Ok, so today was really… blah to say the least.
I have been dealing with some really crazy health issues recently; long story short my thyroid is out of whack and I have been in and out of doctor’s offices and getting pricked by way too many needles trying to figure out what is going on! So far they think I have hyperthyroid, but I am on a waiting list to see an endocrinologist. I am so exhausted from telling different doctor’s what is going on that I cannot even begin to tell you how I feel right now, so I will get to that in a different post when I have more energy! For now, I will just say that I have been feeling abnormally crappy and moody and have realized that the only thing that can actually make me feel better is by eating healthy. I’ve been trying all different variations of green smoothies to boost my energy and provide a quick dose of nutrients to my body and it has been making such a difference! When I eat clean ‘n’ green I feel sooo much better. I still don’t feel 100% fabu at the moment, but better! It’s amazing how the food we eat can have such a big impact on how we feel!

Since I have noticed how great I feel with the addition of green smoothies in my diet, I will be experimenting with some more super interesting (but tasty) green smoothies! This one is a little more “green” than my Thin Pint Protein Smoothie, but still delicious if you are looking to try something new! The ingredient list may look a little whacky, but quinoa was probably the best little addition. The quinoa gave my smoothie a super thick texture and a boost of complete protein! Win win.

Pistachio Ice Cream Smoothie
Serves 1

1 cup almond milk
1 cup kale -packed
1 frozen banana
1/2 cup cooked quinoa
2 Tbsp unshelled pistachios
1 Tbsp unsweetened shredded coconut
1 + 1/2 tsp pure vanilla extract
1/2 tsp cinnamon
1 packet stevia if desired

Cook and refrigerate quinoa beforehand. Start by combining the kale and milk in a high powered blender and blend until it is completely smooth (to avoid grainy texture). Next add the pistachios and coconut and blend thoroughly. Add in the quinoa and blend completely to ensure a smooth texture. Next add the rest of the ingredients and blend away. Serve chilled.

    Hello! How come you use Almond Milk rather than cows milk?I see you use yogurt so I’m assuming it’s not because you are vegan. Can one subsitute reg milk when your recipie calls for almond milk?

    Hi! I totally understand about the thyroid thing. I was diagnosed with hypothyroidism about 7 years ago and have had 2 surgeries to take my thyroid out. I have felt so horrible for the past 7 years and no one seems to understand unless you are dealing with it! I tried my first bar class today- Pure Barre here in Birmingham, AL. Totally kicked my butt! Thanks for the inspiration!!!!

I cannot believe you had 2 thyroid surgeries. Both my grandma and sister have Graves disease (hyperthyroid) and the process to diagnose it was such a long process and they both ended up having their thyroids removed. I’m so glad you took a barre class! They definitely kick your hiney, but the results are amazing! xo

    I’m a new reader, found your blog on pinterest while trying to gather some inspiration on healthy living. I’m tired of being tired all the time (you’d think I was in my forties instead of my late twenties based on my energy level)! Thank you so much for all the great inspiration and ideas on your blog! I was wondering, is there anyway you could do a post about some healthy but tasty foods to eat when necessity dictates eating out? I’m thinking maybe you can share some of your faves from places like Panera or Corner Bakery…that sort of stuff. Sorry to have made this so long, I couldn’t find your email!

      That is a FABULOUS idea Lidia! I really enjoy going out to eat but it can be really tricky at times when you’re trying to stay on track! Today I went to a cafe and ordered an awesome salad that fit perfectly into the Rabbit Food Pyramid!         I’m so looking forward to that post in the near future! Sometimes I get so frustrated if I order a salad and it ends up being bland. I know there are salads (or healthy options)out there that are actually tasty but I just never know which ones to pick.       Hi Salena! I finally got a Vitamix and it is AMAZING! Before that I used to use a Magic Bullet (still use it for some recipes!). A Vitamix is a big investment but sometimes Costco and Amazon.com have deals on them! They are really amazing and so powerful! You can make any smoothie you desire, nut butters, soups, and even batters in it! Their biggest competitor is Blendtech, which is also a great brand but around the same price! 🙂

    Just wanted to let you know that I tried my first Barre class today and I’m HOOKED! i LOVED IT. I think my hair hurts though… ha! Thanks for the suggestion!
    YOu have been a great inspiration! I’m following the weight watchers plan but using a lot more vegeterian meals for my daily menus. Lost 17 pounds so far! Keep those delicious recipes coming!

    I can relate so much! I was diagnosed with hypothyroid back in February after gaining 20 lbs, feeling moody and depressed and anxious, having brain fog, being tired all the time, and having trouble focusing. My tsh was 19 (yikes!) and my doc started me on 100 mcg of levothyroxine.. My tsh is now 0.44 (yay!). Within a week of starting the levo, my energy and mood levels improved drastically! working on losing the weight now 🙂 it’s just kind of a bummer I have to take a pill every day for the rest of my life.

    Ps if you have thyroid issues and take medication for it, it is recommended that you avoid certain foods like kale and soy, they can block absorption of the medication.

      Hi Caroline! Wow it is amazing how common thyroid problems are! I am so glad that I have some readers to relate to! I totally understand how frustrating the weight department is while dealing with thyroid problems. It makes it a tad bit harder… I’m so happy that your tsh is all leveled out now, thats great! My sister and grandma both have hyperthyroid and had their thyroid ablated with radiation pills and now both take synthroid!

      Omg no kale and soy!?!?! Thisssss could be challenging, oh boy! If I end up needing thyroid medication that does not allow kale or soy, I’m going to have to rename my blog to Rabbit Food For My Thyroid hahaha

      I have hypothyroidism too! Thankfully regulated by Levothroid as well. You can still eat green vegetables, they just have to be cooked in advance. This destroys the goitrogens that contribute to thyroid problems.

      It is kind of a bummer having this. But as long as we are healthy and careful, there’s no reason it should negatively affect us too much. 🙂 Good luck to you!

    I really want to try some of these yummy smoothies but there’s just one thing stopping me..
    I can’t stand bananas! I really want to like them, I’ve tried everything to like them, but nope not happening.
    Is there anything I can substitute to still have that creamy thick texture without using bananas?

      I actually have a few readers who don’t like banana and swapped the banana in another smoothie for frozen pineapple! The banana adds sweetness to the bitter kale and also thickens it up.     I suffer from Geaves Disease (autoimmune hyperthyroidism) and I just wanted to say that you should avoid any kind of seaweed until you find out for sure. I.e. no sushi, nori, etc. all seaweed has very high levels of iodine, and if you were to eat some just before you had tests, your results could be thrown out of wack. Also, if you are hyperthyroid, seaweed could make you very sick, give you heart palpitations etc. Anyway, I don’t normally give unsolicited anonymous medical advice, but I thought this might be good to know. My T4 was really hight, and my doctor thinks I could have the same disease as well since it is so common in my family. Thank you so much for the seaweed/iodine comment!     I’m so sorry to hear about your medical issues! Last year I developed a major blog clot and eventually learned I have a genetic mutation that makes me prone to clotting (I’m very active and in my early 20’s, so a blood clot is really out of the norm!). All this to say- having been recently been in a phase where I was in and out of various doctors offices being tested and poked for weeks on end, it can be super draining and frustrating.     Ugh, I’m so sorry to hear about your health issues!! And thyroid issues are never fun. (Especially because it seems like you have it in your family!) My only two cents is that I know (from my vegan friends) that vegans are susceptible to iodine deficiency and thyroid issues, because iodine monitors the thyroid. This is a problem in the veggie community because its hard to test for, too. You’re not a vegan, but your clean eating is damn close!

    Hi, I had my whole Thyroid removed over 5 years ago, you will fall in love with your Endo because they will get you feeling better. Hyper-T means yours is over active, that’s you, yes? both hyper & hypo have alot of same symptoms except where weight is concerned.

    On the Kale, Spinach or other Calcium foods you have to wait 4 hours from taking your meds… not sure about the soy part, that’s not on my warning label and I eat soy stuff quite regularly…

    I found you from your Chiobani recipes of pinterest (I think) or yahoo news, IDK.. but I love you blog…In January every year our church does a 21 day Daniel Fast (basically Sugar/Yeast-Free Vegan & alot of prayer) so I’m saving up recipes for then & others in between 🙂

    LOVE this smoothie. I totally get what you mean about food helping you feel better. I recently got off a plane ride with a headache and feeling queasy. I scoured the airport for a healthy option and wound up eating a big bowl of steamed veggies. OH MY GOODNESS. I literally felt better, cleaner, more rejuvenated with every bite. Keep taking care of yourself, and I hope the doctors can figure things out soon!

      Hi Trish! I think that you could use 1 cup soy any greens! Kale tends to be bitter and hard to mask in smoothies (which is why I said that this one is “greener”) so I think it would be fun to try some different greens with this recipe 🙂 Let me know how it turns out! xo

I have been doing the mint chocolate protein one. it’s so good. i typically do a greem smoothie that includes an apple and a banana but noticed that it contains a lot of sugar. So I started doing the mint one and it has helped cut down my sugar intake. Thanks for the great recipes!

    I was wondering if you have every been to an iridologist? My cousin and I both have thyroid issues so we went to see one. She was able to tell us EXACTLY what was wrong! It’s crazy how it works but so interesting.

    I definitely understand the thyroid issue. I was diagnosed with a hypo thyroid about seven years ago. it took a long time for me to get my diet right and I felt so amazing once I did, with the addition of synthetic hormones. In the last few years, I have gotten off the healthy kick and seen a serious decline in my energy and health. About a year ago they did some more tests and now I have nodules in my thyroid that need to be monitored every six months by ultrasound. I go the serious run around with doctors for about four months and my PCP put me on a diet very similar to yours. I love reading your blog because I find it so hard to resist giving in to the easiness of prepared food…thank you so much for sharing you lifestyle!

    I was diagnosed with hypothyroidism when I was 24. I take meds to control it and recently l lost 30 lbs — so don’t get discouraged when people tell you it ruins weight loss. However, I always notice that when I eat funky soy products, tofu, tempeh, seitan, etc. that it makes me really sluggish and foggy headed.

    If your doctor suspects HYPERthyroid and not HYPOthyroid, your endocrinologist should NOT have you on a waiting list. Most hyperthyroid cases are because of an autoimmune disorder called Grave’s Disease and when left untreated can cause thyroid storm which is potentially life threatening. Thyroid issues run in my and my husband’s families (our poor daughter!) and my mom, mother-in-law and cousin all have Grave’s. My cousin’s went undiagnosed and she wound up hospitalized with thyroid storm and it took her a very long time to recover. You are a healthy bunny, but autoimmune disorders don’t care. Push your endo

    I know exactly what you are going through! I had the same symptoms of depression and even physical symptoms like cold hands and feet, before I finally took a blood test and found out that I have hypothyroid! It’s been a few years since then, but I had what felt like endless blood tests and waiting and waiting and waiting… Now I’m on the med and eating healthy is that much more important to me. I’ve quit meat, soda, foods with high frustose corn syrup… Which is why your blog is AWESOME! You’re so inspirational and have such great advice, thank you Catherine!!!

    This smoothie looks and sounds amazing! Do you think it would work if I subbed spinach for kale? I recently moved to Songapore and have had no luck finding kale anywhere here, which really sucks as I used to eat it almost daily back in NYC. . . Anyway, spinach is easy to get here so was wondering if that would work just as well.

      Hi Danie! I think that Spinach would be an excellent swap! It would probably tone down the “green” flavor a bit too since spinach is virtually tasteless in smoothies 🙂

    Last night I made a kale shake experiment and I had to chew my way through it. It was horrid. I didn’t give up though! I bought a different kind of kale and followed your recommendations to blend it first and it was SO much better! I loved it! My 2 year old loved it too. I gave her some in a shot glass. It was funny seeing her with a green mustache. I’m glad I gave kale a second chance :).

      Hi Carrie! I love that you didn’t give up on the smoothie! The first time I blended spinach in a smoothie with my old Magic Bullet I had to chew my way through it too haha I was determined to figure out a way to make it smoother 🙂 So happy it worked out! xo

    I’ve been through the overactive thyroid deal. After endocrinologists and meds that were awful for your heart and many episodes of prolonged hair loss, panic attacks, sweaty palms, and mood swings. I found a cure. 2 Tbsps of raw dulse flakes a day and 1 Tbsp. of organic Meca powder). I mix these with water and warning don’t miss a dose. A year to the day I haven’t had symptoms and I haven’t and I through my meds in the trash.

    And I was told by my endocrinologist not to try the seaweed. How wrong they were!!

    I am a thyroid cancer survivor and before having my thyroid out I struggled with hypo/hyper thyroid issues. The best thing you can do it stay active and positive! AND definitely take a nap once in a while 🙂

    I’ve tried almost all of your smoothies now and I’m obsessed! This one is for sure my favorite, I look forward to drinking it! I work at Caribou Coffee, so I have the advantage with the nice blenders, and I always bring my ingredients with me to work everyday and people give me weird looks… Long story short, I make them try it, now they ALL are hooked! Awesome way to get kale into the diet! BRAVO!! 🙂 I am now a dedicated fan!
