Birthday Week & Pre Surgery

Hi everybunny!

You may have noticed my lack of a new blog post on Monday. I actually got anxiety over it throughout the day. At every appointment, I couldn’t help but think that all I wanted to do was post a new recipe for you guys! True Life: I’m addicted to blogging. No worries, I am back in action! Over the weekend I have become a packing and shipping professional, and shipped a bajillion (omg do you remember saying that word when you were little? who am I kidding, I still use it) Eat More Rabbit Food shirts. I cannot believe how many shirts were purchased within the first couple of days, my little bunnies are so amazing! I am loving all of your Instagram and Twitter photos of you guys wearing your shirts, SO CUTE! I have had a problem viewing and commenting on some of your Instagram photos because some accounts are private, but I do get to see a little thumbnail and that makes me so happy!

Drumroll pleaseeeee: Wednesday, August 15th is my 23rd Birthday! This birthday doesn’t seem too magical. I’m usually so into birthdays. I’m like the birthday queen ova hurrrr, but not so much this year. Blink 182 totally called it in their song “What’s My Age Again“… Nobody likes you when your 23. You’ll hear it right at the 27 second mark of their video. So nostalgic, I love Blink 182! I’ll be blasting this song at midnight on my birthday, feel free to sing along with me haha

Louder drumroll pleaseeee: Thursday I will be having a minor surgery (no anesthesia or anything like that) on my foot to remove a possibly but hopefully not cancerous mole. Happy Birthday Catherine, enjoy your surgery! BOOOO! Skin Cancer runs in my family and I have had a cancerous mole before, so cross your fingers that this one is not! Skin cancer does not discriminate, you guys. It doesn’t matter how tan or dark you are. Since I will have stitches and crutches I probably won’t be able to do too much standing or cooking, so I am thinking of some other fun things to write about towards the end of the week. I’m thinking about being super obnoxious and quizzing my Dermatologist about skin and skin cancer during my surgery. That would be some fun times, right? Orrr maybe RFFMBT Q&A Part 2? Then I can get nice ‘n’ comfy on the couch, prop my foot up, and type away!

I don’t know if it’s just me, but recently I have not been motivated to run. Great timing since I am having surgery on my foot, right? I’m in such a running rut that I cannot even lace my shoes up. Maybe it’s the heat? Maybe not actually, because I cannot even get myself to run indoors on a treadmill. There are times where I get obsessed with an exercise and do it almost every day for months straight and then get super sick of it, but running and The Bar Method have been my two favorites for quite some time now. The combination of Bar Method classes and running seem to be a perfect match for me and my schedule but lately I’m so over running. I don’t even know how I am saying this because I usually look forward to going on a run since it is usually a way for me to get things off of my mind and relax. Recently it just seems like more of a chore than something I look forward to. That’s definitely not how working out should be. If you feel this way, Join me as I try to get out of my exercise rut! Don’t forget, there are so many options, there is something out there for everyone to enjoy.

When I have been in previous workout ruts, I usually have a go to list to get myself motivated again, so here I am again with my list!
1. Make a new running playlist
2. Pick a new route to explore
3. Put together some cute/stylish running outfits
4. Get a new pair of running shoes

Sometimes my workout routines just get well… too routine, which leads to boredom. I always try to change up my playlist and route to keep from getting bored, and it is definitely time to shake things up. When I am really stuck in a workout rut, I will sometimes treat myself to some new workout swag to get myself pumped up again. This usually does the trick for me, because I’m a total girly girl and I love a new outfit! This time I think I need a little gifty for myself and a goal to work towards to keep me motivated. I really want to try a pair of Vibram FiveFingers! I took to my Facebook and Twitter to ask if anyone had a pair, and if so what they thought about them. I got some great responses that got me totally excited to try them out! Did you hear that, I got excited to run again, woo! Baby steps here! I’ve heard that it takes some time to get used to them since they are so different than normal running shoes (they have individual toes), and you have to gradually work up towards running 100% in them. This seems like a fun and interesting challenge for me. Viola, have I solved my running rut with a new running shoe challenge? I hope so! It’s time to set a new FitFluential goal! #FitFluential

On a higher note: One of my best friends, Behnaz brought me back a little treat from her trip to Israel this summer! She brought me a Milk Chocolate Bar with Popping Candy. It’s literally a chocolate bar with pop rocks in it! This is probably the most genius chocolate bar ever invented. Willy Wonka, you’re my man, but you’re seriously lagging in this department. Every time you take a bite, you get the flavor of creamy milky chocolate, and the popping sensation of pop rocks. It really makes you slow down and be aware of how much chocolate you are consuming because those things are pop pop popping the entire time! Touché to this chocolate company for making me stop and think before inhaling the entire bar haha and thank you Behnaz for the awesome treat!


On a completely different note: I use way too many exclamation marks!!!!! I can’t help it, I’m always so excited when I talk about these things! If you know me, you totally understand! EXCLAMATION MARK!

Holy guacamole, yesterday was absolutely crazy! As you may know, I launched my official online store with my signature “EAT MORE RABBIT FOOD” shirts! In under 30 minutes I was sold out of all size large and extra larges! WOW, seriously made me blush! I received tons of emails asking for shirts, but I never could’ve imagined them selling this fast! Your support is truly amazing! It’s just me, myself, and I running my blog, Facebook, Twitter, PinterestInstagram, Email, and now my store, so I really appreciate your patience and support! In a few short hours I had a triple digit number of orders that I am now organizing and shipping to their recipients. I am sooo excited for you guys to get your shirts! Because of the super quick sales, the online shop is down for some maintenance and updating, but it should be back shortly, since I still have some shirts available for purchase.

This whole online store thing is brand new to me and I am quickly learning so much. For example, I need to find shirts that are available in more sizes! I have been getting quite a few comments and messages about shirts not being available in larger sizes, and this is a great suggestion for my next batch of shirts! Since the first day that I launched my blog, I have been receiving inquiries about the “EAT MORE RABBIT FOOD” shirt that I am wearing in my main photos. By popular demand, I did everything that I could to get the exact same heather green American Apparel racerback to sell on my site. Unfortunately American Apparel only offers a small variety of shirts in this color, which left me with my favorite racerback in sizes XS-L and a women’s T-shirt from S-XL, so I made sure to order every size available!

I in no way shape or form intended to exclude anyone from being able to buy a certain sized shirt. I have been the girl who didn’t fit clothes at a “regular” store before and I know how it feels to leave empty handed and never wanted that to happen on my own website. I’m still getting the hang of things and learning what everyone wants to see on RFFMBT! This was only the first round of RFFMBT shirts and I’m positive that there will be many more to come.That being said, I would love YOUR input on what YOU would like to see in the next round of shirts/merch! I have had all different types of suggestions from gym bags, to socks, and some different clothing brand options! One reader suggested that I look into Just My Size by Hanes for a variety of sizes and comfy basics to print on!

Since I announced my DOLE Salad Circle Party Giveaway winner today, I thought that it was appropriate to give you guys a salad dressing recipe! Today’s super simple recipe comes from none other than Chef AJ. She has created a sweet and tangy, fat-free, plant based salad dressing that takes only 5 ingredients to make! What a woman! This is a fabulous addition to salads that already contain your recommended serving of plant based fat. Say your salad already includes nuts or avocado… just drizzle one tablespoon of naturally fat-free Take 5 Salad Dressing for great flavor and balance. This can also be used as a dip for veggies i.e. sliced bell pepper, carrots, and broccoli!

Take 5 Salad Dressing
Makes nine 1 Tbsp servings

2 Tbsp water
2 Tbsp lemon juice
2 Tbsp low-sodium miso paste (I use Kyoto White Low-Sodium Miso Paste)
2 Tbsp date syrup or maple syrup
1 Tbsp dijon (preferably low-sodium)

Combine all ingredients in a small jar or container with lid and shake shake shake, shake shake shake, shake your dressing. shake your dressinggggg!
Note: If you have never purchased miso paste before, it can usually be found in the refrigerated soy/dairy/yogurt section of most grocery stores. I buy mine at whole foods.

EAT MORE RABBIT FOOD SHIRTS!

I am sooo excited to announce that I have an official RFFMBT online store!
I have received thousands of emails about my “EAT MORE RABIT FOOD” shirts and after months of your guys asking, they are finally here!

The process took way longer than expected, but I wanted to find the perfect shirts that you guys would love. The process entailed a wholesale and sales license, designing, ordering and printing the shirts, and last but not least coding my online store, which was a little tricky! I am so excited to hear what you guys think!

“EAT MORE RABBIT FOOD” tops are available in both a Racerback and T-Shirt.
All shirts are constructed out of a super soft tri-blend fabric and made in the USA by American Apparel!

Spicy Korean Tacos

RFFMBT was down for about an hour today due to extremely high traffic! I was so worried that I would lose some of my content or even contest entries for the DOLE Salad Circle Party Giveaway! All is good and no content was lost! I took care of the server issue and am back up and running and hit 2.3 million views OMG! No wonder my server was freaking out! Thank you so much to everyone who reads, shares, likes, follows, tweets, pins, or comments on my blog. You are AMAZING!

I really wanted to recreate a dish that I once had from a food truck called Calbi. The Calbi truck is always driving around different areas of LA serving up some amazing Korean BBQ and Asian fusion treats. They serve up tons of delicious Korean style dishes with an awesome twist: filled into tortillas making Korean burritos and tacos! Ummm can you say brilliant? Burritos and tacos are awesome, and next up, I really want to try the Jogasaki truck which makes sushi burritos! I’m drooling now. I want sushi for din!


Here is my take on the Calbi truck’s Tofu Tacos! Made with my favorite Asian hot sauce: Sriracha. Sriracha, originally from Thailand is very popular among Asian cuisines such as Chinese, Vietnamese, and Korean. If you’re like me Sriracha is not limited to Asian foods, and goes on practically anything and everything!  Made from chili, sugar, salt, garlic, and distilled vinegar, Huy Fong Foods’ Sriracha (also knows as “Rooster Sauce” in the US – due to it’s iconic label) sauce adds a nice fiery kick of spice and flavor to your dish.

Any other Sriracha fans out there?!



Spicy Korean Tacos
Serves 1

2 soft taco sized whole corn tortillas
1 cup shredded cabbage
1 cup shredded carrot
1/2 cup low-sodium vegetable broth
1/5 package extra firm tofu
1 Tbsp Sriracha
1 Tbsp low sodium soy sauce or Tamari
1/2 Tbsp sesame oil
1/2 Tbsp sesame seeds

Remove tofu from packaging. Remove as much water as possible by pressing/squeezing firmly with paper towel to absorb excess liquid. Cut the tofu into 1 inch cubes. Pour the sesame oil, soy sauce, and Sriracha into a pan/skillet and mix together. Set stove to medium/high heat. Add the cubed tofu into the pan and cook on each side for about 3 minutes until edges become firm and center is warmed through. Once the tofu has finished cooking, remove it from the pan and set aside. In the same pan, add the low sodium vegetable broth, cabbage, and carrots. The vegetables will pick up the flavoring from the broth and extra sauces left in the pan. Cook the vegetables over the stove for about 2-3 minutes or until they have reached your desired firmness. Strain any excess vegetable broth from the pan. Heat the corn tortillas with a damp paper towel (to avoid cracking) for 20 seconds. Place the tofu and vegetable mixture onto the tortillas and sprinkle with sesame seeds.
Note: If sesame oil is unavailable, olive oil will still give great results.

Free Extras: vegetable broth, Sriracha, and tamari

Oatmeal Raisin Cookie Bake

Imagine having a fluffy oatmeal raisin cookie for breakfast. Sounds delicious right? Well I have the recipe of all recipes for you! Satisfy your cookie cravings with a healthy Oatmeal Raisin Cookie Bake that makes for a super quick and easy breakfast on the go, or even dessert for that matter! No actual baking required!

Oatmeal Raisin Cookie Bake
Serves 1 

1/4 cup liquid egg whites
1/4 cup rolled oats
1/2 banana mashed
2 Tbsp raisins
1 Tbsp chia seeds
1/2 tsp vanilla
1/2 tsp cinnamon
1/4 tsp baking powder

Mash the banana and combine with all ingredients until well mixed. Lightly spray a small microwave safe bowl with nonstick cooking spray. Pour the oatmeal raisin cookie mixture into the bowl and microwave (uncovered) for 1 minute and 30 seconds. Remove the bowl from the microwave (caution, bowl will be hot). Flip the bowl upside down on a plate to release the oatmeal raisin cookie bake, enjoy hot.
