2014 So Far

I feel like I haven’t done a personal update for a looonnngggg time, and I realized this when someone left a comment asking if I went blonde. Well… yes I went blonde at the beginning of January! I had been wanting to go lighter for a while and finally went for it after the new year. I’ve posted multiple photos of my new locks on Instagram but completely neglected to post my array of selfies on my blog haha. So for those of you who are interested in my new hurrr and what I’ve been up to, here it is!

2014 So Far 1
My obsession with green juice and green smoothies is still going strong. My favorite juice is the Greenie from Nekter Juice Bar! Parsley, spinach, kale, celery, cucumber, lemon and apple.

I did my very first back-to-back spin class at Full Psycle!!! I came out of my 6:30pm class, ran into my friend Blake and he said “do the hip hop class at 7:30 with me!” In my head I was like no way Jose, I just finished pedaling my heart out for 45 minutes, I am d.o.n.e. but then one of the founders/instructors, Shelly overheard Blake and I and said “Catherine, if you take the next class, it will be the first sold out hip hop class of 2014!” So of course I gave in, grabbed the last open bike at the front of class and gave it my all! I actually did BETTER in the second class! I think it’s because my legs were warmed up, and I had tons of endorphins and energy after class #1! I kept my Polar HRM going and burned 1,879 calories between both classes! DAYUMMM! For anyone who may ask, my watch is a Polar RC3 with GPS. I have a full review of the watch here.
2014 So Far 8
Earned myself 2 Full Psycle Raglan shirts for those 2 back-to-back classes! Great milestone in my workout journey!
2014 So Far 9
I took advantage of the CA heat wave and went Stand Up Paddle Boarding (SUP) for the first time with my friend Blake! We had SO much fun, it’s a great core, arm, and back workout! Of course I had to sport that FP Raglan shirt that I earned the day before! My bow bikini bottoms are by a local company called LOlli Swim. They were limited edition Minnie Mouse themed, but LOlli has some other beyond adorable bow bottoms in stores and online!

I also took my very first Pilates class at Core Reform in the beginning of January. I started taking a few semi-private lessons with my friend Taryn so that we could learn the proper form on the reformer. I highly recommend doing this. Reformer Pilates classes might seem intimidating, but if you take a couple of private lessons (or at least one) to understand how it works, it makes the classes much better! I was hooked after my first class, bought a month of unlimited classes and have been going 4 times a week! My abs hurt so good!
2014 So Far 10
Of course I’m still obsessed with spin at Full Psycle and go 6 days a week! I’ve been loving alternating spin and Pilates throughout the week since my legs get pretty stiff from cycling. Pilates has really helped!
2014 So Far 11

Last month I also took Teddy to Corgi Beach Day in Huntington Beach!
2014 So Far 12
Last week my friend and fellow health & fitness blogger Kayleigh (Okay Fitness) and I took her adorable little munchkin nephew to Disneyland! Taking a toddler to Disneyland and pushing a stroller around the cobblestone streets in the park is a workout in itself. Mad respect to all of the mommas out there who do this!

Other obsessions in 2014: slouchy beanies and lipstick. Bright bold lips that give you confidence and make you feel girly! Sorry I’m to sorry for all of the selfies! February is the month of self love! I guess it’s less awk than asking my friends to take photos of me? haha.

Last night I had a serious moment! I made a new PR in spin at Full Psycle. #1 out of all of the girls, #4 all around, and 2 away from 500 total energy!!! This was a huge huge accomplishment for me and I still have a smile on my face today! My very first class on 7/8/13, my total energy was 158 kilojoules and my average power was 69! HOLY GUACAMOLE, that’s an enormous difference. I cannot believe how strong I have gotten!!! I’ve noticed a huge change in my mood, overall happiness, and body composition since starting spin and Pilates!

2014 So Far 17
So far, 2014 has been all about stepping outside of my comfort zone and trying new things! Have you tried a new workout or healthy recipe since the beginning of 2014? Let me know!

Spinach Hummus + Cabo Chips Giveaway

Who’s ready for the Super Bowl?!

Since Super Bowl Sunday is usually a day of snacking while watching the big game, I wanted to introduce you to my favorite chips and healthy dip!

Spinach-Hummus-Cabo-Chips-2

Let me start off by saying that Cabo Chips won’t cure health issues, but they are definitely one of the healthiest tortilla chips on the market, and most importantly… they taste delicious!

If you grew up in Southern California like me, you probably grew up eating Have’a Corn Chips. Well let me tell you, that as someone who was raised in Orange County and ate Have’a Chips with every sandwich, Cabo Chips are actually better. They’re evenly coated in soy sauce so that each chip that touches your tastebuds is loaded with that perfect soy flavor. You won’t have to search the bottom of the bag for the broken pieces of “dark” chips that actually taste like soy sauce! (California kids… You totally know what I’m talking about!) There is no other way to describe these chips than LEGIT! NON-GMO verified, 100% whole grain, vegan, gluten-free, and kosher. OH EM GEEE. As Healthy as tortilla chips can get!

Cabo Chips are unique because they are truly authentic restaurant/cantina style tortilla chips. It starts with stone ground non-gmo corn cooked fresh daily into delicious tortillas which are hand cut into triangles and cooked in non-gmo expeller pressed soybean oil. They are then seasoned by hand with real ingredients – no powders or “natural flavorings” here just real lime juice and either gluten free soy sauce or sea salt depending on the flavor. Cabo Chips are light, crispy, and flaky, and they’re great on their own but also sturdy enough for dipping.

Again, Cabo Chips are one of the few non-gmo project verified corn tortilla chips and they’re are also vegan, gluten free, 100% whole grain, and Kosher! I’m in Love!

Chocolate Covered Strawberry Overnight Oats

My favorite thing about overnight oats is that they’re so simple to make, and easy to grab and go in the morning. There is no cooking when it comes to “ONOs,” just combine everything, mix it up, and let it soak overnight while you get your beauty sleep! Then come morning time, you can quickly grab your jar of fully prepped oats amidst the morning madness and eat them on your way to work or while getting ready. There is no excuse for skipping breakfast when it’s already prepared for you! I loveeee eating them cold, right out of the fridge.

Some of you may ask, what is the difference between whole rolled oats & steel cut oats?
The difference between rolled and steel cut oats is that while both contain whole grain oats, they are processed differently. Rolled oats are steamed, rolled, steamed again and toasted, ending up as thin flakes. Steel cut oats are made from oat kernels that have been chopped into thick pieces.

Both types of oats are great choices (especially compared to extremely processed instant oatmeal), but steel cut oats get even more points in my book because they digest slower than rolled ones. Like all other grains in whole or cracked form, steel cut oats rank lower on the glycemic index than rolled oats because they take longer for digestive enzymes to reach the starch inside the thicker pieces, slowing down its conversion to sugar. In a nutshell, they don’t cause a spike in blood sugar!

Banana Freezing 101

“How do you freeze bananas?”
This is a super common question that I get all the time. And no, it’s not a stupid question! Freezing bananas is something that I discovered along the way of my weight loss/healthy eating journey. I would buy a bunch of bananas and some weeks I could eat them all, and others they would be left alone on the kitchen counter to wither away and turn into brown blobs. Instead of wasting bananas and throwing them away, I learned about freezing them for smoothies! Frozen bananas are the best discovery I’ve made! When you use frozen bananas in your smoothie, there is no need for ice because it makes your smoothie so thick, creamy, and cold!

Now before we get into Banana Freezing 101, I want to teach you guys about ripe bananas. A banana is fully ripened when it is CHEETAH SPOTTED! There should be absolutely no green, even around the stem. At the cheetah spotted stage, the starches will have fully developed into sugars. If you have the astringent puckering feeling in your mouth after biting into one, you will know that it isn’t fully ripe! You know what weird taste/feeling on your tongue that I’m talking about? Yuck! Wait for the cheetah spots : ) they are the best for perfect shmoozies!

How to freeze bananas 1
Banana Freezing 101

1. Wait until the bananas have become cheetah spotted.
2. Peel
3. Place in a Ziploc bag.
4. Freeze!

-If you don’t have a high powered blender such as a Vitamix, you can chop up the bananas before freezing so it’s easier on your blender. I like leaving them in one piece so I know I’m getting a full banana serving when I use them in smoothies! You can literally store them in the freezer for months (although I make a lot of smoothies, Banana Nicecream, and Yonanas, so I go through them pretty fast)!

I hope you learned something new today!
Have a healthy & happy weekend!
