Satisfy your cookie cravings with a healthy Oatmeal Raisin Cookie Bake that makes for a super quick and easy breakfast on the go, or even dessert for that matter! No actual baking required!

Oatmeal Raisin Cookie Bake
Serves 1 

1/4 cup liquid egg whites
1/4 cup rolled oats
1/2 banana mashed
2 Tbsp raisins
1 Tbsp chia seeds
1/2 tsp vanilla
1/2 tsp cinnamon
1/4 tsp baking powder

Mash the banana and combine with all ingredients until well mixed. Lightly spray a small microwave safe bowl with nonstick cooking spray. Pour the oatmeal raisin cookie mixture into the bowl and microwave (uncovered) for 1 minute and 30 seconds. Remove the bowl from the microwave (caution, bowl will be hot). Flip the bowl upside down on a plate to release the oatmeal raisin cookie bake, enjoy hot.

      I wanted my “bake” to have a fluffy/cake like texture, so I added a little bit of baking powder but I’m sure it would still turn out great without it! It may be a tad more dense, but the egg should help 🙂 let me know if you give it a try without the baking powder! xo

    Hey,
    This is my frist comment on your blog and I wanted to tell you how you’ve really made me think about my diet. I was one of those vegetarians who’d fallen into to the heavily processed foods trap and your recipes provided a really simple way for me to kick start out of that rut. So thanks! And also, this recipe looks delicious. I always want cake in the morning- perfect compromise 🙂

    Catherine–I wanted to let you know that I started following the Rabbit Food pyramid yesterday. I’m trying to lose 60 lbs. After finding your site and seeing how balanced the meal suggestions are, I was encouraged by your story and how you lost weight on whole foods, not starving and cutting out food groups. I’m excited to see what the future holds and was even happier when I wasn’t hungry last night when I went to bed–usually on the first day of a new eating plan I feel starved all day.     I’m allergic to bananas, and I was wondering if you would suggest any sort of substitute to use in recipes such as this as well as in some of your delicious smoothies. I worry that not replacing them with something else will throw off the whole recipe. Any suggestions?

      Hi Valerie! Oh know, a banana allergy! You are not alone, quite a few of my readers are allergic to bananas as well! I have not tried any of my recipes sans banana, but a couple of readers used pineapple instead (in a different recipe) and had great results! The banana adds the natural sweetness, so I would imagine that about 1/2 cup of other sweet fruit could work in it’s place. I need to do some experimenting! Let me know if you have success with another fruit 🙂

    This was a very yummy breakfast treat, and very easy and quick to prepare (since I have a habit of sleeping in too late). And your gargantuan green giant smoothie is one of my favorites (I just tried it with a cup of blackberries added in addition and it turned it this lovely purple color and was delish). I would also like to thank you for making your recipes serving 1 since I live alone and I often forget about leftovers! Your blog has made eating clean on a budget very easy and delicious!!     Eating this now and SO yum!! Do you think substituting walnuts for the chia seeds would still turn out ok? Seems like an extra little crunch would go nicely :).

    I have to say that your website is a breath of fresh air. I have struggled for the last 15 years with my weight, at 5’4 and anywhere from 125 to 160 pounds. It’s pretty awesome to be able to relate to someone, with no gimmicks or crazy fad diets attached. Just normal eating…and single serving sizes! YES! Keep up the great work….and again thank you 🙂

    I’m not a huge breakfast eater, so I usually just have a Breakfast Essential smoothie with a piece of fruit and 1 cup of skim milk, but I was excited to try this recipe for those colder mornings when an icy shake would make me freeze. The first time I made it, I personally felt that — although delicious — it has a slightly more eggy taste than I would have preferred. So when I made it this morning, I put a whole banana and only 1/8 cups of egg whites and because it seemed a little more liquidy, I added about an extra tablespoon of oats, and it came out perfectly! I’m still super happy I found this recipe and I think I’m going to try to elaborate on it for this fall at some point with canned pumpkin instead of banana!

    I love this recipe! I actually changed it up a little. I omit the cinnamon and add a tablespoon of cocoa powder and a little bit of carob chips . Mmmm it comes out sooo good! I add just a drizzle of agave nectar when I take it out and it’s awesome ! 🙂

    I recently stumbled across your blog & I feel like I’ve found exactly what I’ve been looking for.I am 22 and my weightloss story is much like yours.About a year ago I started losing weight through WW/exercise and lost 19.6kg(sorry i’m a kiwi, we don’t do pounds :P).But recently I have gained a few of those kgs back and have found it hard to become motivated again, I was so sick of counting points!
    Already I am noticing a difference on the scales by following your rabbit food pyramid and am getting my older sister in on the action.Loved this recipe, love the site and you seem like an awesome person.Thank you so much!

    Hi, been on this site every day for weeks. I don’t have a microwave, but this would turn out the same in the oven wouldn’t it? maybe a bit more crispy?
    also, how would this go as overnight oats rather than baked? would i omit the egg whites? maybe add some greek yogurt for protien, also i’m out of chia seeds, how important are they to the texture?
