Serves 1

1 egg
1 slice whole-grain bread

Using a cookie cutter or knife, cut a heart out of the center of the bread. Spray a pan with nonstick cooking spray. Place the bread in pan over medium to low heat. Crack an egg and place it in the heart cutout. Cover the pan and allow to cook for a few minutes until whites are cooked through. Transfer the finished toast to a plate and adorn with Sriracha or Tabasco hearts. Top the remaining bread heart with homemade Cherry Chia Jam. Happy Valentine’s Day!
Note: I used a 2.5 inch heart shaped cookie cutter.
Cherry Chia Jam

Cherry Chia Jam
Makes about 1 cup of jam

1 cup cherries or berry of your choice (I used frozen pitted cherries)
1 Tbsp chia seeds
1 Tbsp water

Defrost the cherries under warm water until thawed and remove pits if necessary. Place the cherries and 1 Tbsp of water in a blender and pulse until cherries are mashed, but not completely pureéd. Transfer the mashed cherries to a jar and stir in the chia seeds. Refrigerate for about 60 minutes until chia seeds expand and turn the content into a thick jam.

Happy Toast Tuesday!
I decided to change things up a weeee bit for this week’s Toast Tuesday by posting a toast related recipe! This recipe if from one of my favorite blogs: Eating Bird Food! Brittany has some really fantastic healthy recipes and she is basically a chia genius. She is super creative with her recipes & ingredients and gives the term “bird food” a whole need meaning!

Brittany’s Easy Chia Seed Jam used strawberries, but since I am allergic to berries (with the exception of raspberries), I decided to go for cherries. It can be really tricky to find yummy jams and jellies other than orange marmalade and grape, so once I saw Brittany’s super simple recipe I was pumped to make my own! You will not believe how easy this recipe is. Only three steps stand between you and some fresh homemade jam! It is so delish, you could actually enjoy this jam as a vegan Jello-O snack which counts as 1 serving of fruit, and one serving of plant based fat!

Sophisticated PB&J

Happy National Peanut Butter & Jelly Day!!!

PB&J is not just for kids… In honor of National Peanut Butter & Jelly Day, I had to make something special for the occasion.
A sophisticated take (and twist!) on the traditional PB&J Sandwich: Whole-wheat honey peanut butter pancakes with berry compote.
I am allergic to berries, so I made this batch for my sister, and used cherries for my “jelly!”

Sophisticated PB&J Pancakes
Serves 1

1/4 cup Kodiak whole-wheat oat and honey flapjack mix
1/4 cup water
1 Tbsp peanut butter
1 cup frozen berries

Cook the berries on the stove over medium heat for about 10 minutes, stirring frequently. In a separate bowl, mix the pancake mix, water, and peanut butter together. Lightly coat a pan with non-stick cooking spray. Pour batter into 4 inch circles and flip once they start to bubble. Place the peanut butter pancakes on a plate and drizzle with berry “jelly” compote. Enjoy warm.
Note: I noticed that the pancakes cooked faster with the addition of peanut butter, so make sure to watch them closely as they cook.
If you use regular whole wheat pancake mix, add 1 tsp of honey to sweeten up your batter.
