I have about 10 favorite flavors but the first one I ever tried was love at first bite. Cashew Cookie, oh how I love thee. It’s made of only dates and cashews, and let me tell you, it tastes like a cookie! A pricey cookie though… at about $2.50 per bar, your grocery bill can add up pretty quickly. Since Larabars are made from simple whole ingredients, I though to myself… pshhh I can make these! So I did.

Cashew Cookie Larabars

Makes 6 bars

1 cup pitted Medjool dates
1/2 cup raw unsalted cashews
1 Tbsp water – if needed

In a food processor, pulse the cashews until they are broken into tiny pieces (do not pulse for too long, as it will turn into powder). Pit the dates and add them to the food processor. Blend the dates and cashews together occasionally scraping down the sides of the food processor. If the mixture is not sticking together, add one tablespoon of water and continue blending. The mixture should stick together and be pliable. Remove the mixture and form into a ball. Place the ball on a large piece of saran wrap. Cover the top of the ball with another layer of saran wrap and flatten with a rolling pin or your hands. Cut into 6 pieces and wrap individually in saran wrap. Refrigerate for 30 minutes and enjoy!
Note: Store the bars in the refrigerator or freezer for maximum life.

The Secret To Thick Smoothies

I cannot stand watery smoothies, I drink them way too fast and they end up feeling more like a juice! I have found the solution to end all of your watery smoothie problems: Xanthan Gum!

Instead of the usual, “Maybe my smoothie will get thicker if I just add one more banana… no maybe 1/4 cup more oats… and an extra Tbsp of nut butter!” We’ve all been there, and before we know it, our smoothies have doubled in calories, carbs, and fat!
Xanthan Gum a simple way to thicken your smoothie without adding unnecessary calories, fat, carbohydrates, etc.

So what is Xanthan Gum?
It is made from a tiny microorganism called Xanthomonas campestris and is a natural carbohydrate. Xanthan Gum is a thickener and byproduct of fermentation of glucose or sucrose given off by specific bacterium. The xantham byproduct is dried and forms a powder which is added to liquid to form the “gum.”

Show me the stats!
One tablespoon contains only 30 calories, 7g of carbohydrates, 0g of fat, and a whopping 7g of fiber! Xanthan Gum is gluten free and from my research, it’s vegan too.

If there were such thing as fairy dust, this would be it. Who am I kidding, this stuff is magical, it’s the modern day fairy dust in my book!

All you need is 1 teaspoon of Xanthan Gum and your smoothie can go from this…

PB Kale Smoothie
Serves 1

2 cups chopped kale
1 frozen banana
1 cup unsweetened almond milk
2 Tbsp unsalted peanut butter
1 tsp Xanthan Gum
1 tsp pure vanilla extract
1/2 tsp cinnamon

Combine all ingredients in a blender and blend until smooth.


Where to buy Xanthan Gum:
I buy Bob’s Red Mill Xanthan Gum at Whole Foods, but you can also purchase it online on Bob’s Red Mill’s official website. An 8oz bag is about $12 and will last you quite some time!

Cherry Almond Toast

It’s snack time. Toast Tuesday. Nom nom. ‘Nuff said!

I’ve been making a lot of savory toast recently, and today I wanted something sweet. If you haven’t tried almond butter before, you need to jump on board the almond butter train! In a nutshell, almonds contain protein, fiber, vitamin E, calcium & tons of other essential vitamins & minerals, and are an outstanding source of monounsaturated fat! With their outstanding nutritional value and great health benefits, you could go nuts with almonds! Oh, and may I just add, that that my favorite way to eat heart healthy almonds, is in butter form.

Almond butter is slowly appearing in grocery stores all over. I usually buy my Almond butter at Trader Joe’s or Whole Foods, but I have seen it at Ralph’s, Kroger, Bristol Farms, and even Target! If you cannot find almond butter in a store near you, you could also make it your self in a high powered food processor or blender out of whole almonds. After all, your almond butter should only consist of almonds anyway. No added oils, sugar, or salt!


Cherry Almond Toast
Serves 1

1 slice whole-grain bread
1Tbsp unsalted almond butter
1/4 cup unsweetened dried cherries
cinnamon to taste

Toast the bread, spread with almond butter, top with dried cherries, and add cinnamon to taste.

 

Black Bean Burgers

Soy protein concentrate, textured soy protein concentrate, basil, methylcellulose, hydrolyzed soy and corn protein, caramel color, disodium guanylate, disodium inosinate, modified vegetable gum, autolyzed yeast extract, natural butter flavor, whey, guar gum, natural smoke flavor, soy lecithin, calcium chloride, ferrous gluconate, textured wheat gluten, corn oil, calcium caseinate, artificial flavors, caramel color.

Wait… I’m sorry, I thought I was buying VEGGIE patties?

Some store bought “vegetable” patties shouldn’t even legally be able to use the word “vegetable” (or “food” for that matter) on their packaging. Some patties are loaded with sodium, unrecognizable chemical ingredients, and fillers that barely constitute as food.

Celebrate Memorial Day Weekend right! You owe it to your body to feed it natural whole foods. Skip the frozen veggie patties and opt for a homemade black bean burger instead! These patties are easy to make and can be kept in the freezer for quick easy meals. Use these black bean patties for any burger or meal that calls for “beef!”

For a low carb option, try serving your Black Bean Burgers on Portabella Buns!
Simply remove the gills and stem from 2 large portabella mushroom caps and grill over medium heat.
Dress your burger with your favorite toppings such as fresh lettuce, tomato, onion and avocado.
Use the Portabella Buns as you would with a regular hamburger bun!

Black Bean Burger
Serves 4

2 cups black beans (no salt added or low sodium)
1/2 chopped yellow onion
1/4 cup finely ground flaxseed
1 Tbsp chopped garlic
2 Tbsp freshly chopped cilantro leaves
2 tsp chili powder
2 tsp black pepper

Thoroughly rinse and strain black beans. Chop the yellow onion, garlic, and cilantro leaves. Combine all ingredients in a mixing bowl and stir until well mixed. Transfer the contents to a food processor and pulse until it reaches a smooth yet firm consistency. Add water 1 Tbsp at a time to help reach your desired consistency.
Note: The mixture should be moist and smooth but still firm. It should not be crumbly.

After the mixture has reached the proper consistency, divide it into 4 patties. Place a pan over medium/high heat and lightly coat with nonstick cooking spray. Place patties in the pan and cover and grill for about 4 minutes on each side. Spray the pan with cooking spray in between flips to prevent sticking. Continue cooking and flipping until they become firm and browned but not dry.
Note: If storing the black bean patties in the freezer; follow all instructions and precook patties before freezing. Let the patties cool. Place wax or parchment paper in-between each patty to prevent from sticking together. Store the patties in a ziplock bag, and freeze. Reheat each patty in the microwave before eating!
