Serves 1

1/4 cup whole rolled oats
1/4 cup unsweetened almond milk
1/4 cup water
1 egg white

Whisk the egg until it gets a little fluffy/foamy. Combine with oats, water, and almond milk in a saucepan and bring heat to medium. Whisk the mixture until it starts to simmer. Raise the heat to high and continue whisking for a couple of minutes until it starts to thicken. Reduce heat back to medium and whisk until most of the liquid is soaked. Transfer to a bowl and enjoy with toppings!
Note: Be sure to whisk the egg before combining with other ingredients!

Girl Scout Cookie Smoothie

Motivation Monday: “Suck it up now and make healthy choices so you don’t have to suck it in later.”

The other day, I was organizing files on my computer and came across this photo. I was speechless to say the least. Although I strongly dislike seeing photos of myself at my heaviest, I cannot hide what I looked like for many years of my life. This is what shaped me and my character, and gave me a completely different outlook and goal in life. I thought I would share this photo as a reminder of all of my accomplishments. Even if I fell off that wagon a few times, I have come such a far way and love my new lifestyle! Take a moment to acknowledge all of your healthy accomplishments, whether it’s taking the stairs instead of elevators, switching from refined grains to whole grains, or hitting a milestone on your weight loss journey. You should be so very proud of yourself. As I always say, all of the little things help you reach your goal!

With that being said, it’s time for a healthy version of a not-so healthy favorite! Ahhhh yes. ‘Tis the season of Girl Scout Cookies. It seems as though this year those adorable little ladies have made it even easier to find those scrumptious cookies with their cookie finder iPhone app and “find cookies” locator on their official website. Refrain!

I thought I would bring back one of my favorite smoothie recipes to help you guys get through this cookie season sans weight gain! As usual, this one has an extra special ingredient: spinach! A tasty take on the green monster!

Thin Mint Protein Smoothie
Girl Scout Cookie Smoothie: Thin Mint
Serves 1

1 cup frozen spinach (or 2 cups fresh)
1 cup almond milk
2 scoops chocolate protein powder
1/4 cup rolled oats
1/8 tsp peppermint extract

Toppings:
1 Tbsp walnuts
1 Tbsp 70% dark chocolate chips

Combine the almond milk, spinach, protein powder, rolled oats, and peppermint extract in a high powered blender and blend until smooth. Transfer to a glass and top with walnuts and chocolate chips and enjoy with a spoon!
Note: If your blender has a hard time blending certain things, start by blending the milk and frozen spinach first and then add in the oats, followed by protein powder and peppermint extract.

Cherry Chia Parfait

Sooo I’ve been super obsessed with my Cherry Chia Jam over the past few days. So obsessed that I have been eating it plain as a Jell-o-ish snack after my workout, on my toast, and now in a parfait! Since my one serving of fruit (1 cup of cherries), and one serving of plant based fat (1 Tbsp of chia seeds) have been taken care of, all I needed to complete my breakfast was a serving of whole-grain and protein, so I opted for some oats and plain Greek yogurt! I enjoyed the flavor combination of ripe cherries & tart Greek yogurt and the chewy texture of the oats. It was both refreshing and filling and just what I needed on this hot day! I will definitely be making this more often! Maybe with some mango Chia Jam? I’m sure that will be happening sometime soon!

As I was in the checkout line at Sprout’s Farmers Market the other day, a woman behind me was trying to convince her friend to buy chia seeds and I could’t help but eavesdrop and awkwardly join their conversation with some chia recipes haha She told me that she puts chia seeds in her tea as a tapioca/boba substitute! GENIUS! So happy I talk to strangers in grocery store lines! I need to try that!

I just love those little seeds! Aren’t they so much fun?


Cherry Chia Parfait

Serves 1

1 cup Cherry Chia Jam
1/4 cup rolled oats
6oz plain nonfat Greek yogurt

Prepare the Cherry Chia Jam to original instructions and refrigerate for at least one hour before adding to the parfait. In a glass jar or cup, layer half of the yogurt along the bottom, followed by half of the oats, and half of the Cherry Chia Jam. Repeat until all of your ingredients have been layered in the jar. Enjoy cold.
