To continue DOLE Bananas’ initiative to “Peel the Love” I wanted to show just how cool bananas really are. Thanks to DOLE, they sent me some awesome party supplies to host a Peel The Love banana party of my own. Their party kit included DOLE Bananas coupons, DOLE margarita glasses, reusable DOLE grocery bags, a yellow platter, banana USB Drive, and a Yonanas machine for my friends and I to enjoy! My first thought was… how can I show my readers how to throw a FUN healthy food party? Umm, obviously by hosting a DOLE Banana Nicecream party! After all, my mission is to make healthy foods fun, exciting, and always tasty!

I had a few friends over for an afternoon of Banana Nicecream and an endless healthy topping bar.
My Banana Nicecream bar consisted of frozen DOLE Bananas turned into banana nicecream/froyo with the help of Yonanas, and all of these yummy toppings:
Blueberries, raspberries, strawberries, mango, pineapple, pomegranate seeds, apricot preserve, banana chips, honey roasted sliced almonds, granola, shredded coconut, crushed peanuts, chocolate chips, cocoa powder, chocolate covered sunflower seeds, crushed graham crackers, trail mix, pistachio toffee, cocoa almond butter, peanut butter, honey, agave, and cinnamon! I went a little crazy with my topping selection! Who doesn’t love toppings?

Instead of going to the grocery store for a pint of ice cream each, this is how we will be partying from now on. Bananas. Toppings. Pixar Movie. Best. Night. Ever.
Such a simple but healthy fun party idea for kids and families of all ages!

California Summer Wrap

Motivation Monday:Be stronger than your excuses.

Since it’s getting hot out, I’ve been craving lettuce wraps of all kinds.
Try this filling wrap for a picnic in the sun or a beach day!
My favorite type of greens to use for wraps are collard greens, but I was actually out when I made this wrap. Of course any leafy green will work! Greens = delish!

Serves 1

3oz tempeh
1/4 cup cooked quinoa – chilled
1/4 avocado
1 lettuce leaf (romaine, iceberg, or collard)
1/4 cup chopped onions
1/4 cup chopped cherry tomatoes
1 Tbsp lemon juice
pinch of salt
pinch of pepper

Cook quinoa to package instructions and chill in the refrigerator beforehand. Cut tempeh into long thin strips and cook to package instructions on stovetop. Cut cherry tomatoes in half and chop onions. Combine tomatoes and onions with quinoa. Add lemon juice, salt, and pepper to the mixture and gently stir together. Pour the mixture into one washed lettuce leaf  and top with tempeh and avocado slices. Roll up into a wrap, cut in half,  and enjoy.

Really, I can’t believe it!
There’s tons of hype about spaghetti squash these days, but I found out the hard way that I’m extremely allergic. After the allergy incident, I was determined to find a light healthy veggie pasta alternative. I’m pretty proud of this one!

This is an excellent pasta alternative for someone who is looking for something light and healthy, gluten free, low carb, vegan (without the cheese), or someone who is simply looking for a tasty way to incorporate more veggies into their diet. Also a huge plus for mommies who want to disguise more veggies in their kids meals!

So what’s the secret noodle?
Broccoli! Broccoli slaw to be exact.

What is broccoli slaw?
Broccoli slaw is made of raw shredded broccoli stalks. Sometimes you will see it in the grocery store mixed with shredded carrots and/or cabbage.

Sound too scary?
Give it a try by slowly incorporating the broccoli pasta into your regular pasta! Start with a larger ratio of pasta, and then each time you make it, try using more of the broccoli pasta.


Considered to be one of the most nutritious vegetables, broccoli offers us:

  • High amount of potassium.
  • Magnesium and calcium that help regulate blood pressure.
  • One cup of broccoli contains the RDA of vitamin C, an antioxidant necessary for fighting against free radicals.
  • Contains high levels of both calcium an vitamin K, which are important for bone health.
  • High in fiber, which aids in digestion and helps to make us feel full and prevent overeating.
  • Trace minerals, such as zinc and selenium that act to strengthen the immune system.

Now that you’ve met your new friend broccoli, let’s make some “pasta!”

I Can’t Believe It’s Not pasta!
Serves 1

2 cups raw broccoli slaw
1/4 cup organic tomato/marinara sauce
1/4 cup chopped yellow onion
1/4 cup shaved parmesan cheese
1 tbsp olive oil

Place olive oil and chopped onions in a skillet over medium/high heat. Cook the onions until they become translucent. Add the broccoli slaw to the same pan and sauté for about 5 mins, tossing frequently. Add the tomato sauce to the pan and stir until evenly coated and heated. Transfer the “pasta” to a bowl and top with parmesan cheese.
Note: You want the broccoli slaw to get soft, but not mushy. “Al dente” is probably the best description!

I’m so excited because I finally edited my RFFMBT shirt photos for the online store and updated my inventory, but dun dun dunnnnnnn I’m going out of town AGAIN! This bunny is a jet setter! Since I do all of the shipping and handling for the RFFMBT online store myself, I don’t want to open the store and not be able to send you guys your shirts, so I will be postponing it yet again until I get home. I just couldn’t imagine buying a product and waiting forever for it to ship, that’s just not fair to you guys. Eeeeeeek I can’t wait to show off the new store when I get home! Thank you for your patience!

In other updates, United Luv donated 9 iPads to St. Patrick’s Hospital in Missoula, MT! St Patrick’s also matched their donation with 9 more iPads for patients! Thank you thank you thank you everyone for supporting United Luv! The little things like “liking” United Luv on Facebook are helping enormously! For all of my little bunnies who purchased United Luv shirts, I hope you like your little surprises that I sent in the mail! The Eaton family and I are so grateful for all of you!

Serves 1

1 iceberg or romaine lettuce leaf
3 oz tempeh
3 Tbsp chopped fuji apple
2 Tbsp chopped red grapes
2 Tbsp Almond Butter
1 tsp honey

cut the tempeh into cubes and cook over stovetop to package instructions. Chop apple and grapes. Once tempeh has finished cooking, combine with apple, grapes, almond butter, and honey and mix well. Place the mixture into a leaf of lettuce, wrap, and enjoy!

Hi honeybunnies!

I had a super fun photoshoot with my friend Brett yesterday to photograph all of my new RFFMBT shirts! After traveling to San Francisco, Denver (twice), Palm Springs, Nebraska, Iowa, and Monterey,  I’ve finally had some down time to get the ball rolling on my shirts! Ohhhhhh my goji I’m so excited I can’t even stand it!!! I did Brett’s hair and make-up yesterday (she looks like the ultimate rffmbt bunny!) and then we blasted some top 40 hits while taking pictures. We had so much fun that I ended up with over 500 pictures! Oopsiessss! Now I have lots of sorting and editing to do in order to get my store up and running. Hopefully (cross your little bunny paws) that the new inventory will be ready for the store this weekend or early next week! Of course I will definitely notify you guys in a post as soon as they are up!

Eat More Rabbit Food Shirt Promo
So I’ve seen this recipe for a healthy Frosty Shake floating around the interwebs recently, and this morning my friend’s mom (Brett’s mom, actually!) posted it on my Facebook! It was pretty much a sign that it needed to be tried. I had all of the ingredients on hand, so I decided to go for it. The end result? Not up to RFFMBT standards… It was a little too icy and bland for my taste, so I took to the kitchen to perfect a Frosty Light for you guys!

Did you know, that a small Original Chocolate Frosty from Wendy’s has a grand total of 290 calories, 7 (g) fat, and 40 (g) of sugar? Yes 40 grams of sugar! OMG! Ya, I had no idea either. I’m usually really good when it comes to reading nutrition labels, but when I indulge in ice cream I usually avoid the label and enjoy. So when I do look up the nutrition information for things like this, sometimes my jaw drops! I forget how much sugar restaurants add!

Behold the Chocolate Frosty Light! Only 5 ingredients (well 6 if you count ice cubes) that you probably already have in your kitchen! Score! I’ve used a frozen banana for natural sweetness, almond milk for that rich creamy texture, and chia seeds for thickness! Chia seeds in a “Frosty?” You betcha! Chia seeds swell to about 10 times their natural size when combined with liquid, resulting in a thick gel-like texture. Blend them thoroughly in your Frosty Light and get a nice ‘n’ thick smoothie and an added bonus of healthy Omega-3s and fiber. Trust me, after they’re blended up you won’t even know they’re there!

Chocolate Frosty Light
Serves 1

1 cup original unsweetened almond milk
1 frozen banana
1 Tbsp unsweetened cocoa powder
1/2 tsp chia seeds
1 tsp pure vanilla extract
8-10 ice cubes

Combine all ingredients in a high powered blender and blend until smooth.
