I have about 10 favorite flavors but the first one I ever tried was love at first bite. Cashew Cookie, oh how I love thee. It’s made of only dates and cashews, and let me tell you, it tastes like a cookie! A pricey cookie though… at about $2.50 per bar, your grocery bill can add up pretty quickly. Since Larabars are made from simple whole ingredients, I though to myself… pshhh I can make these! So I did.

Cashew Cookie Larabars

Makes 6 bars

1 cup pitted Medjool dates
1/2 cup raw unsalted cashews
1 Tbsp water – if needed

In a food processor, pulse the cashews until they are broken into tiny pieces (do not pulse for too long, as it will turn into powder). Pit the dates and add them to the food processor. Blend the dates and cashews together occasionally scraping down the sides of the food processor. If the mixture is not sticking together, add one tablespoon of water and continue blending. The mixture should stick together and be pliable. Remove the mixture and form into a ball. Place the ball on a large piece of saran wrap. Cover the top of the ball with another layer of saran wrap and flatten with a rolling pin or your hands. Cut into 6 pieces and wrap individually in saran wrap. Refrigerate for 30 minutes and enjoy!
Note: Store the bars in the refrigerator or freezer for maximum life.

    If you have a Harmon’s in your town, you can use Bed Bath & Beyond coupons there to buy your Lara Bars. I too love them especially the cherry pie flavor

    My fav is chocolate chip cookie dough. U started me on Larabars. I actually yelled “OH MY GOD they have the box of them” when I was grocery shopping at meijers. My kids thought I was nuts…. Nuts for Larabars 🙂

    they look so good !
    I made some the other day with sunflower seeds instead of cashews, and I rolled them in unsweetened cocoa… you can also roll them in coconut if you like 🙂

    Hey! I just found out about your blog today. I’ve been reading this for almost 4 hours now. This is awesome, just what I need. Just the right moment. I showed it to my mom and she was fascinated as well. I spent over an hour translating some of your recipes to her. As we are not even from US, but a small country in Europe, Estonia:) I loved every single thing about it and I am really happy you are back :).     Can you please post more “Larabar” recipes? My favorites are cherry pie, apple pie and chocolate chip cookie dough. And I buy larabars from krogers 10 for $10 or a box of 6 at target for $6.

    Wow. Those look good. We received a free sample of Medjool dates, and I couldn’t help thinking they tasted like brown sugar. I can imagine some finely chopped cashews mixed in would be wonderful! Thanks for sharing.

    I’ve been interested in these larabars and I looked it up and many people are saying its very fattening….true? Or no? Please let me know

      Hi Stephanie! Larabars do contain fat since they are made with nuts. Nuts are a healthy plan-t based fat, but like anything else, even healthy food and Larabars should be eaten in moderation. If someone were to eat multiple Larabars in one sitting… that probably wouldn’t be a great idea! Having a Larabar with a slice of whole grain toast and an egg for breakfast is a great balance of plant based fat, fruit, whole grains, and protein to keep you full for hours! Larabars also make great portable snacks for traveling or occasions where healthy foods are unavailable. I hope this helps! xo

    Hello!
    I made these and they are really nice! Do you have any suggestions for variations?
    Also made the two ingredient pancakes, love nice recipies without all those fancy ingredients.
    Since I am new to your blog, have you posted or would you post food diaries or an example of a scheme? I am curious what your daily/weekly scheme looks like for inspiration.
