Cinnamon Raisin Breakfast Quinoa

I’m so excited to be home and back to creating new recipes for you guys! I know that’s why you’re here visiting my blog anyways : ). I think that my favorite meal of the day is breakfast, and since I often get bored of the same breakfast over and over again, I’m always creating new things. Today’s recipe is a similar to traditional oatmeal, but instead using quinoa as the whole grain. Nutritionally renowned for its protein content, quinoa makes an excellent addition for vegan and vegetarian dishes. But it’s not just the protein content that is so special, it’s the type of protein. Quinoa contains the perfect balance of all nine essential amino acids! No wonder it’s considered a “superfood!”

I am in desperate need of some new props for my blog! I realized that I don’t have any fun bowls or utensils since my kitchen is all black and white. I like to call it the Chanel kitchen haha. Time to add some color! Prop shopping will be happening this weekend. For now, my favorite cow creamer is making his debut!

Serves 1

1/2 cup unsweetened almond milk (or nonfat dairy milk)
1/4 cup dry uncooked quinoa
1/4 cup raisins
2 Tbsp sliced almonds
1/2 tsp vanilla
1/4 tsp cinnamon

Combine milk, vanilla, cinnamon, and quinoa in a small saucepan. Bring the mixture to a boil. Once it reaches a boil, lower heat and cover for 10-15 minutes until the milk has been soaked up. While quinoa is cooking, place raisins in a small bowl of water and let them soak. After quinoa has finished cooking, strain the plump raisins from water and add to quinoa along with the almonds. Serve hot.
Note: I think the light sweetness of the raisins is perfect with the quinoa, but if you like a sweeter breakfast you can add half a tablespoon of agave or honey to the quinoa and milk while it’s cooking.

Guest Blogger: Lauryn {The Skinny Confidential}

Today I am so so so excited to introduce you to my final guest blogger: Lauryn Evarts from The Skinny Confidential! She’s a super gorg San Diego girl, model, Proformer Pilates instructor, and future nutritionist with a passion for healthy eats.  Her blog: The Skinny Confidential is all about fitness, diet modifications/substitutions, fashion, creating, photography, blogging, beauty, & clean living. She’s always trying to help others make healthy decisions when it comes to food & exercise, what’s not to love?

RFFMBT Guest Blogger The Skinny ConfidentialHi guys! I’m Lauryn from The Skinny Confidential : ).
Today I’m talking BREAKY!Start Your Day Off Healthy: Coconut Blueberry Oatmeal

Get rid of the “I’m running late excuses” and make time for your health, diet, and figure. Fueling your bod with oatmeal in the AM allows you to feel full for hours. Instead of opting for boring, predictable oats, add a few blueberries, banana slices, almond milk, some unsweetened coconut shavings, a dash of cinnamon, and a sprinkle of nutmeg. My favie oatmeal benefits? It’s low on the cals, rids cravings, and contains tons of protein, antioxidants, & fiber.

Be careful when selecting a oatmeal brand at the market. Don’t let the low-sugar kind fool you: it’s filled with Aspartame and crap. Look for words like “steel cut” and/or “whole grain.” As far as milk goes, I prefer almond, flaxseed, or rice milk. Besides being easier on the stomach than typical hormone-filled milk, they’re all dairy-free!

And plus, who doesn’t anything with coconut?!

Recipe: Coconut Blueberry Oatmeal
 ** Serves two
2 cups of Quaker oatmeal
1 handful of blueberries
1 sliced banana
1 cup almond milk
2 sprinkles of unsweetened coconut shavings
1 dash cinnamon
1 dash nutmeg

Slice banana & clean blueberries. Cook oats on the stove for about five minutes. Drain oats and add blueberries and bananas. Sprinkle coconut shavings, cinnamon and nutmeg over fruit. I like to let it sit for 2 minutes so fruit dissolves into the oats. Add 1/2 cup of dairy-free milk. Enjoy with fresh orange juice!

Miso Tempeh Wrap

Don’t forget you still have until Midnight tonight (July 11) to enter for your chance to win some Spirulina & other goodies from Nutrex Hawaii!

Speaking of Hawaii, my grandparents go to Hawaii every year for my grandma’s birthday on July 6th. This year, my grammy celebrated with her friends at a raw vegan restaurant called Maui Kombucha in their “Eat More Rabbit Food” shirts and Carrot Logo Leggings!
I died when she sent me these photos! Isn’t she the cutest?!

Eat More Rabbit Food MauiFrom left to right: My grammy Gail (76), Barb (86), and Carol (72)

Barb’s husband Don is 100% vegan, so she is pretty much vegan/vegetarian.
As for my grandma and Carol, they’re big time veggie lovers!
My grandma said that the owner brought out free kombucha shooters for the table when they arrived haha, how fun!

I loveee food blogs, especially when I cannot decide on what to make for dinner. Yes, bloggers read blogs too! While browsing around, I was totally inspired by (and drooling over) the lovely Kathy Patalsky’s recipe for Kale Avocado Wraps w/ Spicy Miso-Dipped Tempeh. I knew I had to try it, so I made all of the ingredients in proportion with the Rabbit Food Pyramid guidelines, and dinner was served! I love showing you guys how easy it is to make other recipes Rabbit Food Pyramid friendly!

Miso Tempeh Wraps
Miso Tempeh Wraps
Miso Tempeh WrapsI even made the Miso Tempeh again the next day, subtracted the wrap, and added 1/2 cup of cooked brown rice to make a salad/rice bowl!

Miso Tempeh WrapsSince I didn’t have miso paste on hand to make Kathy’s Chipotle Miso Dressing I used a shortcut Low-Fat Miso Sesame Seed Dressing by Galeos. Not exactly the same as her dressage, but the results were excellent, and the nutrition stats are awesome! 1 Tbsp Galeos Miso Sesame Seed Dressing = 25 calories, 1g fat, 4g carbs, .5g sugar, and only contains 8 ingredients that you can actually pronounce! Not too shabby!

Miso Tempeh Wraps
Recipe adapted from Kathy Patalsky
Serves 1

1 medium whole wheat or sprouted grain tortilla
3oz tempeh
1 1/2 cups kale
1/4 cup chopped tomato
1/4 cup sliced red onion
1/4 avocado, sliced
2 Tbsp Galeos Low-Fat Miso Sesame Seed Dressing, divided
a pinch of ground chipotle
pinch of fresh ground pepper

Rinse and dry chopped kale. Massage with 1 Tablespoon of miso dressing. Chop tomato and onion and add to the kale, set aside. Slice avocado and set aside. Lightly spray a skillet with nonstick cooking spray. Cook tempeh in 1 Tablespoon of miso dressing over medium heat and sprinkle with a pinch of pepper and chipotle. Allow the tempeh to cook on both sides for about 2 minutes each. Transfer the tempeh to the tortilla and add kale, tomato, onion, and avocado. Wrap tightly together, cut in half, and enjoy!

Restocking Shirts Soon!

Hoppy Monday Bunnies!

Motivation Monday: “If you change nothing, nothing will change.”

I have been getting tons of emails regarding Eat More Rabbit Food shirts!
Since I have received a lot of the same questions I thought I would finally take to my blog to answer them all at once!

Catherine Eat More Rabbit Food Shirts
But before I do, I wanted to say thank you to everyone who bought a shirt! I’m so happy you love them as much as I do! I am obsessed with all of your Instagram and Twitter photos in your RFFMBT shirts!

When will there be more shirts for sale?
I am dropping them off to be printed today! That means I should be getting the finished shirts back sometime next week. Then I need to photograph them on my gorg bunny model Brett, and get them listed in my online shop! Expect new shirts in a couple of weeks!

Why don’t you offer exchanges?
As you may have noticed, the shirts sell really fast (because my bunnies are the best!). By the time you receive yours and want a n exchange, they may be completely sold out and I won’t have any in stock to exchange with you!

Will you sell men’s shirts?
Ohhhhh yeahhhhh!

Why is International shipping so expensive?
I use flat rate shipping since US shipping prices keep going up! I’m trying to find a more affordable way to get shirts to my international bunnies!

If you have any issues with a shirt when it arrives (such as physical damage to the garment) please contact me via my online shop and I will do my best to find a solution!

I just used so many exclamation points!
Because you guys make me so happy!!!!!!!!!!
