Serves 1

1 egg
1 slice whole-grain bread

Using a cookie cutter or knife, cut a heart out of the center of the bread. Spray a pan with nonstick cooking spray. Place the bread in pan over medium to low heat. Crack an egg and place it in the heart cutout. Cover the pan and allow to cook for a few minutes until whites are cooked through. Transfer the finished toast to a plate and adorn with Sriracha or Tabasco hearts. Top the remaining bread heart with homemade Cherry Chia Jam. Happy Valentine’s Day!
Note: I used a 2.5 inch heart shaped cookie cutter.
Cherry Chia Jam

Cherry Chia Jam
Makes about 1 cup of jam

1 cup cherries or berry of your choice (I used frozen pitted cherries)
1 Tbsp chia seeds
1 Tbsp water

Defrost the cherries under warm water until thawed and remove pits if necessary. Place the cherries and 1 Tbsp of water in a blender and pulse until cherries are mashed, but not completely pureéd. Transfer the mashed cherries to a jar and stir in the chia seeds. Refrigerate for about 60 minutes until chia seeds expand and turn the content into a thick jam.

Today, my heart is heavy. This past weekend, I lost one of my best friends, and heaven gained another angel. This angel being extremely goofy, sarcastic, and creative!
This has been a reminder of just how precious our days are. As my world has turned completely upside down, I am left with so many amazing and funny memories that we spent together. In the spirit of Valentine’s day this week, make the best of every moment with your parents, siblings, grandparents, aunts, uncles, cousins, and friends and tell them how much you love and appreciate them. Show them your love not only on Valentine’s day but everyday, for life is entirely too short.

This week has just begun, and it has already been so challenging. I’ve noticed my eating behaviors changing, but I am trying to stay strong because I know that is what he would want. Instead of isolating myself and crawling into a hole, I want to celebrate his life and continue doing what makes me happy: creating new recipes and blogging!

With that said, it’s time for some Monday motivation.

Serves 1

4 carrots
1 fuji apple
1/2 medium beet
1/2 lemon
1/2 inch piece of ginger

Rinsee the carrots, apple, and beets. Cut beet in half. Cut the lemon in half and remove rind.Cut ginger into a half inch section and chop off the skin. Juice, and enjoy! I also adorned my juice with heart shaped slices of beets!
Note: I like to refrigerate all of my ingredients before juicing so my juice is nice and cold!
ANother Note: I recommend using organic fruits and veggies for juicing. No one wants wax from a shiny apple in their juice, EW!

Two Ingredient Pancakes

Happy National Pancake Day!!!

I am loving these awesome food holidays! Yesterday I celebrated National Frozen Yogurt Day with my friend Brett at Yogurtland for a free yogi and toppings. The line went well around the corner of the store, but it moved petty fast. I went with plain/tart and topped it with kiwi, yogurt covered raisins, and yogurt chips, mmmm!

Instead of going to IHOP for their oh so tempting free and very caloric pancakes, I have some ultra skinny and healthy two ingredient pancakes for you! Celebrate this tasty holiday with a batch of gluten free, flour-less, and protein packed pancakes! They’re so sweet, you may not even want syrup!

Serves 1

2 eggs
1 very ripe banana

my favorite additions:
1/4 tsp vanilla extract
1/8 tsp cinnamon

Mash the ripened banana with hands or a fork until smooth and set aside. Beat two eggs and then add to the mashed banana. Add vanilla and cinnamon into the batter if desired. Generously spray a pan with nonstick or olive oil cooking spray and turn the stove to medium heat. Using a 1 Tbsp measuring spoon, scoop a spoonful of batter and pour into the pan. Flip the pancakes once the edges become cooked. Allow the pancakes to cook through. Respray the pan with nonstick spray between each set of pancakes. Enjoy!
Note: Start with a lower heat since the pancakes can burn easily. Each pancake takes a couple of minutes to cook.
Another Note: Nonstick cooking pans help making the pancakes easier to make.

Motivation Monday: “I don’t sweat, I sparkle!”

Sooo my Q&A did not end up happening on Friday, or even Saturday… but it will be here this week! Trust me, I don’t get my stitches out until August 30th, so there is still plenty of time for me to type away on the couch. There are only so many times that I can see Happy Feet, Kung Fu Panda, and Pirates of the Caribbean on TV. This past weekend turned out to be much busier than I planned. Or maybe it just seemed busier because everything I did ended up taking 10 times as long with my gimpy foot and crutches in tow. My birthday celebrations continued with the arrival of one of my very best friends Kelsie flying in from NY and another birthday dinner with my volunteer group. Amongst the birthday festivities, I still had a few minutes for a healthy baking recipe that is “nothing but good.”


Chobani naturally powered 5 US athletes to the Olympic Games in London 2012, bringing 2 gold medals home for Team Chobani!
I don’t know about you, but I was so happy to see Chobani sponsoring Team USA at this years Olympics. It’s such a refreshing change to see something that athletes most likely consume, compared to unhealthy fast food like McDonald’s being promoted. The more Chobani commercials I saw throughout the games, the less Chobani I saw on the shelves at my local grocer. It looks like their advertising worked, go CHO!

Who said muffins can’t be make for a healthy breakfast? Today I have a recipe for a super moist, fluffy single serving muffin made with Chobani’s new Vanilla Chocolate Chunk Greek Yogurt. This little treat is baked without any oil or butter, making for a light protein filled muffin with healthy ingredients. If you’re anything like me, making one dozen muffins is just dangerous. You no longer have to be afraid of eating one too many muffins, because this is a muffin for one. For someone who always wants “just one more” or someone who lives alone, your problem has been problem solved!


Chobani Muffin For One
Serves 1

4 Tbsp Chobani Vanilla Chocolate Chunk Greek Yogurt
3 Tbsp whole wheat flour
1 Tbsp liquid egg whites
1 Tbsp chia seeds
1/2 tsp pure vanilla extract
1/4 tsp or 1 packet of stevia
1/4 tsp baking powder

Preheat oven to 375 degrees. Combine all ingredients and stir until well mixed. Pour the batter into a cupcake liner in a muffin tin. Bake for 15 minutes. Remove from oven and let cool for 5-10 minutes. Enjoy warm out of the oven.
Note: This recipe would also work great with other Chobani flavors such s cherry or blueberry where there are chunks of real fruit!

Oatmeal Raisin Cookie Bake

Imagine having a fluffy oatmeal raisin cookie for breakfast. Sounds delicious right? Well I have the recipe of all recipes for you! Satisfy your cookie cravings with a healthy Oatmeal Raisin Cookie Bake that makes for a super quick and easy breakfast on the go, or even dessert for that matter! No actual baking required!

Oatmeal Raisin Cookie Bake
Serves 1 

1/4 cup liquid egg whites
1/4 cup rolled oats
1/2 banana mashed
2 Tbsp raisins
1 Tbsp chia seeds
1/2 tsp vanilla
1/2 tsp cinnamon
1/4 tsp baking powder

Mash the banana and combine with all ingredients until well mixed. Lightly spray a small microwave safe bowl with nonstick cooking spray. Pour the oatmeal raisin cookie mixture into the bowl and microwave (uncovered) for 1 minute and 30 seconds. Remove the bowl from the microwave (caution, bowl will be hot). Flip the bowl upside down on a plate to release the oatmeal raisin cookie bake, enjoy hot.
