Sweet Roasted Acorn Squash

Remember on Facebook when I said my kitchen smelled like cotton candy?
Well it wasn’t cotton candy, and it was not vegan marshmallows: it was a vegetable.
You heard that right! Sweet Roasted Acorn Squash to be exact!
Easy to prepare, delicious, nutritious, and very filling!

Sweet Roasted Acorn Squash

Ahhh tis the season of winter squash!
My seasonal squash of choice? Acorn Squash.
Now take a look at this fine little cutie! (seriously, I think they are so adorable!)
Don’t let the cutie patootie looks fool you, this is a mean, lean, powerhouse nutrient machine!

  • One cup of acorn squash contains 145% of the daily recommended requirements for Vitamin A.
  • It also contains Vitamin C, potassium, manganese, folate (folic acid), and 15% of the omega three fatty acids necessary to good health
  • It’s also an excellent source of fiber that will keep you full and focused.

Now, you may be asking, how does one choose an acorn squash? Pick the cutest one available. Just kiddinggg!

Look for:
Select a squash that has a good balance between green and orange skin. You want to choose a smooth squash without any soft spots. The heavier the squash, the more moist it will be, so choose a squash that is heavy for it’s size.
Avoid: Too much orange coloring on the skin, which indicates an overripe squash.
Storage: Store at room temperature (no need to refrigerate before cooking) and use within two weeks of purchase. Cooked acorn squash can be sealed and refrigerated up to 4 days.

The first way I ever had an acorn squash was roasted with butter and brown sugar, and to this day it is still my favorite.There is nothing like the smell of Sweet Acorn Squash roasting in the oven. It smells like a sweet sugary dream come true!

I decided to lighten up this recipe with Earth Balance Natural Buttery Spread With Olive Oil. If you haven’t tried this before, you need to head on over to your local Health Food store and get a tub. My mom and I have been using it in place of butter in our Armenian family recipes to give those heavy meals, a light touch. It’s an incredible alternative to butter, made with natural expeller-pressed oils such as soybean, olive, and Flax. It’s also vegan, lactose-free, gluten-free, casein-free, non-GMO, and contains no trans fat, and no cholesterol. With all of that said, this is a great source of healthy plant based monounsaturated, and polyunsaturated  fats.

Earth Balance

Sweet Roasted Acorn Squash
Serves 2

1 Acorn Squash (about 1 lb)
1 Tbsp Earth Balance Natural Buttery Spread
1 Tbsp brown sugar or Splenda Brown Sugar Blend

Preheat oven to 400°F and arrange a rack in the center. Cut the acorn squash in half. Scrape out the seeds and strings (like a pumpkin). Save the seeds for another recipe coming soon! Divide the Earth Balance spread into 1/2 Tbsps. Using your fingers, coat the yellow flesh of each squash with Earth Balance. Divide the brown sugar into 1/2 tbsps and sprinkle over each half of the squash. Place in a baking pan and surround with crinkled aluminum foil to hold the halves upright. Place in the oven and roast until fork tender about 45 minutes to one hour.
Note: I recommend using a baking pan with raised edges so any drippings can be caught.
On that note: If you don’t have a baking pan with raised edges, you can shape your own out of foil and then place on top of a cookie sheet.
Last note: Don’t throw the seeds away! Keep them in a ziplock or container in the fridge for another recipe.

Oatmeal Raisin Cookie Bake

Satisfy your cookie cravings with a healthy Oatmeal Raisin Cookie Bake that makes for a super quick and easy breakfast on the go, or even dessert for that matter! No actual baking required!

Oatmeal Raisin Cookie Bake
Serves 1 

1/4 cup liquid egg whites
1/4 cup rolled oats
1/2 banana mashed
2 Tbsp raisins
1 Tbsp chia seeds
1/2 tsp vanilla
1/2 tsp cinnamon
1/4 tsp baking powder

Mash the banana and combine with all ingredients until well mixed. Lightly spray a small microwave safe bowl with nonstick cooking spray. Pour the oatmeal raisin cookie mixture into the bowl and microwave (uncovered) for 1 minute and 30 seconds. Remove the bowl from the microwave (caution, bowl will be hot). Flip the bowl upside down on a plate to release the oatmeal raisin cookie bake, enjoy hot.

Kale Chips

Hi Everyone! I hope that you guys had an awesome 4th of July holiday yesterday!
It was so gloomy here yesterday, but the beach was still packed with people!

Today’s recipe is something that I am obsessed with: Kale Chips! I eat them all the time and they are always a staple in my pantry, but for some reason, I completely neglected to post a recipe on my blog! I make them so often, that I’m surprised this wasn’t my very first post haha If you don’t like the bitter taste of raw kale, you should give Kale Chips a chance, because they taste totally different when baked!


Kale Chips are really easy to make and are so affordable! I’ll start you guys off with a very basic Kale Chip recipe so you can experiment with your favorite spices and perfect the baking process before I get into some more advanced “cheesy vegan” options in future posts. If you are someone who craves crunchy cracks, these will be your new best friend. This is the perfect guiltless snack made from only 3 ingredients that are so healthy you could eat the entire batch!

It’s time to get to know this leafy green, so all hail the KALE!

  • One cup of kale has only 36 calories and zero grams of fat.
  • One cup contains nearly 20% of the RDA of dietary fiber, which promotes regular digestion.
  • Kale is contains carotenoids and flavonoids, two powerful antioxidants that protect our cells from free radicals.
  • Contains anti-inflammatory properties
  • Provides a high dose of vitamin K (providing 1327% of the RDA in one cup), which strengthens the composition of our bones.
  • Contains over 192% of the RDA of vitamin A in one cup, which is an effective antioxidant, that helps boost immunity, and helps maintains healthy bones and teeth.
  • Contains Vitamin C, a powerful antioxidant that helps to lower blood pressure, and ensures a healthy immune system.

Baking kale chips or any vegetables for that matter reduces some of the nutritional properties of the whole food,  so it is suggested that you use a dehydrator to preserves the nutrients and enzymes that help with energy and digestion. If you have a dehydrator, you could use this recipe and dehydrate at 115° for 8-12 hours. Don’t be afraid of losing some of the nutritional value during baking if you only have access to an oven… Kale Chips are obviously a much healthier option than greasy potato chips!

Kale Chips
Serves 3-4

1 bunch curly kale
1 Tbsp olive oil
1/2 tsp ground sea salt or seasoning salt to taste (one of my favorites is Lawry’s)

Preheat oven to 350 degrees. Rinse and dry kale leaves. Remove kale leaves from stems. Place the leaves in a mixing bowl and drizzle with olive oil. Massage the kale until the olive oil is evenly coated onto the kale. Place kale directly onto a baking sheet and sprinkle with sea salt or seasoning. Don’t worry about perfectly spacing out the Kale chips on the baking sheet, they can slightly overlap because they will shrink dramatically in size. Place the baking sheet in the oven and bake for 10-15 minutes or until crisp, moving the chips around and flipping them half way to ensure that they are evenly baked.
Note: Kale chips shrink after they are baked, so let the leaves be bigger than you would like them to be before baking. Below is a photograph of the kale chips before and after the baking process.


If you want a full nutrient rich dose of kale, try it raw in a green smoothie!

Cauliflower Poppers

This is a great snack when you want something salty to nosh on. I have found that cauliflower is incredibly versatile and easy to prepare. These are a great alternative to chips and you can snack away, guilt free!

Cauliflower Poppers

1 head of cauliflower
1/3 cup miso paste
2 Tbsp water
1 tsp curry powder

Preheat oven to 350 degrees. Chop cauliflower into bite sized florets. In a separate bowl, whisk together the miso paste, water, and curry powder. Combine with the cauliflower and coat thinly and evenly. Place the florets on a baking sheet and bake for 30 minutes. Flipping half way to ensure even crispiness. Cook until golden and crisp.

I used Cold Mountain “Kyoto White Miso Paste – less sodium” which is available at Whole Foods.
If you are looking for a lighter cauliflower popper recipe to try, spray the florets with olive oil cooking spray and sprinkle with your favorite salt free seasoning such as garlic, red pepper flakes, turmeric, or curry just to name a few. Now, go snack away!
