Motivation Monday: “What you do today can improve all your tomorrows.”

My website had some technical difficulties this morning, so I apologize for the inconvenience. I’m so happy it’s back up and running!

I’m obsessed with desserts and after making some toasted coconut this weekend, I though to myself; I NEED to make healthy coconut  macaroons! Most macaroons contain tons of added sugar and even full fat condensed milk, so I took to the kitchen to make a skinny bunny version with only 2 ingredients! Crispy and toasted on the outside with a lightly sweet chewy center!

This recipe is gluten-free, paleo friendly, clean, and made with healthy plant based fats!
If you’re following my Rabbit Food Pyramid: 4 Macaroons (2 Tbsp of shredded coconut) count as 1 serving of healthy plant based fats! Excellent topping for your Banana Nicecream!

Makes 14 macaroons
(about 3.5 servings)

1 cup sweetened shredded coconut
1 egg white

Preheat oven to 350 degrees. Whisk one egg white and then stir into the shredded coconut until well combined. Spray a cooking sheet with nonstick cooking spray (I used coconut oil spray, but any will do). Using a 1/2 Tablespoon measuring spoon, scoop the mixture, press into the spoon (to keep the mixture together), and then place onto the cooking sheet. Once all of the mixture has been scooped into 1/2 Tbsp balls, place cooking sheet in the oven and bake for 10-15 minutes until they become a light golden brown. If only the bottom halves of macaroons brown, turn the oven to broil and cook for 1 minute until the tops turn golden brown. Remove from oven and allow to cool.
Note: Watch the macaroons while baking because they tend to burn quickly.

    LOVE these! My mom and I make them all the time at home 🙂 We also love to flatten them after they’re cooked and put fresh raspberries on them, kind of like a mini tart.

    Just wondering, I used unsweetened coconut to make these and they’re lacking. Did you use sweetened? I cook for 2 18 month olds and it has to have the sweet factor for them to eat it 🙂

      I love the idea of using coconut sugar
      I am thinking I might even just shred a real coconut to eliminate the additives they put in the shredded coconut

    Just made these with unsweetened coconut and thought they were great. My kiddo loved them too. To make them extra special we added some chocolate sauce, our own Mounds-like candy treat.

    Just made these and they’re amazing! I used unsweetened coconut, added agave and used two egg whites instead of one since the coconut was super fine but they’re delicious 😀

    How awesome is it that Trader Joe’s has the coconut oil spray?! I made some air popped popcorn yesterday, and sprayed it with a little just to make the salt stick. DELISH! Can’t wait to try the mararoons!

    WOW!! I have people coming for dinner this afternoon. I realized after I got home from the grocery store that I didn’t have anything sweet to finish off the meal. : )
    I went through the pantry and remembered this post. I made these and while they cooked I caramelized bananas with a bit of earth balance and brown sugar. I topped the bananas with these, and whipped coconut cream in a tiny little 3.5 oz dessert cup, BEAUTIFUL, crazy easy and most important DEEEE LISH!!

    I just wanted to write you and tell you that for my nutrition class in school we have to make a healthy recipe for our end of the semester project. I’m making these macaroons! Thank you for this amazing recipe! I made them a couple of months ago and they were to die for! Just pure coconut! I do have a question though. How do you store these to keep them crunchy? I obviously couldn’t eat them all on my own, so I covered them with tin fool on a plate. They became really soft. Would you suggest an air tight container to prevent the air from softening them?

      Hi Caroline! Oh my gosh that is so awesome! I can’t remember, but I think I stored them in an air tight tupperware container! If they get soft, you could pop them in the oven again for a minute or two before taking them to class 🙂

    Yummy! So i only used 1/2 c of coconut and still got 13 small macaroons out of it. THEN… i put them on top of warm dark chocolate hershey kisses! I can’t wait to try them

    Made these, I did something similar to another blogger. I made them like thumbprint cookies with sugar free lemon card in them. They turned out famtastic!!! Everyone knows that lemon and coconut go well togother.
