This recipe is my new obsession! I have been really into chickpeas lately, throwing them in my salads and stir-frys for an easy protein portion, but this dish takes chickpeas to a whole new level. I got the idea of Thai chickpeas from one of my favorite blogs For the Love of Kale. The author Heather is always cooking up delicious vegan meals and shares her passion for health and fitness. Thai Chickpeas Over Steamed Kale
Serves 1

2 cups kale + 1 cup water
1/2 cup chickpeas
1/2 cup cooked brown rice
1 Tbsp unsalted peanut butter
1 Tbsp apple cider vinegar
1 Tbsp low sodium soy sauce or tamari

Cook brown rice to package instructions (frozen brown rice is a great shortcut to dry rice). Heat 1 cup of water in a pan over medium high heat. Place kale in the pan and cover for 5 minutes. Stir kale and cover for 5 more minutes. Strain water once kale has been steamed. In a small bowl combine peanut butter, apple cider vinegar, and soy sauce, and whisk until evenly mixed (if the peanut butter is stubborn, microwave the entire mixture for 20 seconds to help soften). If using canned chickpeas, transfer chickpeas and liquid to a microwave safe bowl and microwave for about 2 minutes. Rinse and strain chickpeas and coat with the peanut sauce. Place steamed kale onto a plate, followed by brown rice and thai chickpeas.

    Hi! I am a new fan of your blog. A friend pointed it out to me about a week ago while I was lamenting to her about my struggles with weight loss post-baby and post-thyroidectomy.     I have been afraid to try kale because I remember it being bitter and not delicious when my mom served it back small-kid time. This recipe looks great, though, so I’m going to purchase some kale this weekend and give it a try. Thanks for another inspiring post!

    i cannot believe how delicious this was. It’s redonkulous. I made with almond butter since I can’t have peanut butter. I’d also never tried steamed kale before. My world has been rocked. I want it for breakfast lunch and dinner.

    As soon as I saw this I knewI had to have it! I had left over jasmine rice, but sadly no kale. With a bit of impervision I served the yummy chick peas over jasmine rice on a bed of chopped green leaf lettuce and it was SO. VERY. YUMMY. My 6 year son was also a big fan…hubby is out of town, so none for him…ha!

    I made a variation of this last night, using red quinoa as a substitute for the brown rice, and almond butter as a substitute for the peanut butter. Delicious and very filling!

    I just made this for dinner tonight, and ZOMG so amazing! I took the easy way out and just ate the kale raw and nuked the chick peas and sauce together. I substituted quinoa for the rice to fit with my fitness plan. It’s so great! I’m so glad I made a big batch of it!

    Ok. I was totally skeptical of this recipe. Peanut butter/tamari/ACV? That just sounded gross. Lol no offense πŸ˜‰ but dang was I WRONG!!! This was ridiculously GOOD! And healthy. Not to mention filling. I was so stuffed I couldn’t even finish! Thank you for this πŸ˜€ you rock!!!
