Remember last week when I was obsessed with carrot cake? Well my taste buds are over the carrot cake and now I’m on a total green monster kick, like I literally crave thick fresh smoothies with leafy greens blended in them. Weird? Well not when they taste this amazing! I was working on some recipes earlier this week and this little gem was born… Behold the healthy Thin Mint Protein Smoothie! We all love Girl Scout Cookies, but we don’t love the nutrition label on those babies. Instead of reaching for that box of Thin Mints, whip up a healthy alternative, complete with a nutritional boost of spinach! You’ll get the chocolatey pepperminty cookie flavor along with all of the extra benefits of spinach being in your smoothie, and trust me… you cannot even taste it!

Get to know this leafy green: Everyone say, “Hi Spinach!”

  • Filled with powerful antioxidants such as vitamin C, vitamin E, beta-carotene, manganese, zinc and selenium, which combat the onset of osteoporosis, atherosclerosis and high blood pressure.
  • One cup of spinach contains over 337% of the RDA of vitamin A that protects and strengthens “entry points” into the human body, such as mucous membranes, respiratory, urinary and intestinal tracts.
  • One cup of spinach has nearly 20% of the RDA of dietary fiber, which aids in digestion, and curbs overeating.
  • The abundance of vitamin K contributes to a healthy nervous system and brain function.
  • Contains two anti-inflammatory epoxyxanthophylls; Neoxanthin and violaxanthin.
  • Packed with magnesium, folate, iron, calcium, vitamin C, vitamin B2, potassium, and vitamin B6, and a great source of selenium and niacin.


Thin Mint Protein Smoothie
Serves 1

1 cup frozen spinach (or 2 cups fresh)
1 cup almond milk
2 scoops chocolate protein powder
1/4 cup rolled oats
1/8 tsp peppermint extract
Toppings:
1 Tbsp walnuts
1 Tbsp 70% dark chocolate chips
Combine the almond milk, spinach, protein powder, rolled oats, and peppermint extract in a high powered blender and blend until smooth. Transfer to a glass and top with walnuts and chocolate chips and enjoy with a spoon!
Note: If your blender has a hard time blending certain things, start by blending the milk and frozen spinach first and then add in the oats, followed by protein powder and peppermint extract.

      I do! I use them in most of my fruit smoothies because it makes them really thick and creamy! Use 1/4 of the avocado for one serving of plant based fat!

    First off, I wanted to say that i think you are absolutely gorgeous!!
    I ran into your blog on pinterest and felt in love with it right away, you put a lot of hard word and dedication to all this and it shows! I’ve been following your rabbit food pyramid for 3 days now and already feel skinnier (haha)! I just have a couple questions: do you snack in between meals? Say, eat a fruit after lunch and before dinner? Also, i have a crazy addiction for salt and though i’ve been doing my best to cut down on it, i have a really hard time eating salads without it. I’ve tried to put lots of pepper and other seasonings, but it just doesnt do it for me. Wthat being said, what is the amount of salt you would reccomend adding to each of the meals?

      Hi Rafaella! Thank yo so much for the compliments, you are so sweet! I’m so happy that you found my blog and are loving the food pyramid! I usually keep my snack as one mini meal because it is kind of routine to me now, and it keeps me really full!

      I have learned through research that you should pair a complex carb with protein to keep blood sugar stable and avoid an insulin spike which is another reason why I like to eat my produce, whole grain, protein, and plant based fat together!
      I have had days where I felt really snacky, so I spaced it out before i.e. apple after breakfast, piece of Laughing Cow Baby Bell cheese in the afternoon, Tbsp of peanut butter on toast after dinner. When it comes down to it, as long as you keep with the snack guideline and portions, you should be just fine 🙂

      As for salt, I try not to add it to my meals, but I do have a weakness for (low sodium) soy sauce haha Try some of Mrs. Dash salt-free seasoning! They are actually pretty flavorful!

    This sounds amazing! Im a long tome picky eater with visual & tactile aversions to foods. Ive tried spinach in salads but the flavor was too overwhelming but this seems completely do-able since its “hidden” in the other flavors. Ive been back tracking through your blog over the past few weeks & I completely admire your honesty! Im not a hugely unhealthy person but im interested in a life change related around my diet for the sake of needing more energy (i work w kids and have a 5 year old!…i also want to try to get healthier to have a bew baby in the future!). Any more “hidden veggies/fruit/ recipes” are GREATLY APPRECIATED as I embark on this journey despite my food aversions! Keep up the AMAZING WORK!

    Hi! I really love your blog. It’s exactly the sort of food I like to make for myself and I really admire how much thought you’ve put into nutritionally balancing your meals! I made this smoothie for breakfast and loved it! I like a bit of crunch in my smoothies so I put walnuts and almonds in and ground those finely before doing everything else and it tasted so much like a thin mint!     I just came across your blog on Pinterest! I started reading it and your story is AMAZING! I haven’t been at my ideal weight in years and I always beat myself up over it. I am going to follow your blog and use your tricks to hopefully get on the right track. I really like your juicing experience. I’ve been wanting to try a juice “cleanse” but haven’t found anything I liked. I think I may try yours. Quick question have you tried this with actual mint leaves as opposed to the extract? I ask because I have a HUGE mint plant (if you can call it that it’s more like a bush) in my backyard and I am looking of ways to use the mint other than in Mojito’s!

    Loved this recipe! It did take a bit of getting used to taste-wise, but I think the best thing about it was how filling it is! I was worried that it wouldn’t be satisfying enough to use as a full meal, but I made it for a quick and easy dinner and was full after drinking just half! The other half I put in the freezer and had the next day as a snack; it was a great ice-cream-substitute! Thanks!

    Catherine, this blog is just the kick in the butt I need to turn over a new leaf! I am sipping my Thin Mint shake and have to confess I improvised a little—used chocolate almond milk and skipped the protein powder because I don’t have any yet!(Will buy ASAP) I used mint leaves from my garden (so it does work, Kelly!)     I just tried it and it’s really yummy! I used the Jillian Michael whey protein found at Walmart and it’s good. The only thing I might do differently the next time I make is add ice. I like my drinks really cold. Other than that I give it two thumbs up!

    I JUST made this about 10 minutes ago and OH MY GOOOOOODNESS! OH MY PEPPERMINTY CHOCOLATEY HEATHLY GOOOOOOOOODNESS! I am making this tomorrow for my husband’s breakfast.     Well I found you through Pinterest and was so happy you were not some dumb ad for weightloss. I have been chunky my whole life as well so I feel like we can relate.
    I made this last night and I have no idea what I did wrong but I could not swallow it. All I tasted was oats and spinach. I used a vegan protein powder (I read the comments and saw that you do sometimes as well so I don’t think that is the problem). Could it be that my blender sucks? I was wondering if that is the difference. Having it finley blended. I mean it looks a little grainy.
    Also LOVE the overnight cake batter oats! Made those last night and at first I was like “woah lady, this is not going to fill up someone of my size”, but low and behold I’m satisfied! So thank you. I’m off to make the apple parfaits, very excited about Quinoa. It’s cool to see it transform.

      Hi Janene! Before I got my awesome Vitamix blender, I had trouble blending veggies and my smoothie would be kind of “grainy” like you described and I know it’s not a pleasant texture! Could you taste any of the chocolate in your protein powder? Maybe you could an 1 Tbsp of unsweetened cocoa powder to get more of a chocolatey taste? Also, If your blender isn’t very strong, start by blending only the milk and spinach first until it is completely blended. Then add the rest of the ingredients 🙂 I’m so happy that you found my blog and are loving the recipes! Discovering new healthy foods is so fun! xo

    Tried this today for my lunch, the flavor is really good! Mine did not turn out like your pic though, my spinach did not blend so well. I used frozen spinach that had thawed out (could be part of my problem) and blended it in my Magic Bullet. How did you get yours to blend so smooth?

      Hi Mary! I have a Vitamix which is a really high powered blender, but I used to use a magic bullet before that! Try bending the frozen spinach with only the milk to start and see if you can get it really mixed! I know how awkward that grainy spinach texture is! haha

    Thanks for this recipe – I was skeptical at first but am so impressed by the finished result! The thing that amazes me most (I know I’m not the first to mention it) is how full it’s made me :O I’m only half way through and I’m completely satisfied 🙂 No cravings for something else sweet and chocolatey as I usually have. I also can’t believe how entirely hidden the taste of spinach is! I have dates soaking for your chickpea cookies and I’m about to crack on making quinoa cereal – looks like a busy bunny day!     Hi Catherine,

    Your blog has been one of my fave Pinterest finds, and I’m finishing drinking this delicious smoothie right now. Never would have thought I’d drink (and love!) a spinach smoothie. Question, though…mine didn’t turn green. It stayed a chocolate color. I actually used some leftover Slim Fast chocolate powder I had in order to save money. I know it defeats the protein boost, but I figured the benefits of the spinach, oats, and nuts are great. Do you think the powder is why it wasn’t green? Or does that mean I needed more spinach? I used two loose cups of fresh.

      Aww thank you kristin! that’s great! Your smoothie might have not turned green because of your protein powder, which is totally fine! I used frozen spinach, which is super chopped and condensed coming out of the bag, so it’s actually a lot of spinach! You could try packing your fresh spinach in your measuring cups, but as long as you use 2 cups, you are getting a good serving of spinach in your smoothie, so don’t worry about the color 🙂 xo

      Hi Jennifer, I’m so glad you loved the smoothie! The constancy of the smoothie could vary depending on the kind of protein powder that you use, but i do have a solution for you! Try 1 tsp of xanthan gum in your smoothies that need some extra thickening, it’s a must have for thickness! I have Bob’s Red Mill Xantham Gum and the 8oz bag is about $13 and will last you a long long time! Its low in calories and fat free 🙂

    I bet this would be good w/fresh mint too – it’s very easy to grow and it grows ALOT. My neighbor has a huge bush of it and I transplanted some in my yard. Love mint chutney too! So good w/fish or even as a cracker spread.

    zOmg. I am SO glad someone posted your website on Pinterest, or else I might’ve never found such an easy-to-follow guide on starting a healthy lifestyle. There are so many websites out there that share similar philosophies as you do, but their recipes or methods are beyond a NORMAL person’s reach.       If you feel comfortable adding the Thin Mint Protein Smoothie to your “meal replacement” shake, then you will be just fine! It sounds similar to protein powder 🙂

    I was wondering, what do you think I could substitute for the chocolate flavor? I would maybe add almond butter for added protein. I don’t use protein powders because they seem to halt my weight loss but not sure what I would use in its place for this recipe.

    Hi, I just want to say this recipe looks sooo good but the thing is I am not having issues with my weight being high I call myself a skinny fat jajaja so I was wondering if protein powder will make me gain weight due to the fact that I don’t work out at all and I would love to get to know your blog because I really want to eat healthier and feel better about myself thanks!
