I absolutely love cereal and oatmeal in the morning, but sometimes I just want a change in my morning routine.

When I visited Japan, I had tons of white rice porridge for breakfast. I really loved the idea of rice for cereal, so when I got home I made my own Rabbit Food version with hearty whole-grain brown rice, creamy tropical, coconut milk, sweet fuji apple, and pecans. I’m not sure weather to call this a porridge, cereal, or muesli… so I shall call it, a Breakfast Bowl (although this would be a yummy snack or dessert bowl too)! I have tried this hot and cold and love both, it just depends on what I’m in the mood for when I wake up.

Brown Rice Apple Coconut Breakfast Bowl
Serves 1

1 small fuji apple
1 cup unsweetened coconut milk (I like So Delicious Dairy Free)
½ cup cooked brown rice
2 Tbsp chopped pecans
cinnamon to taste

Cook the brown rice to package instructions. Finely chop the apple into small cubes or slices. Transfer rice into a bowl and pour coconut milk on top (like cereal). Top with apple slices, pecan, and a dash of cinnamon.
Note: You could heat the coconut milk and brown rice together on the stove for a hot cereal, or chill the rice, and coconut milk for a cold cereal.

    Just found your blog and I’m So excited! Im pregnant with my second and trying VERY hard to keep my weight under control. I have developed a love for green smoothies and want to develop a healthier lifestyle now that I feel the difference in eating crap vs the way I feel drinking the smoothies. I really want to lose about 60 lbs from my starting preggo weight. Cant wait to try your recipes!

      Hi Sharleanna! Congratulations on your pregnancy! That is really great that you are eating healthier and loving green smoothies! I agree, I feel so much better mentally and physically when I eat clean & green! Hopefully your little munchkin will be a green smoothie fan too huh

      I feel the exact same -just a little further behind 🙂 I just found this and really really love what I am reading. I’m 5’8 and Christmas 2009 I weighed 190, more than ever before. March-June 2010 I lost 45 lbs by working out a lot and counting calories. I got pregnant with baby #1, gained back all the weight that melted off and reached 202. This year I got down to 155 and found out baby #2 is coming! My body cant catch a break. I have been eating so much better and at 5 months, have only gained 5 lbs surprisingly. I’m not dieting, just taking better care of myself and filling up on greens. I hope to keep my weight manageable too Sharleanna and wish you the very best in this pregnancy!       I actually used a mandolin slicer! It came with an as seen on tv kitchen appliance haha Mandolin slicers are AWESOME though!

    Hi!
    I am loving your website as I am looking to get healthier for our entire family!!
    One thing I am looking for is protein count and when I look at the so delicious coconut milk is says 0 grams and that is what you have listed as a protein source for this dish. My blood sugars drop if I do not have protein especially for bfast.
    I am also allergic to pasturized dairy so is there any other way I can add more protein?? This looks delish!!!

    I discovered your blog two days ago and haven’t been able to stop reading it since ! Your healthy recipes are very balanced and your story is so inspirating !!
    Anyway, I’ve been wanting to try eating rice for breakfast for a long time and this recipe is sooo mouthwatering, I doubt I will resist long before I try it !
