Just when I thought today was great because it’s Cinco de Mayo, I realized it’s ALSO Taco Tuesday. Ummmm, how deliciously fitting!

So I know when you think of Mexican food “healthy” isn’t the first thing that comes to mind, but trust me, not all Mexican food has to be bad for your waistline! Celebrate Cinco de Mayo and Taco Tuesday tonight with these festive lightened-up tacos!

      I have a couple of videos that I need to edit and post! I was Maid of honor in my friend’s wedding out of town last weekend and just got home! Can’t wait to get back to making nom noms for the blog! xo

    Taco Tuesday reminds be of my college years. What college student doesn’t love $2 tacos? Now that I’m older and my taste buds have matured tofu tacos are right up my alley.

    I too just found your page – thank you for such an honest look into recovery and self confidence issues. While we may not all be on the same level with these issues you truly speak to us all. I do have a question, maybe I’m blind, but is there an archive of your recipes?? I’ve found myself pages and pages back looking for them all but gladly jumping into your other stories along the way!
