Balela Salad

Ladies and gentlemen, I bring you: a healthy Middle Eastern dish!

I’ve been addicted to Trader Joe’s Balela Salad (Middle Eastern chickpea & black bean salad) for a while now. Balela is savory and tangy with a gratifying bite. Plus, thanks to the amazing plant-based protein and fiber, it’s quite filling. I’m pretty sure you guys are going to be hooked like I am!

It’s amazing on it’s own, but if you are following the Rabbit Food Pyramid, you can add some lettuce and tuck it into a whole wheat pita pocket, or serve over a bed of lettuce and quinoa!

Balela Salad
Serves 1
1/2 cup chickpeas, cooked (I use Eden Organic – No Salt Added Chickpeas)
1/4 cup black beans, cooked (I use 365 Organic No Salt Added Black Beans)
1/4 cup chopped fresh tomato
3 Tbsp lemon juice
1 Tbsp olive oil
1/2 Tbsp apple cider vinegar
2 cloves garlic
2 Tbsp cup chopped red onion
2 Tbsp chopped fresh parsley
1 Tbsp chopped fresh mint
Pinch of cayenne
Salt & Pepper to taste

Rinse and strain cooked chickpeas and black beans. Chop, tomato, garlic, red onion, parsley, and mint. Combine together with the chickpeas, beans, lemon juice, olive oil, and apple cider vinegar. Add cayenne, salt and pepper to taste. Store in a covered container in the refrigerator.
Note: This dish is best after the chickpeas have marinated for several hours of overnight.

This week I have been giving my 100% and going to spin everyday. I am so in love with the endorphin rush that it gives me, and the calorie burn isn’t bad either! I love motivating you guys with personal posts about my fitness progress and body/weight stuff, but I just can’t get myself to post it along with these gorgeous recipe photos! I feel like those kinds of posts need to be separate, so I’ve set some posts aside next week for updates on how everything is going in the workout world! Right now it’s time for some rabbit food!

Serves 1

1 spring roll (rice paper) wrap
1 inch strip of firm tofu
6 spears of asparagus
1/2 cucumber, sliced
1/4 medium avocado
1/4 cup arugula
4-5 mint leafs

Sesame Miso Sauce
*Also pairs well with low sodium soy sauce, or tamari if you don’t feel like making sauce!

2 Tbsp tahini
1 Tbsp white miso paste
1 Tbsp agave nectar
1/2 Tbsp tamari or soy sauce
1 tsp grated ginger root

Refrigerate all ingredients beforehand. Wash and cut ingredients for inside the spring roll. Fill a bowl or saucepan with warm water. Begin dipping the spring roll wrap in the water and rotate. Continue gently dipping until the rice paper becomes transparent and limp. Lay the pliable wrap on a piece of cheese cloth or clean kitchen towel. Place the ingredients on the top center of the wrap. Fold the sides in over the filling. Then tightly push the ingredients together folding the top corner over, then roll until completely wrapped. Chop in half or into 6 pieces.
Note: I have found that wrapping the spring roll on a towel is the best way to prevent it from sticking and tearing.
Another Note: The spring rolls are much easier to handle if cut in half vs. small pieces!

Whole Grain: complete this meal with 1/2 cup of cooked brown rice!

Beet Burgers

In celebration of 4th of July I had to keep the tradition going with a veggie burger recipe!

These burgs are seriously filling. Loaded with brown rice, black beans, beets, oat bran, and jalapeños to add a little heat! They’re also gluten-free, vegan, low-fat, and will give your average beef burger a run for its money.

serves 4

1 can low-sodium black beans
1 cup cooked brown rice
1/4 cup finely chopped beets (I used canned)
2 Tbsp diced jalapeños
2 Tbsp oat bran
1 tsp chili powder
1/2 tsp paprika
1/4 tsp salt
2 Tbsp Medjool Date BBQ Sauce or BBQ sauce of your choice

Toppings:
4 slices of Monterey Jack cheese or vegan cheese
1 Tomato, sliced
1 Red onion, sliced
Kale or lettuce

Strain beans but do not rinse. Place beans in a food processor and pulse until mashed but not puréed (you want some texture/chunks in there. Transfer beans to a mixing bowl. Strain beets and place beets in the food processor and pulse until finely chopped. Measure 1/4 cup and add to the mixing bowl. Add the diced jalapeños, brown rice, oat bran, chili powder, paprika, and salt and fold until well combined. Divide the mixture into four and form patties. Line a baking sheet with foil and spray with nonstick cooking spray. Place the patties on the foil lined baking sheet and place in the fridge for 1 hour. This is an important step in getting the right consistency. After the patties have been chilled, Preheat oven to 375. Transfer the baking sheet to the oven and cook for 30 minutes. Remove the patties from the oven at the half-way mark (15 minutes) and baste with barbecue sauce (do not flip the patties). Place the baking sheet back in the oven and continue baking for the remaining cooking time. If you wish to add cheese, set the oven to broil during the last minute of cooking, place cheese on each patty and broil for about 30 seconds. Serve on a whole grain bun, in a fresh lettuce wrap, or on “grilled portobello buns” and enjoy your holiday!
Note: Make sure to chill the patties in the refrigerator before baking.
Spicy Tip: Beet Burgers aren’t super spicy, but if you want them a little more mild, remove seeds from the  jalapeños or try using green chillies.
Shortcut: I used precooked brown rice and heated it in the microwave before adding to the recipe to save me a few minutes. I also used canned beets and black beans!
Warning: Do not grill on a barbecue, they can fall apart!

California Summer Wrap

Motivation Monday:Be stronger than your excuses.

Since it’s getting hot out, I’ve been craving lettuce wraps of all kinds.
Try this filling wrap for a picnic in the sun or a beach day!
My favorite type of greens to use for wraps are collard greens, but I was actually out when I made this wrap. Of course any leafy green will work! Greens = delish!

Serves 1

3oz tempeh
1/4 cup cooked quinoa – chilled
1/4 avocado
1 lettuce leaf (romaine, iceberg, or collard)
1/4 cup chopped onions
1/4 cup chopped cherry tomatoes
1 Tbsp lemon juice
pinch of salt
pinch of pepper

Cook quinoa to package instructions and chill in the refrigerator beforehand. Cut tempeh into long thin strips and cook to package instructions on stovetop. Cut cherry tomatoes in half and chop onions. Combine tomatoes and onions with quinoa. Add lemon juice, salt, and pepper to the mixture and gently stir together. Pour the mixture into one washed lettuce leaf  and top with tempeh and avocado slices. Roll up into a wrap, cut in half,  and enjoy.

Tuscan Kale Salad

You may have heard me talk about my FAVORITE kale salad before. If not, let me introduce you to the Tuscan Kale Salad from True Food Kitchen. True Food’s menu was created by  Dr. Andrew Weil’s anti-inflammatory diet, but “you don’t have to be a die-hard Yogi to dine at True Food Kitchen. You need only a desire to give your body nutrients, and your palate something memorable. The basis for Dr. Andrew Weil’s anti-inflammatory diet isn’t meant to deprive a healthy body of great flavors, it’s meant to take popular trends in cuisine and pair them with healthy living.”

The Tuscan Kale Salad is my all time favorite. Ever! Since There isn’t a True Food Kitchen everywhere, I am bringing the restaurant to your kitchen with a single serving Tuscan Kale recipe! This particular salad doesn’t come with smoked tempeh on it, but it’s my favorite way to order. Since I don’t have a smoker, I found an awesome short cut to get the same smokey flavor!

So what is tempeh?
Tempeh (tem-pay) is similar to tofu because it is made from soybeans, but it’s taste and texture are completely different. Tempeh is much more textured and firm since the soybeans are cooked and slightly fermented, and has a mild nutty flavor. It’s low in fat and high in protein and calcium, making it a great addition to salads!

Where do I buy Tempeh?
Most grocery stores such as Ralph’s, Kroger, Pavillions, Trader Joe’s, and health food stores like Whole Foods carry tempeh. It’s usually located by tofu and other vegetarian foods in the refrigerator section. I used Tofurkey Brand Smokey Maple Bacon Flavored Tempeh from Whole Foods for this recipe.

Serves 1

4 Strips of Smokey Maple Bacon Flavored Tempeh
2 cups chopped Tuscan kale (aka dinosaur kale)
1 Tbsp shaved parmesan (or shaved cheese blend)
3 Tbsp fresh lemon juice
1 Tbsp olive oil
1/2 garlic clove – mashed
pinch of salt
pinch of pepper
pinch of hot red pepper flakes

Wash and dry kale. Cut kale into half inch strips and place in a bowl. Mash garlic with a fork and combine with olive oil, lemon juice, salt, pepper, and hot red pepper flakes. Massage dressing into the kale and set aside. Place 4 strips of tempeh in a pan sprayed with nonstick cooking spray over medium heat. Cooke each side of the tempeh for 2 minutes until golden brown. Remove tempeh from the stove and cut into one inch pieces. Toss the tempeh and parmesan in the salad and enjoy.
