo code “FIRSTCLASSFREE” and they also have free rental clips for your first class! No reason not to try it!

Now onto the nom noms! I saw Kathy’s Mint-Matcha Chia Pudding recipe on Sunday night and happened to have all of the ingredients on hand, so I whipped up a batch with a few little adjustments, put it in the fridge overnight, and enjoyed it on St. Patrick’s Day!

Natural-Products-Expo-West-27And now for my favorite part, I totally stalked the Annie’s Homegrown booth because obviously I’m obsessed with their bunnies (as seen in the background of my blog)!

Natural-Products-Expo-West-28I saw these adorable custom bandanas with their bunny “Bernie” all over them as part of their decoration. Every time I walked by their booth, I stared at them with envy, and on the last day of Expo, a member of the Annie’s team grabbed a bandana from underneath their product, handed it to me, and said, “here, you need this!!!” BEST. DAY. EVER.!!!!! I folded it up and wore it as a headband for the rest of the day!

Natural-Products-Expo-West-25Thank you Annie’s Homegrown for my favorite new accessory!

I hope you little bunnies had a great weekend!

Antioxidant Smoothie

Before I get to my smoothie recipe I wanted to talk about a couple of things!

First: Thank you thank you thank you to all of my little bunnies who ordered shirts and “Eat More Rabbit Food” merch! I can’t even tell you how thankful and humbled I am by your support! I’m also so happy that you guys love rabbit food as much as I do : ).

Second: Sorry for being a little MIA on the blog! Once I list merch in my online shop, it turned in to utter madness (and happiness)! I get so excited when I see your orders come in and want to get them packed up and shipped as fast as I can so you can wear your new goodies, but then I totally stress myself out thinking I’m superwoman lol. But guess what, everyone’s orders (up to today at 2pm) have been shipped! WOOO!! It’s just me myself and I running my blog, email, Instagram, Facebook, Twitter, and Pinterest, so when I add shirts into the mix, I literally go crazy. Today, I ate an entire bag of goldfish while I packed orders and laughed when I realized the bag was empty. Im stress eating like crazy this week! I’m also working on a huge freelance graphic design project right now, so I have a feeling I will be buying another bag of goldfish this week.. haha. These are things I used to beat myself up about, but now, I know that I’m stressed, I’m eating because I’m stressed, I’m going to get my workout on later tonight, everything will be ok, and life goes on! I’m glad to have a much healthier perspective on food now vs a couple of years ago… which leads me to my next subject! The Organic CBD Nugs help with stress.

Since this week is National Eating Disorder Awareness Week, and I wanted to post a different kind of Transformation Tuesday. I didn’t just want to post this, I NEEDED to post this. If you guys have been following me for a while, you’ve probably read my weight loss story, but today, I wanted to talk about my recovery/weight gain story!

Before and After RecoveryYou may have noticed that I don’t really talk about weight very much. I am totally open to talking about my before (heaviest) and after (lowest) weights. I can tell you that in the photo on the left, I was at my worst in my eating disorder and I weighed around 100 lbs. But now… I don’t care what I weigh. Yes, I weigh myself on occasion to make sure I’m in a normal range for my body, and am not getting crazy with the bags of goldfish (haha), but for the most part my jeans and bra are a good indicator of how I’m doing. I will notice if I go to Sprinkles Ice Cream too many days in a row that my bra is feeling a litttttlllleee snug so I replace the Sprinkles Ice Cream with banana nice cream that I make in my Yonanas. It’s taken me a LONG time and a lot of hard work to get to this place where I don’t beat myself up over certain things, and can happily allow myself things like goldfish and ice cream, but it has been 100% worth it.

During my weight loss journey, I became obsessed with losing weight. I loved when people would call me “tiny” and “skinny” and was driven by people who thought that I was too thin. In my ED mindset, the thinner the better. But did it equal happiness? No, not at all. I was extremely depressed, miserable, always hungry, in pain, and my brain was foggy because I wasn’t nourishing my body with enough calories. At my lowest weight of about 100 lbs, I was never small enough. At this point I was terrified of most foods (even fruit, wtf), I had alienated myself from all of my friends, and never had any energy. At one point I didn’t think I was thin enough or worthy enough to live. That’s when I has a huge meltdown that saved my life. I started therapy and working with a nutritionist to become happy and healthy again, which was the best decision I’ve ever made. Was it easy? No. Was it fun? Not really. But was it worth it? Yes. During my recovery I realized what it was like to live again and eat freely without caring. Instead of working out to burn what I ate, now I workout because it’s fun and I love the friends that I’ve made at spin. I eat healthy because I love the way it makes me feel. It scares me when I look back at old photos when I was too small and thought I was “fat.” It’s terrifying how frail I was. I’m so happy to be where I am today! I have so much more muscle and love my strong legs and hiney compared to what I looked like during my ED. Starving & overexercising will not make you happy, no matter how much you think it will. Say yes to healthy eating, sexy muscles, and happiness! I hope that by sharing my story, I can inspire just one person to choose recovery and a healthy lifestyle!

Now that the serious part is done, onto the recipe! Today’s recipe is one of my best friend’s favorites! I can’t eat berries (worst allergy ever… boo), so I make this for my sister and her fiancé to enjoy while I stick with my Tropical Green Smoothie!
