Remember when I used to do Toast Tuesdays?! Today’s recipe kind of brings that back to the blog… in a super sophisticated toast way haha. Here’s to this small bite for Toast Tuesday!

Whether you’re entertaining guests, in need of a quick snack, or looking for a simple appetizer for dinner with your family, these Mushroom Crostini are easy peasy to make! I find myself loving the most simple of recipes because you get to experience so much of one flavor in a single bite. These minimal ingredient mushroom crostini were inspired by my trip to the Mycopia Mushroom Farm and are full of earthy flavor and the perfect amount of crunch and chewiness. The flavor of mushrooms cooked in olive oil, salt, and pepper is like no other. Simple, and delicious.

Easy Peasy Mushroom Crostini
Serves 1 – when making this recipe for guests, the more mushrooms the merrier!

4 slices of whole grain baguette, 1/2 inch thick slices
1 cup chopped baby bella mushrooms
1 Tbps olive oil
Pinch of salt & pepper

Preheat oven to 350 degrees. Lay sliced bread on a baking sheet and spray each piece with olive oil cooking spray. Bake for about 15 minutes or until they begin to turn golden brown. While the crostini cook in the oven, heat olive oil in a skillet. Add the mushrooms and cook for about five minutes until they become soft. Sprinkle with salt and pepper and toss well. Transfer the mushrooms and top on the whole grain crostini. Serve.
Note: I like to use olive oil spray to lighten up my crostini bread. Especially since there is already a serving of olive oil mixed in with the mushrooms! It’s a lighter way to get your bread crispy.

Protein: suggestion – complete this meal with a side of 1/2 cup cooked lentils, chickpeas, or beans!

Valentine Toast

Serves 1

1 egg
1 slice whole-grain bread

Using a cookie cutter or knife, cut a heart out of the center of the bread. Spray a pan with nonstick cooking spray. Place the bread in pan over medium to low heat. Crack an egg and place it in the heart cutout. Cover the pan and allow to cook for a few minutes until whites are cooked through. Transfer the finished toast to a plate and adorn with Sriracha or Tabasco hearts. Top the remaining bread heart with homemade Cherry Chia Jam. Happy Valentine’s Day!
Note: I used a 2.5 inch heart shaped cookie cutter.
Cherry Chia Jam

Cherry Chia Jam
Makes about 1 cup of jam

1 cup cherries or berry of your choice (I used frozen pitted cherries)
1 Tbsp chia seeds
1 Tbsp water

Defrost the cherries under warm water until thawed and remove pits if necessary. Place the cherries and 1 Tbsp of water in a blender and pulse until cherries are mashed, but not completely pureéd. Transfer the mashed cherries to a jar and stir in the chia seeds. Refrigerate for about 60 minutes until chia seeds expand and turn the content into a thick jam.

Cucumber Tea Toast

Get excited for a very royal slice of toast on this fine Toast Tuesday!

Do you remember having tea parties with your friends when you were little? I used to love getting dressed up and enjoying overly sugared tea and all of the adorable little tea sandwiches. One of the classic tea sandwiches at my tea parties was an English Cucumber and Cream Cheese sammie. Although the fun days of tea parties and teddy bears are over, I still enjoy cooling off on a hot summer day with a refreshing glass of iced green tea and heart slice of whole-wheat toast with cream cheese and cucumber. I really want to bring Tea Parties back… they are just too cute! Get ready for this quick and easy summer snack… pinkies up!


Cucumber Tea Toast
Serves 1

1 slice honey whole-wheat bread (I used Milton’s)
1/4 cucumber – sliced
1 Tbsp nonfat cream cheese

Toast the bread. Slice the cucumber into thin slices. Evenly spread the cream cheese on the toast and top with cucumber slices. Enjoy with tea!

Plant Based Fat: none – although this would be yummy with 1-2 Tbsp of sliced almonds on top!

Fresh Avocado Multi-Grain Toast

Mmmmm, It’s Toast Tuesday again!

It is getting hot here in Los Angeles! Today I was craving some fresh avocado, and I just happened to have one chilling in the fridge. Fresh avo with a dash of lemon juice, salt, and pepper topped on a slice of multi-grain bread makes a delicious summer snack!

Fresh Avocado Multi-Grain Toast
Serves 1

1 slice Milton’s Healthy Multi-Grain bread
1/2 Hass Avocado
squeeze of fresh lemon juice
dash of salt
dash of pepper

Remove half of the avocado from skin and cut into thin slices. Toast the bread, top with avocado slices, drizzle with fresh lemon juice, and sprinkle with a dash of salt & pepper to taste.

Sunflower Swiss Toast

Today’s toast is a sweet and hearty multi-grain bread with creamy swiss cheese, sunflower seeds, and a drizzle of honey. One of my favorite new toast creations!


Sunflower Swiss Toast
Serves 1

1 slice Milton’s Healthy Multi-Grain bread
1 triangle Laughing Cow Spreadable Light Creamy Swiss Cheese
1 Tbsp sunflower seeds
1 tsp honey

Toast the bread, spread with Swiss cheese, sprinkle with sunflower seeds, and drizzle with honey.
