I am sooooo excited because I’ve just posted my very first YouTube video! I’ve wanted to start a YouTube channel for a long time and finally went for it. Now I’m a YouTube addict! My friend Kevin Gowdy (founder of Momentary Art) filmed while I cooked up a fancy fall soup for you guys!

Don’t get me wrong, I LOVE candy (especially gummy candy), but this year I though it would be fun to do a Healthy Halloween recipe on the savory side! Since Halloween tends to have an unhealthy reputation, I’m changing it up with a fun Halloween recipe, cooked inside of a pumpkin, with my favorite Dole Power Up Greens Baby Kale! I hope you love my Healthy Halloween recipe!

Roasted Pumpkin Soup

One medium cheese or cinderella pumpkin
1 cup Dole Power Up Greens Baby Kale
2 sprigs fresh rosemary
4 fresh sage leaves
2 green onions, chopped
1 clove garlic
1 box vegetable stock
1/4 cup grated parmesan cheese
salt to taste

Preheat the oven to 400°F. Line a rimmed baking sheet with parchment paper and set aside. Using a serrated knife, cut a circle around the stem of the pumpkin (just like caving a pumpkin). Remove the top of the pumpkin and scoop out the seeds and stringy pieces. Place the green onions, rosemary, sage, garlic, and baby kale inside of the pumpkin. Pour vegetable broth into the pumpkin and add salt to taste. Add the grated parmesan cheese and cover with the lid of the pumpkin. Transfer the filled pumpkin to the lined baking sheet and roast in the oven for 1.5 to 2 hours or until the exterior of the pumpkin is golden brown and shiny. Remove the pumpkin from the oven and carefully take off the lid. Scoop a few spoonfuls of kale, onions, and broth along with some of the pumpkin flesh from the inside. Place in a bowl and top with a ladleful of broth. Top your soup with freshly grated parmesan cheese!

    Love pumpkin season! My best halloween costume was from middle school – I remember I wanted to be princess Jasmine but we couldn’t find a costume so my mom made it! It was the first and last time she ever made a halloween costume but I cherished it and wore it for MONTHS! (Yeah, I was a weird kid 😉

    Where I went to school we have black squirrels all over campus. We were actually known for it. So when I was a senior I dressed up as a cute black squirrel complete with a huge handmade tail and matching ears. It was hilarious but super cute at the same time because everyone knew what I was right away!

    Weirdest one was probably a streaker…I wore a trench coat over a nude bra and “David” shorts. Definitely the most entertaining Halloween yet!

    When I was in 5th grade, I was a present. My mother covered a large cardboard box with wrapping paper that had balloons on it and glued a giant bow to a headband. It was so cool, except I couldn’t walk up stairs since the box went past my knees, so I took a picture of myself in the costume and took that to school instead of wearing the costume.

      I’m laughing so hard at your story, Amy! I was a present for Halloween when I was about 10 years old, and I fell while trick-or-treatig and couldn’t get up! My mom still loves telling that story hahahaha!

    teenage mutant ninja turtles!me and three other girls are doing this! i am the purple one. we made made shirts and tutus. wearing leggings with long songs and made their shell out of roasting pan and spray painting it!

    I also loved my present costume as a kid! I think that was my go-to costume for grades 3-6. haha!

    More recently, I loved being Jasmine from Aladdin. People say I look just like her, so I loved dressing up like her (found all my clothing pieces and a wig at a thrift store!) and I got so many compliments!

    My favorite costume is this years! My father died last December and he always called me bunny as a child, so this year I’m dressing up like a bunny for him. I hope everyone doesn’t think I’m trying to be a playboy though!

    I think the best Halloween costume I had was when I was sailor Jupiter from the Sailor moon series, my best friend was sailor mars. Her mom made our color coordinated sailor capes and short pleated skirts and we wore white tube tops! I even had the pink rose earrings and we affixed our coordinating gems to our forehead and painted gold bands to look like their head band! So cute!!! loved that costume!
