A few weeks ago, I was sent a a 12 pound package from Bard Valley Natural Delights™ Medjool Dates! Inside this delightful box (no pun intended) was a combination of twelve packages of delicious Medjool Dates and Date Rolls from Bard Valley! Natural delights sent me some of their amazing Date Rolls, which included 3 different flavors: almond, pistachio, and coconut. I had never tried date rolls before, but they are pretty addicting! Coconut was my favorite, so much sweet chewy goodness in one bite! Along with a generous amount of date rolls, they also sent me some whole Medjool dates which were fantastic. I go through tons of dates in my kitchen because I love using them in place of refined sugar for baked goods & desserts, and love nibbling on them when I am craving something sweet.

With an abundance of fresh dates, I knew it was time for a new dessert recipe! Mmmm my fav! This is an adaptation of my favorite Vegan Chef, Chef AJ’s Raw Brownies!
Raw Brownie Bites
Makes 12 servings
1 cup pitted Medjool dates
1/2 cup unsalted sunflower seeds
1/2 cup walnuts
3 Tbsp raw cacao powder (or 4 Tbsp cocoa powder)
1/2 tbsp pure vanilla extract
Blend the sunflower seeds and walnuts in a food processor or high powered blender until finely ground but not a nut butter consistency. Add the cacao powder and vanilla extract and blend again until mixed evenly. Remove pits from dates. Add the the dates and process until a dough like mixture is formed. You should be able to sculpt the dough without crumbling. Using a 1 Tbsp measuring spoon, scoop the dough and roll into 12 balls. Keep in the refrigerator for 1 week or freezer for up to 1 month. Enjoy!

2 Raw Brownie Bites
1 frozen banana
1 cup unsweetened almond milk (or milk of your choice)
Combine almond milk, banana, and 2 Raw Brownie Bites in a blender and blend until smooth.

Since I am planning on following the Rabbit Food Pyramid after the cleanse, I would use them in a healthy way- probably with the raw bites. They look so delish. These dates and date rolls would be perfect, delicious snacks for me! I would stuff some of them with a mixture of roasted sesame seeds, sliced almonds, and crushed cardamom, because my host mom I had when I studied in India enjoyed eating them that way 🙂 And probably some healthy oatmeal date nut muffins too! I made veggie brownies and a yummy peanut salad dressing. I had no idea how versitile this little date is. Lucky you to have received such a lavish gift! When I made the brownies I was skeptical at first, but the combination of medjool dates and cocoa powder camouflages the other “secret ingredients”. I hate to admit that I ate too many Medjools while I was preparing the brownies, so I only had 9 left for the recipe!! So, if I am selected, I will put a moderate quantity aside for my daily indulgence of nature’s “candy” while trying to observe moderation, and use the others to continue using in your yummy recipes and experimentation of my own (almond butter/medjool date toast anyone?) I’m now on week 2 1/2 of my Rabbit food lifestyle and love the improvement in my energy and the decreasing scale! Thank you Catherine!!

I have never been someone who would go for dates as first choice just because I did not know the benefits until now. So these dates that you have written about would be great for me. I need to incorporate more delicious snacks since I am on the path to a better lifestyle. I have read some great salad recipes and feel they would go great with some nuts as well. I can only imagine how they would benefit a nice batch of oatmeal or some muffins. I’m so excited to try the other recipes where you substitute dates for sugar. My father is vegan and is coming to visit for his 80th birthday. I’m excited to prepare something delicious that others at his party, vegan or not, will enjoy!

I bake with dates all of the time, I love the sweet, caramelly flavor and the fact that they work so well in all of my recipes!! I even once made a sugar, oil, and gluten free sticky toffee pudding cake using nothing but dates for all of the sweetener and caramel sauce! yum!

I have a killer sweet tooth and these would help me out so much by eating healhy sweet delicious snacks instead of other UNHEALTHY sweet delicious snacks…like deep fried wagon wheels which I just had this past Saturday at a local carnival. I have been waiting to try out a healthy oatmeal-banana muffin recipe I saw on pinterest (made with Greek yogurt and no flour). I think adding dates would be a great addition to this. I think I would also add them to my overnight oats an try some raw brownie bites.

I introduced dates to my diet when I got rid of processed sugars in our house I’ve had a lot of success pleasing even Non-bunny food eaters with the results. Plus i have a sugar allergic friend who has requested the tofudding pie but I’ve been putting off making it for her because of our tight budget this month!

My friend goes to school at Bard and has told me about this brand and their products so when I saw that you were teaming with them for this giveaway I almost cried! I read through the benefits of the dates and I’m interested to see that they are low to medium on the Glycemic Index. My Uncle Marty recently found out that he is a diabetic and is having a hard time finding new healthier food to eat. Sweets are his downfall. I’m planning on finding some for him to try this week!

I would try as many date recipes from your blog that I possibly could and use them to cater what might be the worlds first DATE PARTY! Wahoo! Dates for everyone; and I mean the food, I unfortunately am not a good match maker.
Seriously though… I would throw a date party with a host of your recipes. Pictures would be provided as proof. Perhaps I could even get my food blogger friend Ginger Snapped to give food styling advice!

It’s one of the components of the seder plate for Passover, so I really only eat it once a year, but I love it so much so I often contemplate making it just for kicks. My family has always made a version that doesn’t include dates, but last year I experimented with my friends and included dates and it blew my mind.
I also love just eating dates. I think of them as the sugar fruit. But they’re healthy!

I have to say I have never had a date, although somehow I can imagine what they taste like-quite excited! I used to be an ex-vegan (thinking about joining the team again), due to lack of resources in college went back to eating meat, then developed Hypothyroidism (figuring that out now)…so I’d love a chance to win something to help me get my body back on the healthy track. I generally eat well but every little bit helps. I’m 5’8″ and 250, used to be 120…working hard on figuring out my body again and what I needs to get back to a healthy weight. Dates could be a helping hand 🙂

I love your blog and find it very inspiring to read about someone who has gone through the same struggles as me–we have a very similar weight loss experience and I’ve been working on practicing a plant based diet for about two months now.
As for using the dates, well to be honest I don’t know that I’ve ever had them before! I’m not much of a baker, but I am a huge fan of chocolate so I’ve been trying to find healthier dessert recipes that are simple enough for me to make. I would try making your Black Bean & Spinach Brownies first, but these brownie bites sound pretty amazing too..

And I would use the medjool dates in every recipe I would make for the tea party. You said that you use them in your raw brownie bites, so why not have those!? Or your healthy vegan banana bread?! And I would figure out how to use the medjool dates in other little “healthy” tea cake inspired ideas. I think it’s great that you’ve come this far and you really are an inspiration to me! If I won I would make your receipes and try them out and share them with my kids and grandkids! I already have my son doing green smoothies every morning! My son who as a child would not eat anything green. I used to find peas smeared on his jeans….and green beans in the plants and in cabinets……lol..he just refused to eat vegetables. Today he had spinach, kale, carrots, strawberries and mangoes in a smoothie!

Dates….. what in the heck do those taste like?? I’ve tried a lot of interesting food in my life, but the one thing I can honestly say I’ve never tried, and it’s such a simple food with so many benefits!
So, for someone who has never tried dates what would I do with my dates. Well eat them of course! I’m excited to try them natural and rolled up with some coconut (my fave), the pistachio or almond. But, it also sounds like it would be great added into a Michigan salad with cherries and blueberries (which we are known for), so walnuts and maybe some blue cheese??? Who knows until I can try it 🙂

Originally I became a vegetarian to help eliminate processed foods from my diet. Makes no sense right, well, it has become something more meaningful and I have now ventured in to reducing refined sugars. Problems is, I have a sweet tooth. One of my favorite recipes is zucchini bread, but it is loaded with sugar. I use organic cane sugars and such, but I would really love to explore a way to make this recipe with dates =)

I’m looking forward to completely eliminating added artificial and processed sweeteners from my diet and using dates as a substitute!

My mom once bought the coconut delight rolls, and I loved them! Sadly, living a very corporate, buissnes man like city, the closest place to get them is about an hour away. 🙁 If I won these treats, I would definitely try and make some tasty raw brownies. Would finally be something I can feel good about noshing on! (although your recipes make me feel pretty good too). Much bunny love!

One of my favorites is banana, chocolate, nut squares. I take a banana, walnuts, and Medjool dates and process until you get a paste. Spread into a backing dish lined with plastic wrap. Then process another banana, raw cacao, raw honey, and freshly ground almond butter. Pour over the first layer. Then top with slivered almonds. Freeze for 2 hours, cut into squares, and serve. Yum! Looking forward to trying some of your date recipes!!

July 30, 2012 at 9:54 pm (12 years ago)Hi Jasmine! Oh no! I have not tried making the Raw Brownie Bites without nuts, but you could try replacing the walnuts with all sunflower seeds! I’m not sure if the texture/consistency would change, but let me know if you give it a try! xo

I didn’t have any sunflower seeds, so i subbed with almonds and I didn’t have enough walnuts so i used about 1/4 C walnuts and 1/4 C peanuts. Plus my fair trade cacoa powder 😀 and 1 T coconut haha I love rffmbt! Thanks for yet another deeelicious recipe! (and thank Chef AJ for me too!)

I even tried to make them into smaller circles so that it would seem like I had more than 12 (I wanted them to last longer!). I really didn’t expect them to taste so good and it’s nice to have a snack that you can have for the week rather than finish them within the day.

Looks amazing! I tried the brownie bites but instead of cacao i tried using protein powder and it worked.. I used this protein powder: http://helpforfitness.com.au/products/100-gold-whey-protein

May 15, 2015 at 1:07 pm (10 years ago)boy oh boy, am I dreaming?! the first thing I would do is have some plain, I sooo love medjool dates! Then I also make no-bake energy bars with dates, nut butters, seeds, hemp hearts, sometimes add in bits of chocolate or other dried fruits. I like to make them into squares rather than balls. I haven’t yet tried using these dates for smoothies, but I’ve turned into a smoothie fan and would like to make some with medjool dates! I like stuffing them with peanut butter and adding an almond and rolling them in coconut.
