My days have been getting busier and busier and sometimes I barely have time to make breakfast before leaving the house.
Instead of skipping breakfast (which is a major no no for me), I have found the perfect solution; Overnight Oats.
Not only have I found my match for the best grab and go breakfast, but this also gives me something to do when I am up late at night with nothing to do.

Overnight Oats are easy to prepare and don’t require any cooking or mess! It does’t get much better than that!
Todays oats were a creamy mix of cinnamon vanilla and almond served with a juicy pink lady apple.

Overnight Oats

1/4 cup whole rolled oats
1/4 cup unsweetened almond milk
1/2 Tbsp chia seeds
1/2 tsp vanilla extract
1/2 tsp cinnamon

Combine all ingredients in a jar and refrigerate overnight.
Open up in the morning and enjoy!

    Do you think regular flavored light soy milk would work as well? (for this and other recipes)

      Definitely! You could use any type of milk in this recipe as well as others.
      Recipes that call for dairy yogurt could also be substituted for soy or other nondairy yogurts.

    I’m making these now! Hehe… I would’ve made the chocolate one, but sadly, I don’t have any cocoa. I’m so stoked to try these in the morning – should be awesome before heading to school. I even convinced my mom to give it a go, so I’m making 2 tonight!~ Thanks for the awesome recipe 🙂

      I haven’t tried these Overnight Oats without the cocoa, but maybe they will taste like Vanilla or “Yellow” cake batter! Let me know what yo think! xo

        It actually had a really mild taste 😛 I added half a banana (diced) to it and it tasted pretty awesome!

    Great idea with the banana! Some blueberries (sadly I’m allergic), or cherries could be really delicious in it too! Definitely give the Chocolate Cake Batter Overnight Oats a try when you get some cocoa powder!

    I found these to be terribly bland for some reason. I could only find ground chia seeds at the grocery store. Does that makes a difference?
    I’m going to try again tonight with a little more almond milk (as mine turned out quite dry too) and a hint more cinnamon with a bit of honey.
