Hi little bunnies!
This week has been so busy! I have been working with a couple of different companies and have some really exciting giveaways coming up! This week I also had the chance to try a new barre class called Physique 57, which was sooo much fun! They gifted me with a 2 week challenge, and after the challenge I’ll give you guys a review and let you know how it went.
I wanted to say thank you to all of my loyal readers! I would not have half of the opportunities and success I have without you! Your emails, tweets, and comments make me so happy to blog every day. You have no idea how much you guys inspire me, and I am so thankful for all of your support!
I’ve been receiving tons of emails recently, and while most of them are somewhat specific and personal, I do get quite a few of the same questions. I am thinking about doing a little Q&A on my blog of popular questions that I receive. If you have any questions, feel free to Tweet or Facebook them followed by the hashtag #RFFMBTFAQ and I’ll compile a list of the most common frequently asked questions to answer and post them next week! It can be anything from health, fitness, and beauty, to fashion!
Now on to the wabbit food! Since I am still going through a carrot cake obsessed phase (such a bunny), I created a Carrot Cake Smoothie!
Carrot Cake Smoothie
Serves 1
1 cup chopped carrots
1 frozen banana
6oz Chobani Pineapple Greek Yogurt
1/3 cup unsweetened almond milk (or milk of your choice – I love Almond Breeze by Blue Diamond!)
1/4 cup rolled oats
1 Tbsp chia seeds
1/2 tsp pure vanilla extract
1/2 tsp cinnamon
1/4 tsp ground nutmeg
1/8 tsp ground cloves
1/8 tsp ground ginger
Combine all ingredients in a blender and blend until smooth. Add almond milk as needed to acquire your desired thickness.
Note: For a vegan option, omit the Greek yogurt (and almond milk) and sub with 1 cup of coconut milk instead.
The Rabbit Food Pyramid Breakdown
Produce: carrot and banana
Whole Grain: rolled oats
Protein: Greek yogurt
Plant Based Fat: chia seeds

June 21, 2012 at 3:24 pm (12 years ago)Does it really taste like carrot cake though? I don’t have the pineapple Chobani, just Fage… would that plus pineapple juice work?
Catherine
June 21, 2012 at 6:24 pm (12 years ago)Hi Michelle! All of the spices make it taste just like carrot cake! You could use 1 cup of milk instead of the yogurt & additional almond milk! I’m sure plain Fage would work as well, but it mad be a bit tart.

June 21, 2012 at 7:55 pm (12 years ago)OMG this looks amazing! I’ve been super unmotivated lately re. my diet and exercise and I think I need a smoothie/shake boost to give me a good kick in the right direction.
P.S. is that a metal straw? where did you get that? I go through like they’re going out of fashion, a metal one would solve my issues!!
Catherine
June 21, 2012 at 8:53 pm (12 years ago)Thanks Kendra!
Try challenging yourself to replace one meal per day with a smoothie whether it be a green smoothie or fruit! It’s a great way to get some structure back into your diet/routine and get back on track 🙂
Yes the straws are stainless steel! I bought them on Amazon (“Endurance Stainless Steel Drink Straws”)! http://www.amazon.com/gp/product/B000AUIN18/ref=oh_details_o01_s00_i00

June 28, 2012 at 8:27 am (12 years ago)*Adds some items to grocery list* I really want to try this! Is the chia necessary/essential? I’m not crazy about them…
Catherine
June 28, 2012 at 11:31 am (12 years ago)You can definitely omit the chia seeds if you don’t like them! They are pretty tasteless, they just add some healthy plant based fat if you eat this as a meal 🙂
Jenner
July 12, 2012 at 4:58 am (12 years ago)Tried it out this morning for my breakfast smoothie…have to admit I was a little skeptical with the Greek yogurt, but it turned out delicious. I did leave out the chia, and ginger only because I had none; and added about a 1/2 tsp of honey. Other than being slightly thinner than I like for a smoothie, I’m pleased with this one and will definitely put it in my smoothie rotation! =)
Catherine
July 12, 2012 at 3:02 pm (12 years ago)So glad you tried it Jenner! Some of my recipes can seem really strange when you read the ingredients, but I am happy you gave it a shot and loved it! So honored to be in your smoothie rotation haha Health & Happiness xo

June 28, 2012 at 8:51 pm (12 years ago)Could you recommend a sub for the banana? I’m allergic…random, I know. Thank you!
Catherine
June 28, 2012 at 8:59 pm (12 years ago)Oh no!!! Allergies can be so challenging! I have tons of food allergies and my worst ones are blueberries and melon! I use the banana to sweeten it up, and it also adds a little bit of thickness too. Maybe you could try using a couple of dates or 1/2-1 cup of frozen pineapple? Let me know if you give it a try! xo
Kara
June 29, 2012 at 12:40 pm (12 years ago)This is a weird allergy and I have never really been diagnosed with it, but I’ve noticed that raw oats (like oatmeal and granola) make my throat itchy. Is there a way to get away from the rolled oats? I know that it is the whole grain portion of the shake but I was thinking maybe there was a substitute?
Catherine
June 29, 2012 at 2:35 pm (12 years ago)Oh my goodness that is not good! I have tons of food allergies and it can be so challenging at times! You could omit the oats completely! It won’t be as thick but since oats have such a mild flavor, it shouldn’t make much of a difference in how it tastes!

July 3, 2012 at 5:24 pm (12 years ago)Where did you get that straw? Is it stainless steel? So cute!!

July 6, 2012 at 6:55 am (12 years ago)I just made this. Super yummy. Have you made a recipe for a pumpkin pie smoothie? All the spices made me think of pumpkin pie. 🙂
Catherine
July 6, 2012 at 9:22 am (12 years ago)Glad you loved it! I haven’t made a Pumpkin Pie smoothie yet but I would love to for Thanksgiving!

July 8, 2012 at 7:38 am (12 years ago)My nutritionist has told me to include protein powder in my meal plan once a day so I included it in my smoothie, and it tastes really good! However, I’m not a big fan of the texture of the carrot bits, can I add in pure pumpkin next time to make it smoother? Just wondering if that would change the taste because I love the taste. 🙂
Catherine
July 8, 2012 at 11:07 am (12 years ago)You could try grating the carrots first before blending so that they are already very broken down! Otherwise pumpkin would be delicious! Maybe 1/2c carrot 1/2c pumpkin? Let me know how it turns out! xo
Danielle
July 8, 2012 at 1:03 pm (12 years ago)This smells AMAZING! It smells just like carrot cake…cream cheese frosting and all! It was a little thick so next time I’ll add a bit more milk but it was delicious and filling!
Catherine

July 9, 2012 at 10:56 am (12 years ago)Hi Mary! You could use all coconut or almond milk instead of yogurt! xo

July 9, 2012 at 7:02 pm (12 years ago)I want to try this with chopped walnuts in place of chia seeds and a few raisins. So delish-looking!

July 13, 2012 at 9:36 am (12 years ago)First of all thank you for inspiring me to make some changes in my diet.
I didn’t have everything so I modified this a bit. I used about 2 c. of carrots, 1 c. plain greek yogurt, 2 T. oats, 1/4 c. almonds, water (out of milk) and the spices. Since I didn’t have a bananna I added some stevia to sweeten. It’s delicious! My two year old is drinking his too. Thanks 🙂
Catherine
July 13, 2012 at 11:27 am (12 years ago)OMG Nicolette that’s amazing! I love your swaps and love that your 2 year old enjoyed it too! xo

July 14, 2012 at 8:25 am (12 years ago)Drinking this right now! Mmmmmmmmm 😀 I was skeptical using this as a meal replacement but I’m so full!

July 16, 2012 at 4:19 pm (12 years ago)this was great! it reminded me of “pumpkin pie in a bowl”, a recipe by raw food writer Natalia Rose…you should read her books! but anyway the recipe had carrot juice, pumpkin pie spices, dates, avocado, and raw sweet potato chunks! definitely try it! you can drink it like a smoothie of eat it like a cold soup 🙂

July 17, 2012 at 10:52 am (12 years ago)First of all, WOW! This is delicious. I used flax instead of chia seeds. I’ve been having a hard time finding them at the stores in MN. I can’t wait to make the rest of your smoothies!
I found your website last month and love the recipes. I made your cauliflower pizza last night and my husband asked for seconds (die hard hunter, will never be a vegetarian, asked for seconds!), so did our three year old. Your blog is a such a godsend for me, I’ve been working on changing my eating habits to lose weight and your recipes are so simple to make and substitute into my daily life. Thank you so much! =)
Catherine
July 17, 2012 at 12:17 pm (12 years ago)That is AMAZING! Seriously monumental! I’m so glad that both you and your family can enjoy my recipes! Your comment totally made my day! Health & Happiness xo

July 23, 2012 at 8:22 am (12 years ago)THANK YOU for this recipe. And well, all of your recipes, for that matter. I really, really dislike carrots and this smoothie gives me a yummy way to incorporate them into my diet!
I dedicated a post to you and this amazing blog on my tumblr that’s all about health & fitness. I also pinned a bunch of your recipes to my Pinterest.
I seriously love what you’re doing here and always look forward to what you’ll post next. I hope to inspire others at some point, in the same way you’ve inspired me 🙂
Catherine
July 23, 2012 at 10:53 am (12 years ago)Awww thank you so much Renee! You are so sweet! So glad you loved the smoothie 🙂 xo

March 14, 2013 at 8:24 pm (12 years ago)I tried this but found it to be way too thick and textural, even after adding additional milk. I think perhaps reducing the amount of carrots and adding fresh pineapple instead will help the taste.

March 31, 2013 at 7:29 pm (12 years ago)Does plain chobani work?

April 1, 2013 at 5:53 pm (12 years ago)Hi Casey! Yes Plain Chobani would work fine 🙂
