A few weeks ago, I was sent a a 12 pound package from Bard Valley Natural Delights™ Medjool Dates! With an abundance of fresh dates, I knew it was time for a new dessert recipe! Mmmm my fav! This is an adaptation of my favorite Vegan Chef, Chef AJ’s Raw Brownies!


Raw Brownie Bites
Makes 12 servings
1 cup pitted Medjool dates
1/2 cup unsalted sunflower seeds
1/2 cup walnuts
3 Tbsp raw cacao powder (or 4 Tbsp cocoa powder)
1/2 tbsp pure vanilla extract
Blend the sunflower seeds and walnuts in a food processor or high powered blender until finely ground but not a nut butter consistency. Add the cacao powder and vanilla extract and blend again until mixed evenly. Remove pits from dates. Add the the dates and process until a dough like mixture is formed. You should be able to sculpt the dough without crumbling. Using a 1 Tbsp measuring spoon, scoop the dough and roll into 12 balls. Keep in the refrigerator for 1 week or freezer for up to 1 month. Enjoy!

1 frozen banana

I am on day 3 of the skinny bunny cleanse and have been craving some type of chocolatey dessert. Since I am planning on following the Rabbit Food Pyramid after the cleanse, I would use them in a healthy way- probably with the raw bites. They look so delish. I’m new to plant based eating and am a huge fan! I bought my first package of mejdool dates yesterday and have so far made two recipes with them. I made veggie brownies and a yummy peanut salad dressing. I had no idea how versitile this little date is. I just recently found this site and it is opening my eyes to healthier living. I definitely used the dates in the recipes provided. Hi Catherine! How ironic that I was sitting here savoring the Black bean and Spinach brownies when I read today’s post! Lucky you to have received such a lavish gift! When I made the brownies I was skeptical at first, but the combination of medjool dates and cocoa powder camouflages the other “secret ingredients”. I hate to admit that I ate too many Medjools while I was preparing the brownies, so I only had 9 left for the recipe!! So, if I am selected, I will put a moderate quantity aside for my daily indulgence of nature’s “candy” while trying to observe moderation, and use the others to continue using in your yummy recipes and experimentation of my own (almond butter/medjool date toast anyone?) I would use the dates in everything!! I bake with dates all of the time, I love the sweet, caramelly flavor and the fact that they work so well in all of my recipes!! I even once made a sugar, oil, and gluten free sticky toffee pudding cake using nothing but dates for all of the sweetener and caramel sauce! yum!

I think I have had dates once or twice in my life. As an avid baker, I have a huge sweet tooth and love experimenting with different dessert recipes. I have been waiting to try out a healthy oatmeal-banana muffin recipe I saw on pinterest (made with Greek yogurt and no flour). I think adding dates would be a great addition to this. I think I would also add them to my overnight oats an try some raw brownie bites.

Medjool dates are my favorite! Great giveaway!
I have never had them before so it would be amazing if I won. I am diabetic so these would be wonderful to start learning how to make yummy but healthy desserts. I want to really get myself into a healthier lifestyle so that my sweet baby girl will be raised in one and hopefully not have to face issues like diabetes and being overweight.
With the dates I would lose all the guilt I have for my ridiculous sweet tooth! I’ve been trying to find ways to satisfy it without feeling like I’ve ruined EVERYTHING! I love your blog, such an inspiration.
I would probably eat some, make a date puree out of some for smoothies & dips, and try out your Raw Brownie Bites for sure!

I would make several desserts with dates! Right now, I’m trying to start eating healthier so I’ve printed up several recipes for healthier sweets, which all call for dates. I can’t find any where I am from, so I’m having to use sugar or improvise at the last minute. I have been super unsuccessful. It’s not anything exciting, I just want to actually have healthier sweets!

I like to put the dates in my food processor with a little water and make a spread. I top EVERYTHING with it. Bartlett pear slices with a little goat cheese and date spread = heavenly!

This post has inspired me to give dates a try! I would definitely try your shake recipe, but I think I might use some dates in place of raisins in a coconut-oatmeal-chocolate chip cookie recipe that I love.
I have never had dates! We can’t find them in any nearby market and I have not had the chance to go and search for them yet! So, that in mind, I would make all of the delicious recipes requiring them, since I haven’t yet been able to!

I have a sweet tooth and that has ALWAYS been my most difficult challenge!!I am trying to feed the “Sweet” hunger center of my brain the correct, healthy foods and the dates will be the perfect food to help me maintain my goals and my motivation for the healthy lifestyle change I am looking for.

Then I would use them as a delightful snack when I’m craving something fruity and sweet, as well as a junk-food substitute. I’ve recently taken a vegan pledge, so I know how difficult it can be to find wonderful foods that fit that lifestyle!
My two favorite things to make with dates are a chocolate peanut butter tofudding pie with a date & nut crust and raw brownie bites which I made for myself the first time to sate a craving with no recipe! I introduced dates to my diet when I got rid of processed sugars in our house I’ve had a lot of success pleasing even Non-bunny food eaters with the results. Plus i have a sugar allergic friend who has requested the tofudding pie but I’ve been putting off making it for her because of our tight budget this month!
I love to use dates in muffin recipes. They are so good! I also love bacon wrapped dates!
I love Medjool Dates. I currently purchase them at Sam’s on a regular bases. I use them to eat alone as a morning snack…mmm

Since I have never cooked with dates, I would probably go on a healthy recipe google search and try every one I could find! I am soo happy to find you website! If I won, I would experiment like crazy with dates! I especially want to try my oatmeal protein cookie recipie with the addition of dates–yumm! Or, maybe a date/orange/ginger chutney as a naturally sweet sauce to put over chicken or in stir fry! The opportunities to experiement are endless and exciting–all I need are the dates!

If I won the dates I’d totally have to try the shake! I read through the benefits of the dates and I’m interested to see that they are low to medium on the Glycemic Index. My Uncle Marty recently found out that he is a diabetic and is having a hard time finding new healthier food to eat. Sweets are his downfall. I’m planning on finding some for him to try this week!

One of my favorite uses for dates is in charoset. It’s one of the components of the seder plate for Passover, so I really only eat it once a year, but I love it so much so I often contemplate making it just for kicks. My family has always made a version that doesn’t include dates, but last year I experimented with my friends and included dates and it blew my mind.
I also love just eating dates. I think of them as the sugar fruit. But they’re healthy!
Dates stuffed with Gorgonzola!!! Pop them in the oven for a few min to melt the cheese, and they are perfect! A little fiber with a little protein!!

Spend the night in with my favorite man-friend and taste test a bunch of fantastic recipes centered around…well…dates. I have to say I have never had a date, although somehow I can imagine what they taste like-quite excited! I used to be an ex-vegan (thinking about joining the team again), due to lack of resources in college went back to eating meat, then developed Hypothyroidism (figuring that out now)…so I’d love a chance to win something to help me get my body back on the healthy track. I generally eat well but every little bit helps. I’m 5’8″ and 250, used to be 120…working hard on figuring out my body again and what I needs to get back to a healthy weight. My first ever response! I love your blog and find it very inspiring to read about someone who has gone through the same struggles as me–we have a very similar weight loss experience and I’ve been working on practicing a plant based diet for about two months now.
As for using the dates, well to be honest I don’t know that I’ve ever had them before! I’m not much of a baker, but I am a huge fan of chocolate so I’ve been trying to find healthier dessert recipes that are simple enough for me to make. I would try making your Black Bean & Spinach Brownies first, but these brownie bites sound pretty amazing too..

I am new to this way of eating, vegetarian, vegan…learning and loving my new choices! While I’ve never eaten a date I would love to try them. If I won I would make your receipes and try them out and share them with my kids and grandkids! I already have my son doing green smoothies every morning! My son who as a child would not eat anything green. I used to find peas smeared on his jeans….and green beans in the plants and in cabinets……lol..he just refused to eat vegetables. Dates….. what in the heck do those taste like?? I’ve tried a lot of interesting food in my life, but the one thing I can honestly say I’ve never tried, and it’s such a simple food with so many benefits!
So, for someone who has never tried dates what would I do with my dates. Well eat them of course! I’m excited to try them natural and rolled up with some coconut (my fave), the pistachio or almond. But, it also sounds like it would be great added into a Michigan salad with cherries and blueberries (which we are known for), so walnuts and maybe some blue cheese??? Who knows until I can try it

I became a vegetarian about a year ago and this past year has been an amazing food journey. Originally I became a vegetarian to help eliminate processed foods from my diet. Makes no sense right, well, it has become something more meaningful and I have now ventured in to reducing refined sugars. Problems is, I have a sweet tooth. One of my favorite recipes is zucchini bread, but it is loaded with sugar. I use organic cane sugars and such, but I would really love to explore a way to make this recipe with dates =)
I always thought dates looked like dead bugs. But they’re really tasty and a great alternative to sugar and artificial sweeteners, so I’m getting over that. I’m looking forward to completely eliminating added artificial and processed sweeteners from my diet and using dates as a substitute!

As someone who is newly vegan, but also a dessert addict, I tend to struggle with finding foods that are healthy, but still yummy. My mom once bought the coconut delight rolls, and I loved them! Sadly, living a very corporate, buissnes man like city, the closest place to get them is about an hour away.

If I won I would use the dates to aid in my weight loss seeing as I too have a sweet tooth problem. As well as use them to replace refined sugar in snacks and treats I make for my 3 year old daughter who I want to grow up healthy without constantly worrying about her weight as I have done for the past 27 years. I’m so glad I stumbled across your blog because I really needed some inspiration!

Since I make pretty much all of the recipes you post, I would definitley make the brownie bites and milkshake as well as add them to my oatmeal. I love making new yummy things for my daughter and I to try!
I would definitely use them to make raw brownies along with almonds, cacao powder, lucuma, and goji berries. Also, nothing wrong with slicing one open and stuffing it with almond butter!
I’ve lost 93 lbs and I’m always looking for ways to live a healthier and happier life. I also use dates to make healthier desserts in my kitchen. One of my favorites is banana, chocolate, nut squares. I take a banana, walnuts, and Medjool dates and process until you get a paste. Spread into a backing dish lined with plastic wrap. Then process another banana, raw cacao, raw honey, and freshly ground almond butter. Pour over the first layer. Then top with slivered almonds. Freeze for 2 hours, cut into squares, and serve. Yum! Looking forward to trying some of your date recipes!!

I looooove to make my homemade Larabars. I use dates, almonds, cashews, a scoopful of peanut butter and a hefty sprinkle of cinnamon. These would come in handy for making them, as we go through them like crazy. I make 2 batches a week!
I would really like to try these recipes to find something healthier to snack on.. I’m a SERIOUSLY picky eater so anything new to try and add to the list of foods that are better for me is a huge plus! These sound amazing!
Two words: Date Bread. It’s the same consistency as a zucchini bread or banana bread. The dates are paired with cardamom in the Iraqi Cookbook. So good.
If I won, I’d eat them alone as a snack or chopped up & mixed in with my daily Greek yogurt!
I am a 30 something mommy of 4 trying desperately to get my body back an have just started eating plant based food to stoke the fires of my healthier lifestyle! Im also on a mission to get my kids to eat healthier as well! With the Medjool Dates I plan to prove to my hubby and kiddos that plant based foods are yummy too!

I love your blog and it inspires me to eat much healthier while still enjoying my food and not feeling as though I am missing anything. Your recent posts on healthy snacks and eatin while on rpad trips came at the perfect time as we traveled over 3,000 miles for our summer vacation and I was able to still eat well.

If I was given the Medjool Dates, I believe my cravings for sweets would be eliminated as you can do so much with these magical little things to help satisfy those sweet cravings with something much more nutritionally sound for you!

Hi Jasmine! Oh no! I have not tried making the Raw Brownie Bites without nuts, but you could try replacing the walnuts with all sunflower seeds! I’m not sure if the texture/consistency would change, but let me know if you give it a try! xo
Thanks Catherine, I’m going to try it with all sunflower seeds or maybe even pumpkin seeds. The trouble now will be finding ones that don’t say “May Contain nuts” Maybe oats would work?
Oh my gosh! I just made the brownie bites. They are delicious!!! There’s one problem though, they can be addicting!! These are going to be my new favorite after school snack for my kids, and me!
YUUUUUUMMYYY!!!! i’ve totally been craving these for days and I just made them this morning! I didn’t have any sunflower seeds, so i subbed with almonds and I didn’t have enough walnuts so i used about 1/4 C walnuts and 1/4 C peanuts. Plus my fair trade cacoa powder
and 1 T coconut haha I love rffmbt! Thanks for yet another deeelicious recipe! (and thank Chef AJ for me too!)
The Raw Brownie Bites were actually delicious! I even tried to make them into smaller circles so that it would seem like I had more than 12 (I wanted them to last longer!). I really didn’t expect them to taste so good and it’s nice to have a snack that you can have for the week rather than finish them within the day.
