This past weekend I took to my Facebook page to ask what your favorite Halloween candy is. Not just because I couldn’t stop thinking about candy, but because I wanted to do a Healthy Halloween recipe for you guys! Winning by a landslide was your favorite chocolate pb treat, Reese’s!

Today I have vegan-ified those little chocolate cups of heaven and traded in the peanut butter for nutritious MaraNatha Maple Almond Butter!

Warning: This product is highly addictive! I literally ate spoonfuls of this straight out of the jar! As a product that is completely raw with no preservatives, no additives, and no artificial flavors or colors I have to give this 5 stars. It’s smooth yet still has that authentic gritty almond texture mixed in and spreads nicely. The taste is absolutely on par. You get a hint of the maple without it being too overpowering or too sweet. The “no stir” addition makes it soooo easy to use, especially when you keep it in the refrigerator. No more chunks of hardened almond butter stuck in the bottom of the jar!

Vegan Almond Butter Cups
Makes 12

1/2 cup Maranatha Coconut Butter
1/2 cup raw cacao powder
2 Tbsp grade b pure maple syrup
3 oz of Maranatha Raw No Stir Maple Almond Butter
12 mini cupcake liners

Line a mini cupcake tin with mini cupcake liners. Melt coconut butter/oil and combine with the raw cacao, and maple syrup in a medium size bowl and stir until well combined. Divide the chocolate liquid in half and reserve one half for the “top layer” of the almond butter cups. Pour the chocolate evenly in each liner and freeze for at least 15 minutes or until hardened. Remove the tin from the freezer. Drop 1/2 tablespoon of Maranatha Maple Almond Butter at a time on top of each frozen/hardened chocolate cup. After almond butter has been dropped into each cup, pour the remaining half of the chocolate until filled to the top and almond butter is covered. Carefully place them into the freezer (to expedite the process) for at least 15 minutes or until hardened. Keep almond butter cups in the refrigerator until served because they will melt and lose their shape at room temperature if the coconut butter/oil begins to melt.

    Favorite way to enjoy almond butter is straight from the jar. I use a measuring spoon to control myself. One tablespoon eaten like a lollipop…heaven.

    My favorite way to eat almond butter is to slather it on a rice cake and top it with bananas and honey. It is soo delicious! After trying almond butter, I can’t go back to peanut butter!

    YUM! Must try this recipe! Up until about a month ago, I hadn’t ever tried raw almond butter. It’s so much richer than peanut butter, and I love it! I really enjoy it on a piece of toast with some apple slides.

    Peanut butter on plain whole wheat toast with fresh sprouts. Coconut butter on sweet or pumpkin bagels, all other nuts, on anything. I call these butters my steak. Yummy. So delish.

    My absolute favorite way to eat nut butter is with steel cut oatmeal and sliced bananas! I use a spoonful and mix it in with my oatmeal. Slice a banana on top and chomp away!

    My favorite way is in Banana Candy. Slice a banana in half, lengthwise. Spread almond butter on one side. Drizzle honey over almond butter. Sprinkle cacao bits over honey (optional). put banana back together. Wrap in wax paper. Freeze for an hour or more. Slice and….yum!

    I love almond butter in my post-workout ‘milkshake’.

    I use one banana, 1/2 cup almond milk, almond butter, cinnamon, cacao powder, vanilla, chia seeds, chocolate chips (and whatever else I might be feeling 🙂 ) Blend it all together and boom! Great snack 🙂

    Honestly on a spoon is amazing 🙂 But in actuality, I used to eat it on celery and progressed to spooning it onto my banana alongside some chocolate milk. Now I like to add it to smoothies, bananas, blueberries, or anything that is within reach during meal time. I’ve established an oats + apple slices or blueberries for breakfast pattern and love it!

    Hi! I tried out this recipe but when I mixed the chocolate it was more of a dough, than an liquid. I had to add water to really get a pourable mixture. Did I do something wrong? Are those portions listed correct? (Btw – I used coconut butter, not oil)

      Hi Mel! You have to use coconut oil to get the right consistency for this recipe. I slightly heated the oil so it became liquidy. Coconut OIL is JUST the oil that is extracted from the meat, and coconut BUTTER is the whole meat of the coconut pureed into a creamy butter, so I think that was the problem!
