Who loves cake for breakfast?
Well this is a more Rabbit Food approved version of cake for breakfast! Warm oats with finely grated carrots and spices combined with cream cheese and maple syrup to give a frosted carrot cake feel and flavor. What a treat!
Carrot Cake Oatmeal
Serves 1
1/4 cup rolled oats
1/2 cup water
1/2 cup grated carrot
1/4 cup nonfat cream cheese
1 Tbsp chia seeds
1 Tbsp maple syrup
2 Tbsp raisins
1/2 tsp cinnamon
1/4 tsp ground nutmeg
1/4 tsp vanilla
Cook the oats with water in a pan over medium-high heat. Once most of the water has been soaked up into the oats, stir in the chia seeds, cream cheese, and grated carrot. Add in the rest of the spices, vanilla, and maple syrup and stir until all ingredients are combined. Transfer the cooked oatmeal to a bowl, garnish with extra shredded carrot, and top with raisins. Enjoy warm.

Your recipes are amazing, I am already using the Rabbit Food Pyramid when I eat, and I love the fact that you GET it. The battle of losing weight and maintaining and being ridiculously hard on yourself for eating a measly apple, and working out like crazy to burn off that apple or whatever. I love the fact that you are into being HEALTHY and not just weight loss. I am so, so glad I found you! <3

I didn’t have any cream cheese on hand, so i used my chobani pineapple yogurt. It was a delicious addition! Totally tasted like carrot cake :9 Thank you rffmbt! You make the BEST recipes!

All of your recipes are amazing and your bunny food pyramid is simple and definitely achievable! I had a question, I was looking at a few of your recipes and noticed that you use rolled oats, do you have any preference over steel-cut oats? Does it affect the recipe?

I tend to buy rolled oats for when I make oatmeal, so I end up using these in other recipes as well. Steel-cut oats are actually the most nutritious of the oats, so they make an excellent choice, and of course you could definitely use them in any of my recipes 🙂 xo
