Now that the cat’s out of the bag, I can finally tell you guys why I have been so MIA!
I’ve been traveling a ton meeting with RFFMBT brand sponsors,
buttttt the big news is: my sister got engaged!
And of course amidst the chaos along came Thanksgiving and tons of family events!

This was seriously the cutest proposal in the world! I’ve had to keep my mouth closed for a month and it has been the hardest thing in the world! Patrick had asked my dad for his blessing, and then told my mom and I that he wanted to propose. Patrick actually asked me to be a part of the proposal which was so sweet! My sister is a photographer, and since photography is obviously very important to her, Patrick asked if I would hide and capture the proposal on camera (um duhhh this is every girl’s dream!). Of course I was all over it! I ended up hiding in a bush at the beach for 3 hours in the rain while Jess was “photographing” the beach and sunset until they made their way to the proposal sight where Patrick had written “Jessica will you marry me?” in shells and rocks! Both families were waiting at our house with champagne when they got back! It was too cute and I am soooooo happy that I was a part of it! My sister was beyond surprised, she had NO clue it was happening : ).

Of course for me, this means bridesmaid bootcamp! I’m ready to get those arms and shoulders toned for the wedding! I’m patiently waiting for the fiancés to set a date!

Since the holidays are here and dessert is essential at every gathering in my family, I have been inventing some new healthy single serving sweets for you guys. This recipe is the ultimate quick and easy dessert. Serve with nostalgia and the warm cozy feeling of fall!

Light Vegan Apple Crumble
Serves 1

For the Apple Filling
1 medium fuji or gala apple
2 Tbsp almond milk
1/4 tsp cinnamon
1/4 tsp nutmeg
1/8 tsp salt

For the crumble
1/4 up rolled oats
1 Tbsp whole wheat flour
1/2 Tbsp maple syrup or 1 packet stevia
1 tbsp Earth Balance Buttery Spread with Olive Oil or coconut oil

Optional: Top with 1 cup of Chobani 0% Vanilla Greek Yogurt as a light & healthy ice cream replacement.

Chop apple into small pieces and combine with almond milk, salt, cinnamon, and nutmeg. Microwave for 4-5 minutes until apple becomes soft. In a separate bowl, combine oats, flour, maple syrup, and earth balance. microwave for 1 minute and stir. Place cooked apples in a bowl and top with the crumble mixture.

A few of you have asked me for more before and after photos because they help you to stay motivated and on track. I searched my computes for quite some time to find old photos, but noticed that I don’t have too many full body pictures of myself. I was usually very covered up or couldn’t stand photos of myself, so I deleted them. Anyways here is another before and after to show you guys what rabbit food can do for your body! I hope that this can inspire you guys to eat more rabbit food!

So last week I said that I was going to go prop shopping for my kitchen/blog photos. That semi-happened, but I literally cannot get away from black and white props! It’s my fav! The Coco Chanel kitchen lives on!

I love love love dessert. I get my sweet tooth from my mom, who can literally eat candy and cookies like there’s no tomorrow and maintain her petite frame. I wasn’t blessed with that same gene, but man I love me some sugaaaa! I’m the kind of person that cannot live without dessert or a little something sweet every day. Instead of traditional store bought cookies loaded with oil, salt, refined sugar, and bad saturated fats (not to mention the totally addictive-cannot-stop-eating-one-after-the-other feeling that comes along with them!), I took to my kitchen to give an old fav a healthy spin! I wanted to make a super clean, healthy, peanut butter cookie that can be enjoyed with coffee and good conversation. Something that feels indulgent and naughty, but is actually quite filling and good for you!

Believe it or not, this recipe only calls for 7 ingredients that you probably have in your kitchen already!

Serves 1

1 Tbsp almond flour
1 Tbsp coconut flour
1 Tbsp creamy peanut butter
1 Tbsp unsweetened almond milk
1/2 Tbsp egg whites
1/2 tbsp chocolate chips (or 1 tsp mini)
1 packet stevia

Combine all ingredients in a bowl and mix until well combined. Spread the dough onto a microwave safe plate and flatten into a cookie shape. microwave for 1:15-1:30 minutes.

Ohhh my gosh, I am so excited to share this recipe with you! On Tuesday, I went to a Kappa Alpha Theta Alumni Group social and came home with the BEST recipe! My fellow sister, Carter (sorority sister for those of you who may be confused) told me all about her new healthy dessert creation, and I was all over it! Only 6 ingredients and takes 2 minutes to make, what’s not to love?! Carter has a Tumblr with tons of delish healthy recipes so make sure visit choisis la joie!

When I asked her how she came up with the recipe, she explained, “I am not Paleo, because I love cheese and sourdough bread too much, but Paleo recipes are a great place to start, because they are focused on veggies, fruits, healthy fats and proteins. This makes it so that overall, the foods I make for myself are healthier and more nutritious. Then I can indulge without guilt when I’m out for happy hour or food-truck day!” I love her philosophy on using Paleo guidelines as a starting point or base for her recipes. It’s a great way to explore different healthy foods and experiment with new recipes!

I like to emphasize that all types of foodies are welcome here whether you are vegan, vegetarian, carnivore, candy lover, paleo, gluten-free or if you follow Weight Watchers, or a low carb diet like Atkins. I want my blog to be a place where anyone can come to find inspiration and motivation to try new healthy recipes. There is no foodie judgement here! Plus most of my recipes can be easily adjusted to fit your dietary needs.

I do however want to talk about the pressure to follow a certain “diet.”
My most requested recipe adjustments are usually to make meals gluten-free, but recently I have been asked about Paleo options. I don’t follow the Paleo diet, but I love the way that Carter explained it! It makes Paleo seem less cult-like and more approachable! If you are an avid healthy living blog reader, you probably know what I mean by “cult-like” haha but if not, let me explain. CrossFit has recently turned into a phenomenon. Not only for fitness, but for it’s own “language” (box, WOD, AMRAP, etc.) and even adopting it’s own diet; Paleo. It seems like any blogger that I follow (or even Facebook friend) that goes to CrossFit, gets sucked into this crazy CrossFit cult! Suddenly they give up their vegetarian lifestyle to become full-blown carnivores and LIVE to plaster their new weight lifting PR all over the internet. It seems more like people are quick to jump into the Paleo world for the trendy CrossFit reasons than for their health. I don’t want you to get the wrong idea, I’m proud of all of my friends who do CrossFit. I know it’s something that I A) would never enjoy B) would probably suck at, and C) would most likely get hurt doing, so props to the CrossFitters in the world! But why has CrossFit gone from a trendy new exercise to intimidating hardcore lifestyle? Honestly, I would be so scared to set foot into a “box” because I wouldn’t be able to lift more than 10 lbs, would feel guilty that I ate whole-wheat, and think that Fran is my instructor, not my workout! As you can tell, CrossFit is probably not for me, but it’s a great match for so many others! Long story short, I like Carter’s approach for creating healthy recipes by starting with paleo guidelines. To me, that’s how special diets should be used. You shouldn’t feel obligated or pressured into eating a certain way to sit at the cool table haha. Not every diet or lifestyle works for everyone, and most of the time it takes a little while to find out what works for you and makes you feel your best. I don’t want anyone to think that because I eat a certain way, that they have to as well I also want everyone to know that no matter what their diet is, they are very welcome here and I respect their choices. The important thing is to eat clean whole foods as much as possible and have a healthy balance and relationship with food. Healthy eating should be fun, not intimidating!

Coconut Mug CakeSince this recipe requires a heaping tablespoon, I thought I would show you what that looks like. If you are unsure of anything in my recipes, always feel free to ask! I had no idea what a heaping or scant Tbsp was a while ago haha yay for learning new things!

Coconut Mug CakeMy favorite way to eat it, with one tablespoon of all-natural peanut butter!

Coconut Mug Cake
Serves 1

1 heaping Tbsp coconut flour
1 heaping Tbsp cocoa powder
1 Tbsp almond milk (or coconut)
1/2 Tbsp honey
1 tsp pure vanilla extract
1 egg

Combine all all ingredients together in a microwave safe mug and mix well. Microwave for 1 minute and 30 seconds to 2 minutes until cooked.
Carter’s notes: Enjoy with a big dollop of peanut butter if you’re as obsessed with the pb/choc mix as I am! You can also add some dark chocolate chips in the cake for a little extra flavor.

Now lets talk about some hot potatoes!

I have never been a huge fan of potatoes. I don’t know what it is, but I have just never really loved them whether they be baked, mashed, or fried… well that was all true until I discovered sweet potatoes! Sweet potatoes are an excellent and nutritious source of carbohydrates, making them one hot item!

  • Unlike other types of potatoes, sweet potatoes contain almost twice as much fiber totaling up to about 7 grams of fiber per serving
  • They contain a large amount of vitamin B6.
  • Rich in Beta-carotene and potassium which both promote muscle recovery.
  • A great source of Manganese, an important component in the metabolism of carbohydrates which helps support healthy blood sugar levels.
  • Also filled with vitamins C and E, which are  potent antioxidant vitamins that play an important role in disease prevention.


Although I don’t eat baked or mashed sweet potatoes very often, I love making sweet potato chips! Last year my mom bought be this awesome little gadget that she saw in an article in the Los Angeles Times called Topchips! She emailed me with a shipment/tracking number and said “I bought this for you, I hope it isn’t a scam!” haha Love my mom so much! Although this does look like an as seen on TV infomercial item that like most is too good to be true, it’s so amazing! Don’t let the infomercial-ness scare you! I was not paid by Topchips to review this product, but I had to tell you guys how ridiculously awesome it is. If you order from the Topchips website, it comes with the silicon microwavable chip making tray and a mandolin slicer (and random goodies) for only $19.99+ shipping & handling. It is sooo easy to use and you can make so many different chips without fattening oil or any other added ingredients or preservatives. I’ve made tons of different chips such as sweet potato, apple, radish, and beet chips! All you have to do is rinse the produce, slice it using the provided slicer, place the slices onto the Topchips tray and microwave for 3 minutes, flip and microwave for 3 more. Tadaaa, healthy oil free chips! Cooking time does vary depending on your microwave and the type of produce you are using (apple chips take longer), but in a matter of minutes, you will have healthy chips at your fingertips! If you are someone who is short on time, or in a college dorm with only a microwave, this little chip maker could be your new best friend. No waiting for the oven to heat up, no long cooking times, it’s quick and easy. I know that some people are not huge fans of microwaves, so I will also experiment with an oven baked sweet potato chip recipe for you guys if you would like!

Sweet potato chips are great for snacking, parties, or even as a crunchy topping on your salad!

I’ve been so obsessed with the slicer that I use it to slice apples and pears for my oatmeal all the time. I actually got a little carried away with it once and ended up slicing off part of my thumb nail… Yaaa that didn’t go very well! I definitely recommend using the safety produce gripper that it comes with haaha Safe slicing, little bunnies!



Six Minute Sweet Potato Chips
1 sweet potato

Rinse and dry sweet potato. Slice carefully with mandolin slicer. Place sweet potato slices on the Topchips microwavable tray. Microwave on high for 3 minutes. Flip chips and microwave for an additional 3 minutes or until crisp.

Question: Have you ever read the ingredients and nutritional value for regular potato or veggie chips?! Some of them aren’t even made of the actual “veggies!” Ahhh!
