Campfire Kisses

Motivation Monday: “You are always stronger than you think you are.”

Today and tomorrow are super busy days for me as I am trying to get together a new part of my blog, Sam’s brother is here visiting, and two of my best friends are moving to Denver! It’s been kind of bittersweet this week… but I do have some really sweet giveaways and recipes coming up for you guys, yayyy!

Here is the recipe for my Campfire Kisses from my guest post! The perfect healthy alternative to S’mores for your summer camping, hiking, or backpacking adventure!


Campfire Kisses

Makes 10 kisses

2 graham crackers + 1 for outer “crust”
1/2 cup unsalted cashews
1 cup Medjool dates – pitted
1 1/2 tsp pure vanilla extract
2 tbsp mini chocolate chips (or carob chips for a vegan option)
Optional: 1 Tbsp ground flaxseed for a boost of healthy omega-3s

Place 1 graham cracker in a food processor or blender and process until finely ground. Empty the graham cracker contents into a bowl and set aside, as it will be used to roll the kisses in later. Combine cashews and 2 graham crackers (and flaxseed if desired) in a food processor and grind until they become very finely ground, but not a butter. Remove pits from dates. Once pits have been removed, add the dates and vanilla into the food processor. Process until the contents are evenly chopped/combined and form a sticky dough. Remove dough from the food processor and fold in chocolate chips by hand or mixing spoon. Using a 1tbsp measuring spoon, scoop the dough into balls and roll evenly in your hands. Roll the ball through the bowl of ground graham cracker, coating it evenly (this will add flavor and prevent the kisses from sticking to the foil!). Wrap each ball separately in a 4x4in piece of tinfoil and twist off the tops like Hershey Kisses.

Take your Campfire Kisses on your next hiking trip or store in the refrigerator for 1 week, or freezer for up to 1 month.

Summer Salad

I hope that everyone had a nice holiday weekend! It is getting hot hot hot in Los Angeles, and I couldn’t think of anything more refreshing than a cold fruit salad with a twist! Instead of the usual all-fruit salad, how about combining some other plant based components of protein, whole-grain, and fat to complete your meal!

Hold the dressing… This salad consists of 4 different flavors that perfectly compliment each other to make a tart yet sweet and refreshing dish, so there is no need for anything else. I’m so hooked, I could probably have this every single day!

P.S. If you are trying to incorporate vegetarian or vegan meals into your diet, this is a great easy option for meatless mondays. On a high note, this salad is boyfriend approved and my sister went back for seconds haha

Summer Salad
Serves 1

1 medium grapefruit
1/2 cup chilled unshelled edamame
1/2 cup chilled corn
1/4 medium avocado

Remove the skin of the grapefruit by cutting with a knife between the rind and flesh. Once the outer skin and pith has been removed, separate segments of the grapefruit and remove all of the membrane, pulp, and seeds so only the grapefruit flesh remains exposed. Chop the segments into smaller cubed pieces. Remove 1/4 avocado meat from it’s skin and cut into cubes. Add the chilled corn (rinsed and strained) and edamame  to the grapefruit and avocado and gently toss. Serve chilled.

Fresh Avocado Multi-Grain Toast

Mmmmm, It’s Toast Tuesday again!

It is getting hot here in Los Angeles! Today I was craving some fresh avocado, and I just happened to have one chilling in the fridge. Fresh avo with a dash of lemon juice, salt, and pepper topped on a slice of multi-grain bread makes a delicious summer snack!

Avocado Toast1

Fresh Avocado Multi-Grain Toast
Serves 1

1 slice Milton’s Healthy Multi-Grain bread
1/2 Hass Avocado
squeeze of fresh lemon juice
dash of salt
dash of pepper

Remove half of the avocado from skin and cut into thin slices. Toast the bread, top with avocado slices, drizzle with fresh lemon juice, and sprinkle with a dash of salt & pepper to taste.
