Black Bean Burgers

Soy protein concentrate, textured soy protein concentrate, basil, methylcellulose, hydrolyzed soy and corn protein, caramel color, disodium guanylate, disodium inosinate, modified vegetable gum, autolyzed yeast extract, natural butter flavor, whey, guar gum, natural smoke flavor, soy lecithin, calcium chloride, ferrous gluconate, textured wheat gluten, corn oil, calcium caseinate, artificial flavors, caramel color.

Wait… I’m sorry, I thought I was buying VEGGIE patties?

Some store bought “vegetable” patties shouldn’t even legally be able to use the word “vegetable” (or “food” for that matter) on their packaging. Some patties are loaded with sodium, unrecognizable chemical ingredients, and fillers that barely constitute as food.

Celebrate Memorial Day Weekend right! You owe it to your body to feed it natural whole foods. Skip the frozen veggie patties and opt for a homemade black bean burger instead! These patties are easy to make and can be kept in the freezer for quick easy meals. Use these black bean patties for any burger or meal that calls for “beef!”

For a low carb option, try serving your Black Bean Burgers on Portabella Buns!
Simply remove the gills and stem from 2 large portabella mushroom caps and grill over medium heat.
Dress your burger with your favorite toppings such as fresh lettuce, tomato, onion and avocado.
Use the Portabella Buns as you would with a regular hamburger bun!

Black Bean Burger
Serves 4

2 cups black beans (no salt added or low sodium)
1/2 chopped yellow onion
1/4 cup finely ground flaxseed
1 Tbsp chopped garlic
2 Tbsp freshly chopped cilantro leaves
2 tsp chili powder
2 tsp black pepper

Thoroughly rinse and strain black beans. Chop the yellow onion, garlic, and cilantro leaves. Combine all ingredients in a mixing bowl and stir until well mixed. Transfer the contents to a food processor and pulse until it reaches a smooth yet firm consistency. Add water 1 Tbsp at a time to help reach your desired consistency.
Note: The mixture should be moist and smooth but still firm. It should not be crumbly.

After the mixture has reached the proper consistency, divide it into 4 patties. Place a pan over medium/high heat and lightly coat with nonstick cooking spray. Place patties in the pan and cover and grill for about 4 minutes on each side. Spray the pan with cooking spray in between flips to prevent sticking. Continue cooking and flipping until they become firm and browned but not dry.
Note: If storing the black bean patties in the freezer; follow all instructions and precook patties before freezing. Let the patties cool. Place wax or parchment paper in-between each patty to prevent from sticking together. Store the patties in a ziplock bag, and freeze. Reheat each patty in the microwave before eating!

Peanut Butter & Banana Toast

Happy Toast Tuesday to all of my little bunnies!

Sam and I  are on the last leg of our road trip making our way from Tucson to LA! Yesterday we drove  15.5 hours, so we are really excited for the shorter drive today. In the past couple of days I have been smothered by a countless number of incredible emails and a plethera of new readers, pinners, Facebook fans, and Twitter followers. I love reading your stories and seeing your DIY photos! Thank you soooo much for continuing to read my blog everyday. Your support means the world to me. Because I have been attempting to blog via my iPhone (appologies for any awkward autocorrections and spelling errors!) in the middle of the dessert on my road trip, I haven’t been able to respond to emails as promptly as usual. I love chit chatting with readers and really appreciate the time and courage that goes into so many of your emails and I like to do the same for you! I’ll be emailing everyone as soon as I can, you are so important to me! I love you little bunnies!

Now onto the toast! Not only is this toast a classic, but it’s the perfect post workout snack with a purpose.

It may seem counterintuitive to eat after you have just exercised, but this is the best and most important time to eat. Your body needs protein and carbohydrates to repair muscle tissues and replenish glycogen stores, which are depleted after a strenuous workout. You can avoid cancelling out the calories that you just burned by eating the correct combination of foods to meet your body’s fuel needs.

After a sweat session, you want an ample protein (nut butter) combined with a high-glycemic carbohydrate (banana). By adding a complex carb like whole-grain toast, you are getting extra fiber without empty calories to make a more substantial post-workout meal. Eaten together within 45 minutes after a workout, this combination will go a long way to help your body repair and restore.


Peanut Butter & Banana (PB&B) Toast
Serves 1

1 slice whole-grain bread
1 Tbsp unsalted peanut butter
½ banana

Toast the bread and slice up half of a banana. Spread the toast with peanut butter, and top with banana slices.

Maple Quinoa Cereal

Have you ever had a bowl of store-bought cereal in the morning and heard your stomach growl an hour later? That is because your cereal is probably low in protein, fiber, and overall nutrition. Most breakfast cereals are high in simple carbohydrates, fats, and loaded with added sugar. Even if you look at the nutrition label of a “healthy” cereal, you may be surprised to find that there is nothing healthy about it.

The complex super grain quinoa (pronounced keen-wa) is considered a complete protein, which is an outstanding source of essential amino acids. The fiber and slow-releasing carbs in quinoa will keep your stomach feeling feel, and your blood sugar stable so you won’t get that usual after cereal crash. Chia seeds add a dose of omega-3 and are loaded with both soluble and insoluble fiber.


Maple Quinoa Cereal
Makes 3 servings (1/2 cup each)

1 1/2 cups cooked quinoa
1 Tbsp chia seeds
2 Tbsp pure maple syrup
3/4 tsp cinnamon
1 tsp vanilla


Preheat oven to 375 degrees. In a large bowl, combine all ingredients and mix together. Line a baking sheet with parchment paper (do not use wax paper. Trust me, I tried it and it failed!) and pour the batter onto the paper. Flatten smooth with a spatula until batter is a thin sheet (about ¼ inch thick). Bake for 25 minutes, flip (it’s ok if the sheet of quinoa breaks into smaller pieces at this time), and bake for 25 more minutes (about 50 total) to ensure that both sides are baked evenly. Remove from oven when cereal is slightly golden brown. Allow cereal to cool, and then break into small cereal sized flakes. Enjoy with almond milk and fresh berries or fruit!
