A Little April Update

I feel like I have been totally neglecting my blog for the past week! I’m so sorry I haven’t had any original recipes recently. The craziness all started when I posted my new “Eat More Rabbit Food” shirts for sale. Thanks to all of my adorable little bunnies, you have kept me super busy in the packing and shipping department! The first day I listed my shirts, I sold over 300 orders! OH MY GOJI!

I cannot thank you enough for all of your support! I love that two years later I’m still selling “Eat More Rabbit Food” shirts. I’ve even noticed repeat customers since I first started my blog! Ahhh it’s the coolest thing!!! I love you guys so much!

I couldn’t even believe my eyes when the lavender shirts sold-out within the first hour! I contacted my supplier, but they are completely out of stock of the lavender oversized shirts, so unfortunately I won’t be able to get more. Hopefully they will be making more one day, since it’s def a fav color of my little bun buns!

So after I packed up the first day’s orders, Clare Crawley from The Bachelor posted a picture wearing my white “Eat More Rabbit Food” shirt on Instagram and a huge rush of orders came in my inbox! If you guys didn’t already know, Clare is super passionate about healthy eating! She makes green smoothies all the time! All of the rabbit food definitely pays off, she looks so radiant and fit!

Here’s a little glimpse into what I’ve been up to!

Fresh ProduceI went to a local grocery store called Gower’s Direct and loaded up on fresh produce to make juices and smoothies. Their prices are unreal! All of this was $20.06! 2 ruby red grapefruits, 1 oro blanco grapefruit, 4 lemons, bunch of 6 bananas, 10 Fuji apples, ginger root, 5 bunches of kale, 2 bunches of celery, 1 pineapple, and 4 cucumbers!

Cucumber Lemonade JulieI made tons of juice all week long. One of my favorites is my Sweet Cucumber Lime Juice!

1 lime
1/2 cucumber
1/4 pineapple
1 Fuji apple

Vegas High RollerI also went to Las Vegas with a few of my best friends for a little weekend getaway. It’s only a 4 hour drive from Southern California, so it’s fun to go for a weekend. We got to ride “The High Roller” which is the world’s largest observation wheel at 550 feet high!

Kayleigh's weddingLast weekend I went to my friends Brett & Kayleigh’s wedding! Here is a photo from the big day with my other friends Brett, Michael, and Kevin!

Jessica's 1st Bridal ShowerLast Sunday was my sister’s first bridal shower! Yes, you read that right, she is having multiple showers because she is extremely loved! haha. Not to toot my own horn, but toot toot, I totally nailed it on that ribbon bouquet that she will use for her wedding rehearsal! Maid of Honor extraordinaire!

Vita Coco ShipmentVita Coco also caught wind of my addiction to Coco Cafe and using coconut water in smoothies, so they surprised me with a huge shipment of coconut water!!! Thank you Vita Coco, I love you guys!

Beet and Mandarin Orange Salad

I am just in love with all of the healthy meals that Paulette Lambert, R.D. made for us at the DOLE Summit. I felt so spoiled having all of these incredible meals prepared for me during my trip. I pretty much died and went to rabbit food heaven! I learned so many creative healthy ways to use DOLE packaged foods that I never would’ve thought of before! If only I could have Paulette in my kitchen every day! Le sigh.

I am definitely a texture person, and this salad was filled with the perfect combination of textures from chewy quinoa to juicy mandarin oranges and crisp lettuce. I loved the addition of quinoa because it makes the salad extra filling and satiating. Plus, it’s Rabbit Food Pyramid approved! I’ve broken it down for you at the end of the post!

This salad would be just delightful for a weekend brunch with a Pineapple Apricot Bellini!
Oh yes, I have a recipe for that too!

Beet-and-Mandarin-Orange-Salad

Beet and Mandarin Orange Salad

Recipe By: Paulette Lambert, R.D., CDE
Serves 8
Calories per serving: 95

Salad
4 large beets, rinsed and trimmed
2 heads of frisee lettuce, outer leaves removed (or baby greens)
1/2 red onion, thinly sliced
1 cup DOLE Mandarin oranges, drained
1/4 cup DOLE golden raisins
1/4 cup kalamata olives, pitted and halved
1 cup cooked tri-colored OR red quinoa
2 ounces goat cheese, crumbled

Vinaigrette
1 1/2 Tablespoons grape seed oil
1 Tablespoon water
1 teaspoon orange flower water
1 1/2 Tablespoon red wine vinegar
3 Tablespoons parsley, chopped
Sea salt and freshly ground black pepper

Preheat oven to 400 F. Wrap beets in foil and roast on a rimmed baking sheet for 45-60 minutes, until tender. When finished roasting, and cool enough to handle, peel and dice beets into bite-sized pieces. Set aside. In a large serving bowl, toss frisee, beets, onion, oranges, raisins, olives and quinoa. In a small bowl, whisk the vinaigrette ingredients together. Season to taste with salt and pepper. To serve, drizzle the vinaigrette over the salad, toss gently and sprinkle with crumbled goat cheese.

The Rabbit Food Pyramid Breakdown
Produce: frisee, beets, red onion, mandarin oranges, golden raisins
Whole Grain:  quinoa
Protein: goat cheese
Plant Based Fat: olives and grape seed oil from vinaigrette
Free Extras: orange flower water, red wine vinegar, parsley , salt & pepper

Brunch it up, take a walk on the wild side and pair this with Pineapple Apricot Bellinis!

Pineapple Apricot Bellinis
Serves 4

1 cup sparkling white wine or sparkling cider
1/2 cup DOLE Pineapple Juice
1/2 cup apricot nectar

Combine sparkling wine, pineapple juice, and apricot nectar in a pitcher. Stir with a spoor; pour into champagne flutes. Garnish with apricot or pineapple wedges, if desired.
Please drink responsibly!

Gingered Carrot and Orange Soup

The healthy DOLE recipes continue!

This is a Gingered Carrot and Orange Soup that we got to enjoy at the DOLE Summit. The soup is vegan and gluten-free, while still remaining creamy and thick. There’s also an unexpected ingredient; DOLE Mandarin Oranges, that give it a little extra flavor! Paulette Lambert, R.D. also added a dollop of nonfat Greek yogurt atop of our soups which is of course optional, but totally delicious!

Gingered Carrot and Orange Soup
Recipe By: Paulette Lambert, R.D., CDE
Serves 8
Calories per serving: 95

1 Tablespoon olive oil
2 pounds carrots, chopped
1 medium onion, chopped
2-inch piece of fresh ginger root, peeled and grated
2 quarts reduced sodium, fat-free, organic vegetable broth
1 cup DOLE Mandarin Oranges, drained
1 teaspoon sea salt (or more, to taste)
1/4 teaspoon freshly ground black pepper
1/2 cup plain, non-fat Greek yogurt (optional)
2 Tablespoons fresh cilantro, chopped

In a large Dutch oven, over medium-high heat, add olive oil. Saute carrots, onions and ginger until soft. Add broth and simmer until carrots are fork-tender. Working in batches, puree Mandarin oranges and cooked vegetables in a blender, food processor or use an immersion blender (or your Vitamix! Just add to blender at this step then puree until smooth and very hot, continuing on with step four). Return soup to Dutch oven. Season well with salt and pepper. Serve hot or cold. Garnish with Greek yogurt and chopped cilantro.

As you saw in my previous post, we got to sip on some seriously delish cocktails made by blogger and mixologist Jordan Catapano at our first event at the DOLE Summit!

Dole Summer Cocktails with Frozen Fruit

Jordan Catapano is the author of This Girl Walks Into a Bar: A Women’s Guide to Professional Bartending and Home Mixology, and has had long experience as a professional bartender and mixologist. 1 ½ ounces Malibu Caribbean Rum
2 ½ ounces coconut juice
¾ ounce banana liqueur
½ ounce fresh lime juice
lime slice for garnish

2 ounces DOLE Pina Colada Juice
3 ounces coconut juice
¾ ounce banana simple syrup
½ ounce fresh lime juice

DOLE Packaged Foods Summit 2014

I had the honor of attending the DOLE Packaged Foods Summit this year! I’ve been working with Dole fresh for a couple of years now, and I’m really exciting to be working with Dole packaged as well. Dole packaged foods consists of frozen, canned, and other shelf stable items that make healthy eating on the go and in a hurry, simple and easy! I am loving some of their new products and can’t wait to share them with you below!

DAY 1:
All of the bloggers met at Ford’s Filling Station in Culver City, California for a fun night of drinks and ton of food! Chef Ben Ford welcomed us to his fabulous restaurant with an endless amount of hors d’oeuvres!

Dole-Summit-2014-5Mixologist, Jordan from This Girl Walks Into A Bar created the perfect cocktails for our evening in Culver City. Each drink recipe was created with one DOLE packaged item! Her Pineapple Island Cocktail had DOLE Frozen Pineapple Chunks in place of ice for a sweet cooling addition to the drink. The Blueberry Vista Champagne Cocktail also had the addition of DOLE Frozen Blueberries at the bottom, and the Summer Golden Cocktail had delicious DOLE Pineapple Juice!

After a fun night at Ford’s Filling Station, we headed to the Four Seasons – Westlake Village to check in and rest up for the big day ahead.

DAY 2:
We woke up bright and early and headed across the street to the Dole headquarters, which is conveniently located just feet across the street from the Four Seasons.

One of my fav new DOLE products is DOLE Fruit Squich’ems. Applesauce may seem like a kid’s snack, but these are AWESOME. The BPA free squeeze pack is portable, mess free, and designed so you don’t need a spoon! The produce in DOLE Fruit Squish’ems use a rapid heating and cooling technique made by scientists at North Carolina State. This process kills microbes within 80 seconds which retains 90% of the original vitamins and nutrients versus other processes that have to heat produce for 15 minutes which lowers nutrients and alters taste. This is a brand new technology that doesn’t exist in any products in a grocery store besides these! DOLE wants their products to have the least amount of processing as possible while making it safe to consume from the shelf.

Squish’em Tip: Freeze your DOLE Squish’ems for a slushy like sweet treat, or freeze and throw into your kids lunch boxes in place of ice packs!

Another favorite product is the new DOLE Shakers. A.K.A. the blender-less smoothie! You may have seen tehese in the frozen fruit aisle of your grocery store, but these are the new and improved Shakers – now with Greek yogurt AND vegetables! As you guys know, I’m addicted to smoothies, especially smoothies with veggies added in! This is a suer convenient way to get a serving of fruit, veggies, and protein rich greek yogurt when you’re on the go and don’t have time to use your blender! All you do is fill it with your juice of choice, shake shake shake, and you have a perfectly blended fruit & veggie smoothie!

Inside of the Shakers are tiny frozen beads of pre-blended fruits, veggies, and Greek yogurt, kind of like Dippin’ Dots! Since I have a severe berry allergy, I was SOOO happy to find a flavor that I could enjoy! I’m obsessed with the new Pineapple and Mango flavor, which also includes sweet potato and carrots!

Another new product that I was super stoked about are the DOLE Fruit & Oatmeal instant oatmeal cups! Unlike other instant oatmeals that contain dehydrated fruit, these come with fruit packed in 100% fruit juice on top! After heating the oatmeal mixture with water, you pour the fresh fruit and juice into the cup and stir it in!

Have you ever wondered why DOLE Pineapple Juice is in a can and never a plastic bottle? I have! and I learned why at the DOLE Summit! DOLE stores their Pineapple Juice in a can to avoid exposure from light which alters the color os fresh juices. Look at a competitor’s pineapple juice on the left and the fresh DOLE Pineapple Juice on the right! the other brand looks like apple juice!

A very very exciting announcement: Dole is coming out with DOLE Garden Soups! They have short ingredient lists and are made with natural ingredients! We got to sample the Roasted Garlic Tomato Basil soup, and it was to die for. I’m a HUGE fan of tomato soup, and this flavor did not let me down! I cannot wait for these to hit the shelves.

I had no idea until the summit, but Dole acquired one of my favorite snack companies Mrs. May’s! I used to be addicted to their Cashew Crunch!

The Mrs. May’s Crispy Veggie Chips are so good. They’re unlike any “vegetable chips” I’ve had before. They’re made from real vegetables, not vegetable blends, and they’re perfect seasoned and crunchy! We ate the entire bag by the end of the presentation haha.

After sampling all of the new DOLE packaged foods products in the test kitchen, we all headed to the DOLE cafeteria for lunch. Their cafeteria is really incredible. It’s the healthiest corporate cafeteria I’ve ever been to – everything is made to order, and nothing is pre-made. There were tons of vegetarian and vegan options, and an abundance of fresh produce. If I worked at DOLE HQ, I would never eat anywhere else. Wait until you see my veggie wrap from lunch, you will agree!

After lunch, we walked back across the street to our hotel for some R&R, and I mean real R&R! The DOLE team treated us to spa treatments at the hotel. It was such a dream, and I am so spoiled from the realizing massage.

I had the most incredible Organic Tuscan Kale Salad. Chopped raw kale mixed with carrots, quinoa, wild rice, red peppers, green onion, and red grapes. Mixed in shaved parmesan and toasted sunflower seeds and tossed with a citrus champagne vinaigrette. Still drooling over here!

The best part of blogger summits is the ridiculous amount of food photos that we all take, and we all understand. We will literally let our food get cold until we get “the perfect shot.” My family usually tells me to put my phone away, but these ladies get it! I also love the amount of selfies that went on during the summit! Katie and Ally to “selfie” to a whole new level! So cute!

DAY 3:
I have to say that Day 3 was my favorite day of the summit! We met at the California Health & Longevity Institute Wellness Kitchen where Paulette Lambert, R.D., CDE prepared us breakfast made from DOLE packaged products! The Wellness Kitchen is absolutely stunning. I’ve decided that I NEED a chandelier in my kitchen ASAP! How stunning is the light? Swoon.

Next up we watched Paulette Lambert, R.D., CDE cook our lunch. I LOVE LOVE LOVED watching and listening to Paulette talk about each ingredient she used and WHY she used it! When I make recipes with kind of funky ingredients, I love sharing why that certain food is good for you and how it benefits your health, and that is exactly how Paulette cooks as well! I was mesmerized watching her chop and cook 5 dishes at the same time!
