Mmmm oatmeal time! Today’s recipe is for a very filling and scrumptious Blueberry Cheesecake Oatmeal! I am highly allergic to blueberries, so I made this flavor for my sister, and raspberry for myself! Since I don’t get to share very many berry (besides raspberry) recipes with you guys, I wanted to showcase this version for you. Of course you could make any berry flavored Cheesecake Oatmeal of your choosing! A different berry Cheesecake Oatmeal flavor for every day of the week? I think yes!


Blueberry Cheesecake Oatmeal
Serves 1

1 cup blueberries
1/4 cup rolled oats + 1/2 cup water
2 Tbsp oat bran
1/4 cup nonfat cream cheese
2 Tbsp chopped walnuts
1 Tbsp maple syrup or honey
1 tsp vanilla extract
1/2 tsp cinnamon

In a pot over medium high heat, bring the water oats, and oat bran to a boil. Reduce the heat and allow it to simmer. Once most of the liquid has been absorbed, stir in the cream cheese, maple syrup, vanilla, cinnamon, and blueberries. Serve hot.

  10. I work 12 hour shifts, one month of days and one month of nights. Am on nights now 5p to 5a. I made 4 batches of this (2 blueberry and 2 strawberry) and put in individual bowls and let cool, then refridgerated. I took one bowl each night as my “lunch” first meal there, nuked it, then sprinkled the walnuts on it. OMG this is so absolutely awesome! Thanks for your blogs. I’m learning so much!

      Haha it’s so true Cherly! You could put a bowl of lettuce, beans, corn, and cheese in front of me and I would think it’s alright, but call it a “Fiesta Taco Bowl” and I’m in! The names definitely do make it more exciting to eat healthy! You kind of forget it’s healthy when the word cake is involved :) Health & Happiness xo

    I just made it right now! It was sooo good! I didn’t have cream cheese but I did have sugar free/fat free cheese cake jello mix and added a Tbs of that in. It was delicious! In basic training we would put strawberry cream cheese in oatmeal, that was pretty good… at least for basic training :D

I am studying Graphic Communication, and in one of my current classes, we are assigned to design a fictitious magazine. I decided to make my fictitious magazine to be about food and recipes (much like Cooking Light, for example).
    Anyways, I love all of your photos, so I was hoping it would be alright with you for me to use some of them (I will in no way be claiming they are mine and I will NOT be making any money on this project). If it is alright with you too, I would really love to have the original image from the camera so that the images are larger so that when they are printed, they don’t look pixely.
