Today I’m talking BREAKY!Start Your Day Off Healthy: Coconut Blueberry Oatmeal

Get rid of the “I’m running late excuses” and make time for your health, diet, and figure. Fueling your bod with oatmeal in the AM allows you to feel full for hours. Instead of opting for boring, predictable oats, add a few blueberries, banana slices, almond milk, some unsweetened coconut shavings, a dash of cinnamon, and a sprinkle of nutmeg. My favie oatmeal benefits? It’s low on the cals, rids cravings, and contains tons of protein, antioxidants, & fiber.

Be careful when selecting a oatmeal brand at the market. Don’t let the low-sugar kind fool you: it’s filled with Aspartame and crap. Look for words like “steel cut” and/or “whole grain.” As far as milk goes, I prefer almond, flaxseed, or rice milk. Besides being easier on the stomach than typical hormone-filled milk, they’re all dairy-free!

And plus, who doesn’t anything with coconut?!

Recipe: Coconut Blueberry Oatmeal 
 ** Serves two
2 cups of Quaker oatmeal
1 handful of blueberries
1 sliced banana
1 cup almond milk
2 sprinkles of unsweetened coconut shavings
1 dash cinnamon
1 dash nutmeg

Slice banana & clean blueberries. Cook oats on the stove for about five minutes. Drain oats and add blueberries and bananas. Sprinkle coconut shavings, cinnamon and nutmeg over fruit. I like to let it sit for 2 minutes so fruit dissolves into the oats. Add 1/2 cup of dairy-free milk. Enjoy with fresh orange juice!

Blueberry Cheesecake Oatmeal

Mmmm oatmeal time! Today’s recipe is for a very filling and scrumptious Blueberry Cheesecake Oatmeal! I am highly allergic to blueberries, so I made this flavor for my sister, and raspberry for myself! Since I don’t get to share very many berry (besides raspberry) recipes with you guys, I wanted to showcase this version for you. Of course you could make any berry flavored Cheesecake Oatmeal of your choosing! A different berry Cheesecake Oatmeal flavor for every day of the week? I think yes!


Blueberry Cheesecake Oatmeal
Serves 1

1 cup blueberries
1/4 cup rolled oats + 1/2 cup water
2 Tbsp oat bran
1/4 cup nonfat cream cheese
2 Tbsp chopped walnuts
1 Tbsp maple syrup or honey
1 tsp vanilla extract
1/2 tsp cinnamon

In a pot over medium high heat, bring the water oats, and oat bran to a boil. Reduce the heat and allow it to simmer. Once most of the liquid has been absorbed, stir in the cream cheese, maple syrup, vanilla, cinnamon, and blueberries. Serve hot.

Patriotic Toast

Happy almost Independence Day and official Toast Tuesday!

4th of July is upon us and it’s time for some fun in the sun, barbecuing, and fireworks! Start your morning off right with this adorable American flag toast! I originally saw this toast idea floating around Pinterest last week and just had to make it. The only problem? I’m deathly allergic to the red & blue ingredients… Booooo (more on the allergy subject later)! I can’t have white toast, no fun! I decided I would make myself a star shaped slice of toast with some PB so I can join in on the fun when I make this for my friends tomorrow. Back to the American flag cuteness, whoever thought of this is a genius. What a cute idea for kids… and adults!


I’ll be taking tomorrow off to celebrate the holiday and I wish everyone a fun and safe 4th of July! Be smart and wear your sunscreen, Skin Cancer does not discriminate.

Patriotic Toast
serves 1 

1 slice whole wheat bread
1 Tbsp nonfat cream cheese
1 Tbsp strawberry jam
9 blueberries
4 banana slices (halved)

Toast the bread and spread evenly with cream cheese. Place the blueberries in 3 rows of 3. Spread the strawberry jam over the rest of the toast and create stripes with the banana halves.
