Banana Roll-Ups

Hi bunnies!

Some of you may have noticed my blog went down a few times last week. I had some technical difficulties, but thanks to Go Daddy, it’s all good now! The response to my last post about bridesmaid dress sizing was overwhelming! It’s absolutely crazy to see how many of us have been through the same situation with clothing sizes or that darn number on the scale. I loved reading all of your comments, and I’m sure that other readers appreciated them as well! You guys are truly empowering! I was also so excited to hear from some of you that had never commented on my blog before. It really showed me how powerful that post was and how much you appreciated it. Sometimes it’s hard to talk about weight and sizes because it’s often uncomfortable and embarrassing, but your support and responses make me happy to share my ups and downs! Just one comment from someone who says “thank you” or “I can relate” makes it all worth it! Knowing that I can help others with my blog is an indescribable feeling. I love you all very much!

Over the weekend I found another “before” photo. Sometimes I really dislike seeing these photos, but when I see them next to my “after” I can’t help but be extremely proud of myself and how far I have come. I hope that these photos can help to motivate and inspire you to continue on your journey and never give up!
Before & After Weight Loss I have a super simple healthy snack for you guys. I love having Banana Roll-Ups for breakfast with some Greek yogurt, as a pre workout snack to fuel me through my barre classes or runs, or as a post workout snack. They’re easy to make and totally hit the spot!

Serves 1

2 soft taco size whole corn tortillas
1 banana
1 Tbs almond butter, peanut butter, or natural nut butter of your choice.
sprinkle of cinnamon to taste

Cover the tortillas with a damp piece of paper towel and heat in the microwave for 15 seconds. Spread the tortillas with nut butter. Cut banana in half and place on the tortillas. Sprinkle with cinnamon, and roll the tortillas tightly around the banana. Slice into half inch pieces like sushi, and enjoy!

Why I like whole corn tortillas vs. whole wheat tortillas: First things first, in the rabbit food world, corn is a whole grain! There are less calories and carbohydrates for two soft taco sized corn tortillas than in 1 whole wheat tortilla. This way you can have more!

Serves 1

1 egg
1 slice whole-grain bread

Using a cookie cutter or knife, cut a heart out of the center of the bread. Spray a pan with nonstick cooking spray. Place the bread in pan over medium to low heat. Crack an egg and place it in the heart cutout. Cover the pan and allow to cook for a few minutes until whites are cooked through. Transfer the finished toast to a plate and adorn with Sriracha or Tabasco hearts. Top the remaining bread heart with homemade Cherry Chia Jam. Happy Valentine’s Day!
Note: I used a 2.5 inch heart shaped cookie cutter.
Cherry Chia Jam

Cherry Chia Jam
Makes about 1 cup of jam

1 cup cherries or berry of your choice (I used frozen pitted cherries)
1 Tbsp chia seeds
1 Tbsp water

Defrost the cherries under warm water until thawed and remove pits if necessary. Place the cherries and 1 Tbsp of water in a blender and pulse until cherries are mashed, but not completely pureéd. Transfer the mashed cherries to a jar and stir in the chia seeds. Refrigerate for about 60 minutes until chia seeds expand and turn the content into a thick jam.

Oatmeal Raisin Cookie Bake

Imagine having a fluffy oatmeal raisin cookie for breakfast. Sounds delicious right? Well I have the recipe of all recipes for you! Satisfy your cookie cravings with a healthy Oatmeal Raisin Cookie Bake that makes for a super quick and easy breakfast on the go, or even dessert for that matter! No actual baking required!

Oatmeal Raisin Cookie Bake
Serves 1 

1/4 cup liquid egg whites
1/4 cup rolled oats
1/2 banana mashed
2 Tbsp raisins
1 Tbsp chia seeds
1/2 tsp vanilla
1/2 tsp cinnamon
1/4 tsp baking powder

Mash the banana and combine with all ingredients until well mixed. Lightly spray a small microwave safe bowl with nonstick cooking spray. Pour the oatmeal raisin cookie mixture into the bowl and microwave (uncovered) for 1 minute and 30 seconds. Remove the bowl from the microwave (caution, bowl will be hot). Flip the bowl upside down on a plate to release the oatmeal raisin cookie bake, enjoy hot.

Pasta Primavera

Pasta pasta pasta where do I even begin?
Pasta can get a pretty bad rap due to it’s often fattening cream sauces, high carbohydrate count, and low nutritional value, but I’m here to tell you that not all pasta is bad! You can still eat pasta and lose weight, or maintain your toned figure. The keys to eating pasta are knowing what kind, and how much.

I couldn’t have said it better myself. Weather you are trying to maintain or lose weight, you could virtually eat anything that you want, as long as you know the correct amount and portions!

Today’s recipe is a healthy Pasta Primavera made with whole wheat pasta. Whole wheat pasta is made from flour that uses the entire grain and contains slightly more protein, and two to three times more fiber than refined pastas allowing you to stay fuller longer while stabilizing blood sugar levels.


Pasta Primavera
Serves 1

1/2 cup cooked whole wheat pasta
1 cup bell pepper (I used 1/2 cup red and 1/2 cup green)
1/2 cup mushrooms
1/2 cup yellow onion
1/4 cup nonfat ricotta cheese
1/4 cup low sodium vegetable broth (I use Pacific)
2 Tbsp pine nuts
1 tsp  salt-free Italian seasoning (I use Frontier)
1/2 tsp minced garlic

Cook the pasta to package instructions. Chop the bell pepper, onion, and mushroom and cook in vegetable broth in a pan over high heat.  While the pasta and vegetables are cooking, combine the ricotta, Italian seasoning, garlic, and pine nuts in a separate bowl and mix evenly. Once the pasta has finished cooking, strain and combine with the ricotta mixture. After vegetables have finished cooking, gently fold into the pasta and ricotta. Serve hot.
Note: If you are allergic to nuts, you can omit the nuts and cook your veggies in 1 Tbsp of olive oil (instead of vegetable broth) for your plant based fat serving.

Southwest Quinoa Collard Wraps

The last time I was in Houston visiting Sam, we invented an awesome dinner dish! Since we were cooking together, this didn’t end up as a single serving sized recipe, but trust me, you will want to have this everyday for as long as your leftovers last! I got Sam totally addicted to quinoa (keen-wa) with my Apple Pie Parfait  and it has turned into one of his favorite whole-grains. If your meat loving boyfriend, hubby, dad, or brother is scared of vegetarian or vegan meals, this one is boyfriend approved and a great option for “Meatless Mondays” if you’re trying to go veggie! If you are a big time RFFMBT fan, you may remember a sneak peek photo of this recipe that I posted on my Facebook page! At last, the detailed recipe is finally here!

This is a great healthy dish if you are having guests over for lunch or dinner. You could even set up a little wrap station where your guests can make their own collard wraps!



Southwestern Quinoa Collard Wraps
Serves 4-5

1 bunch collard greens
1 cup dry quinoa + 2 cups water
1/4 cup low sodium vegetable broth
1 15oz can unsweetened corn
1 15oz can low sodium black beans
1 large red bell pepper
1/2 yellow onion
1 ripe avocado
1 Tbsp lemon juice
1 Tbsp Southwest/Fajita seasoning (I used Mccormick Salt-Free Southwest)

Bring quinoa and water to a boil, then reduce to low heat and cover for 10-15 minutes until water is absorbed. Dice the onion and bell pepper and sauté in a pan with low sodium vegetable broth over medium/high heat. While the quinoa is cooking and peppers and onions are sautéing, rinse and strain the beans and corn. Once quinoa has finished cooking stir the beans and corn into the same pot. After the peppers and onions have become tender and cooked, stir them into the quinoa mixture as well. Add fajita seasoning and lemon juice to taste and gently mix into the quinoa until well combined. Cover the quinoa mixture and set aside. Rinse and dry collard greens and remove stems. Remove the avocado “meat” from its skin, and cut into thin slices. Place a collard green leaf on a plate and fill with 1 cup of the quinoa mixture, 1/4 avocado slices, and roll up into a wrap. Cut in half and serve!
Note: This recipe pairs really well with mango! Cut one mango into slices and add into the wrap along with the avocado for some sweetness.
