Thank you so so so much for your amazing comments on yesterday’s post. I read each and every one of them and I am so thankful for all of my supportive readers. Sometimes it’s hard to put things out there on the internet and admit, “yes I am having a tough time and I’m not exactly where I want to be,” but you guys have proved to me that so many of my fears and so much of my anxiety is just in my head. I love that complete strangers can completely make my day and also bring me to happy tears by their words. Seriously, some of my readers are the most beautiful writers. You guys are tugging at my heart strings! I love you al! It’s really cool to hear that some of you don’t even read my blog for the weight loss aspect but you actually read it because of my DIY projects and other posts! I mean, I had no idea! Like I said, I get so into my own head of what I assume people read and follow my blog for, and I’m so happy that you are all here with me to continue my journey of making rabbit food, attempting to workout, making pretty DIY things, and being a normal human being who sometimes hates working out!

I got totally sidetracked last night with the Bachelor finale (ugh I don’t want to give away spoilers but I was bummed with the outcome!), so tonight I will finally be replying to all if your blog comments from yesterday’s post!

Single-Serving-Chocolate-Chip-Muffin-1
Today’s recipe is a super cute “Lightened-Up” Chocolate Chip Muffin for One! This is a traditional bakery sized muffin (no mini muffin here!), filled with flavor but light on the ingredients! No crazy additives, no refined sugar (except for those itty bitty chocolate chips), no butter, and no refines white flour! May I say… NAILED IT!

If you aren’t a fan of chocolate chips, I think this would be so om nom nom with 1 ½ Tablespoons of blueberries instead! I would’ve made that in a heart beat but I’m deathly allergic to blueberries which would mean that Matt or my sister would get to be the taste tester for this recipe… and honestly I just wasn’t willing to forfeit my job as Chief Tasting Officer for this particular recipe, so chocolate chips it was!

This recipe can be made completely vegan by using Enjoy Life Vegan Chocolate Chips or blueberries!

The texture of this solo muffin is dense like most vegan baked goods, which makes it the perfect pairing for a glass of milk, coffee or tea!

Single Serving Chocolate Chip Muffin
Makes 1 muffin

3 Tbsp whole wheat flour
1/4 tsp baking powder
dash of salt
1 tsp (dry) stevia (I used 1 packet of Truvia)
1 Tbsp mini chocolate chips (or vegan chocolate chips)
1 Tbsp coconut oil, melted
1 Tbsp almond milk
1/2 tsp vanilla extract

1. Preheat oven to 350 degrees. Line muffin tray with 1 liner. Set aside.
2. Mix dry ingredients – flour, baking powder, salt, dry stevia, and chocolate chips together in a small bowl. Mix everything together until just combined. DO NOT overmix.
3. In a separate bowl, mix together wet ingredients – melted coconut oil, almond milk, and vanilla.
4. Mix dry and wet ingredients together.
5. Pour batter into prepared muffin liner.
6. Bake for 17 minutes or until a toothpick inserted in the center comes out clean. Enjoy!

      Hi CA! Almond milk only has about 1 gram of protein per serving unless you buy a brand that is specifically made with higher protein like Silk Almond Milk Protein+Fiber!

    I am so excited to try this recipe – I have all these ingredients in my pantry right now so itll be perfect to whip up for a treat! I tried commenting on your post yesterday, but it didnt go through for some reason. I just wanted to thank you for always being so candid with your blog. Its truly inspiring and reassuring to have someone who shares similar passions and interests talk about their own life and their struggles. Obviously I wish that no one struggled, but it does really make us who we are, and that is so special. I struggle a lot too, so to have someone that I look up to make me feel like Im no alone means so much. No matter what, your readers (myself included) love your blog for your creative and inspiring voice. Its such an amazing platform to spread positivitey and you do such an amazing job of that.     Ah just saw your last post (and this one!!!). I’ve been following your blog for like years now & I love that you share your recovery, your love of plant food, your allergies (omg I have them too haha) and your FABULOUS hair. While what drew me to your blog was your weight loss – I was actually in an eating disorder myself at the time – what keeps me around during my own recovery is your dedication to recovery and eating healthily through it. This recipe looks like something easy and delicious to make (subbing rice milk for the almond milk, though, thanks allergies ;D) and I love the meal tip because it’s a great reminder that 1 small muffin does not make a meal. Keep up the awesome work, keep up the realness. You rock!

    I love the Enjoy Life Vegan Chocolate Chips! I always have to stop myself from just munching them.
    This looks really yummy, it’s a good idea for one of those days where you just want something sweet and baked. Plus, you won’t feel guilty after eating it (unlike those cookies or brownies a coworker brought in the other day).

    Looks Delish! Any gluten free subs?? I think almond and/or oat flour would work great in these! Ooo and maybe a little bit of quinoa flour

      Hi Emily! I think oat flour would work great! I haven’t tried using any other flours, but oat or quinoa would probably work best! Let me know if you try it out! If you have a Trader Joe’s near you, they carry a traditional flour that is gluten-free!

    i stumbled upon your blog about 6 months ago when i was really struggling to lose weight. I could tell instantly that you were just such a real, down to earth person and i could easily relate to you. I figured, this is a real girl with real problems that drags her butt to a spin class every day….i can do this. ever since then I’ve gotten up every single morning at 4:30 AM to go to a spin class before work every day. Ive lost 22 pounds in the past 4 months. this is something I’ve struggled with for years, and just recently this week I’ve not only stopped losing weight but i gained 5 pounds…IN ONE WEEK!! I don’t know where it came from but it brought me to tears. I got engaged about a month ago so now I’m more eager than ever to lose my last 10 pounds. I turned to your blog to get some more inspiration and with your last post i felt like a huge weight was lifted off my shoulders because my role model still struggles with her weight just like me. even though we have never met, i feel like we support each other in our weight loss journeys. Ive never met any women that i cared to become friends with or anyone that i even remotely envied ( except naturally skinny people!) but i truly envy you. wether you are 130 pounds or 200 pounds you are a beautiful person and you make those around you more beautiful. I hope you never lose faith in yourself, because you helped me when i had lost faith in myself.

      Sierra, I have to start by saying how incredibly proud I am by you! I more than understand how hard it can be to lose weight, but don’t let the 5 pounds get to you. You should be SO proud of all of your accomplishments and far how you have come on your journey! We all struggle with weight – I can EASILY fluctuate 5+ pounds in a week! Don’t ever beat yourself up about something like that, because I have spent so many days being sad about my body and my weight, and when I look bad it makes me so upset. Like one of my readers said, “you are so much more than the shape of your body.” You are an amazing person for coming here and being so supportive and kind to me (even though we don’t personally know each other) and your fiancé, friends, and family are so lucky to know you! I’m so happy that you found my blog and that my story and continuing journey has inspired you! Congratulations on your engagement, I cannot wait to hear about your success!     Single serving, such a good idea! Hopefully you can see my comment since this was awhile ago! I made sugar free chocolate cake today for Easter I added some carrots and everyone loved it so much and after I told them it was sugar free and healthy they were shocked, it’s nice to get that reaction lol!

    Not to talk to much, but I have been feeling really down lately, I recently found out I had diabetes because I was overweight, only in my stomach though it’s truly annoying, I’ve been so sad about it, that was in February I have been trying to keep at it, and exercise and eating, I always kind of ate right just didn’t really like exercising, anyway I’ve only lost 12 pounds and I don’t see it missing anywhere lol…so it just gets hard…I don’t tell anyone how I feel, because they just say well you look great, and they don’t really understand how it feels to carry a couple spare tires around. So anyway thanks for sharing it’s truly an inspiration, but as I’m sure you heard a million times you look amazing, but I don’t want to be that cliche..lol but it’s true and I’m GLAD you are who you are! Thank you!

    I just made these (with a few alterations) and they were amazing. I used all purpose flour, applesauce instead of oil, and water instead of milk. It was sooooooo good. The photo you posted of the inside looks like it’s made of peanut butter or something and it looked amazing, mine didn’t look like that but it was perfect. I think this is a good recipe that would taste perfect as is, but also does well with some tweeks. I will be making this over and over and over again. I bet it would be good with blueberries and lemon or cinnamon and sugar. So many possibilities!
