Slam Dunk Lettuce Wraps + Dole Giveaway

I love DOLE Chopped Salads because it’s a quick and easy way to eat more rabbit food. They’re filled with all sorts of goodies like different lettuces (green cabbage, red cabbage, and kale), broccoli slaw, carrots, and even snap peas! It’s an easy way to change up my usual all spinach or all kale salad and get some different textures and new flavors in the mix. My fav way to eat a chopped salad is to pour the entire bag (yup, all 4 servings! Only 100 calories and 8 grams of fiber for the entire thing!) into a gigantic mixing bowl, throw on some homemade dressing, mix it up, and nom nom that shiznit up. Straight out of the mixing bowl. Awww yeahhhh. But besides eating the entire bag like a rabbit, I love branching out and making new recipes. For example, I love filling spring rolls with the Asian Blend for a quick and easy appetizer when friends come over!

Since March Madness is just around the corner and basketball is all about those slam dunks, I teamed up (no pun intended!) with DOLE Salads to make the ultimate dunk recipe! Serve them up while watching the March Madness games as a fresh snack that’s so healthy, you can dunk into that sauce alllll you want! I love that the Asian Blend is filled with green cabbage, red cabbage, kale, broccoli slaw, snap peas, and carrots. It makes for a super easy veggie filling for my lettuce wraps with little prep!

These fresh Asian lettuce wraps are so easy to make, and even easier to devour!

Dole-Chopped-Salad-Asian-Blend-Helathy-Lettuce-Wraps-4Love this adorable chopping block from DOLE to chop my ingredients! This bamboo Mezzaluna style chopping block comes with a double-bladed herb knife that actually stores inside of the unit when it’s not in use!

Slam Dunk Lettuce Wraps
Serves 4-5 as an appetizer or 1 as a meal!

Lettuce Wraps:
2 cups DOLE Chopped Asian Blend
1/2 cup cooked quinoa, chilled
2 Tbs cashews, chopped
2 Tbsp Sweet Chili Sauce
5 butter lettuce leaves

Sweet Chili Sauce:
3/4 cup rice vinegar
3/4 cup honey
3 garlic cloves, minced
1 Tbsp chili pepper, finely chopped
2 tsp red-pepper flakes
1/2 tsp coarse salt

Cook and chill quinoa beforehand. Combine all ingredients for the sweet chili sauce, mix well, and refrigerate. In a mixing bowl, combine the DOLE Chopped Asian Blend, quinoa, and sweet chili sauce. Scoop the filling into lettuce wraps using a 1/4 cup measuring cup. Dunk into sweet chili sauce as desired, and enjoy while watching March Madness!

So… what is Pitaya?
Pitaya, otherwise known as dragon fruit, is a fruit that comes from the cactus species. It’s native throughout Asia as well as Mexico, Central America, and South America. It’s glossy magenta exterior cuts open to reveal a gorgeous vivid pink interior (Central America), studded with black seeds. Depending on where the fruit is from the flesh can also be white inside (Asia).

What does it taste like?
Its texture is very similar to a kiwi, but its flavor is more mild, almost a cross between a kiwi and pear.

I  would definitely say that Pitaya puts the “Super” in Superfruit!
These smoothie packs are an easy way to add pitaya to your daily noms. Since pitaya can be tricky to find (often at Asian and exotic food markets), it’s great to have it right at my fingertips and year round in my freezer!

Barbie Bowl
Serves 1

Pitaya Plus Smoothie Pack
1/4-1/2 cup coconut water
1 frozen banana
1/2 cup frozen pineapple
1/2 tbsp coconut butter

Toppings:
1/2 banana, sliced
2 Tbsp granola (I love Nature’s Path Hemp Plus)
1 Tbsp shredded coconut

Blend until smooth. Start with 1/2 cup of coconut water and add until desired texture is reached. Add toppings, and enjoy!

#ChotallyAwesome Giveaway (CLOSED)

You guys know that my blog is very light hearted and most of all real. As a blogger for Chobani, I think it’s important to address what’s going on in the world of yogurt!

As you may have heard in the news, Whole Foods will no longer be carrying Chobani Greek yogurt. Whole Foods said it will no longer sell Chobani because they are phasing out items that contain genetically modified ingredients. The decision was also influenced by Whole Foods’ plans to sell more exclusive products, and Chobani is available in most supermarkets. Funny that Whole Foods sells Dannon’s Oikos – which isn’t GMO-free, and Fage – which is available at tons of other grocery chains… makes their statement a little odd!

Of course, like everything else in this day and age, there’s now tons of controversy surrounding Chobani and GMOs (Chobani’s dairy cows are fed food that contains GMOs). This is a subject that comes up a lot on my Facebook and Instagram.

I often get asked “Why do you support brands that contain GMOs?” Well I don’t actually support GMOs, but I support healthy eating! I believe in promoting healthier options whether they be organic or not. While I do think organic is great for our bodies and should be consumed as often as possible, I also think that when it comes down to it…  the important thing is to eat fruits and vegetables and make healthy choices. If you can afford organic produce and dairy, that is great, but if you can’t, you’re still going to be better off than eating other foods (i.e. fried and junk foods). Fruits, veggies, and protein packed Greek yogurt for the win!

Something I truly love about Chobani, besides the fact that their yogurt is loaded with protein, preservative-free, and free of artificial flavors, is that they are an official sponsor for Team USA for the Winter Olympics Sochi 2014! I was beyond excited to see Chobani as an official sponsor for the London Summer 2012 Olympics because for the first time, Team USA was sponsored by a brand that athletes actually eat. Since the olympics are all about athletics and performance, it drives me crazy seeing sponsors like McDonalds and Coca Cola, because we all know that’s not what these incredible athletes are eating. I’m so pumped to see Chobani powering Team USA once again with their all natural yogurt!

To some people, consuming a 100% organic non-GMO diet is very important, but my main focus for myself and my blog is to choose the freshest and most natural foods that I can! Now that I’ve shared my take on the GMO/organic topic, it’s time for the fun stuff!

This past Sunday, the Chobani Yogurt Truck made a stop by my house as a way to say thank you. They’re HUGE truck had an awesome quote on the side of it that read “Every cup is preservative-free and artificial flavor-free. And we’re giving every cup in this truck away totally-free.” I invited tons of friends and neighbors to come over and enjoy some free Chobani Greek yogurt with me and the CHO team.
