Motivation Monday: “I don’t sweat, I sparkle!”

Sooo my Q&A did not end up happening on Friday, or even Saturday… but it will be here this week! Trust me, I don’t get my stitches out until August 30th, so there is still plenty of time for me to type away on the couch. There are only so many times that I can see Happy Feet, Kung Fu Panda, and Pirates of the Caribbean on TV. This past weekend turned out to be much busier than I planned. Or maybe it just seemed busier because everything I did ended up taking 10 times as long with my gimpy foot and crutches in tow. My birthday celebrations continued with the arrival of one of my very best friends Kelsie flying in from NY and another birthday dinner with my volunteer group. Amongst the birthday festivities, I still had a few minutes for a healthy baking recipe that is “nothing but good.”


Chobani naturally powered 5 US athletes to the Olympic Games in London 2012, bringing 2 gold medals home for Team Chobani!
I don’t know about you, but I was so happy to see Chobani sponsoring Team USA at this years Olympics. It’s such a refreshing change to see something that athletes most likely consume, compared to unhealthy fast food like McDonald’s being promoted. The more Chobani commercials I saw throughout the games, the less Chobani I saw on the shelves at my local grocer. It looks like their advertising worked, go CHO!

Who said muffins can’t be make for a healthy breakfast? Today I have a recipe for a super moist, fluffy single serving muffin made with Chobani’s new Vanilla Chocolate Chunk Greek Yogurt. This little treat is baked without any oil or butter, making for a light protein filled muffin with healthy ingredients. If you’re anything like me, making one dozen muffins is just dangerous. You no longer have to be afraid of eating one too many muffins, because this is a muffin for one. For someone who always wants “just one more” or someone who lives alone, your problem has been problem solved!


Chobani Muffin For One
Serves 1

4 Tbsp Chobani Vanilla Chocolate Chunk Greek Yogurt
3 Tbsp whole wheat flour
1 Tbsp liquid egg whites
1 Tbsp chia seeds
1/2 tsp pure vanilla extract
1/4 tsp or 1 packet of stevia
1/4 tsp baking powder

Preheat oven to 375 degrees. Combine all ingredients and stir until well mixed. Pour the batter into a cupcake liner in a muffin tin. Bake for 15 minutes. Remove from oven and let cool for 5-10 minutes. Enjoy warm out of the oven.
Note: This recipe would also work great with other Chobani flavors such s cherry or blueberry where there are chunks of real fruit!

    I use Greek Yogurt for everything but my favorite thing is to make Yogurt cheese. I put it on and in everything. My family is middle eastern and I have been eating that since I was a toddler. I add fresh mint to mine and slather it on some Ezekiel bread or half a bagel and my morning is complete. I also use it plain on toast with fruit and honey. DELISH! Hope you get well asap!

    I love substituting plan Greek Yogurt in any recipe that calls for sour cream or mayo, like a yummy whole wheat pasta salad! I also add the fruity yogurt to my smoothies for a bit of protein and to make them extra creamy. But I think this will be my new favorite way!!

    I LOVE Chobani Greek yogurt!! I eat it every chance I get…like a sweet treat and good for you, too!

    My favorite way it with crunchy granola mixed in. It’s sweet, creamy, crunchy, and satisfies that craving for less healthy snacks! The problem is I usually want more than one…haha!

    I love greek yogurt and use if for smoothies everyday! I also use it with fruit, baking,granola, oatmeal, and as a replacement for sour cream.

    My favorite is 8 oz of Chobani nonfat plain topped with fresh raspberries, blueberries, dark chocolate chips, and ground flaxseed. Greek yogurt is definitely the new breakfast of champions!

    I love how easy it is for me to scoop out some plain Chobani yogurt, toss in some fresh sliced fruit and berries, and top with a sprinkle of cinnamon – it’s a deliciously perfect breakfast or snack for my on the go lifestyle!

    Chobani is a great sub for anything or simply by itself…I cannot get enough of this stuff. However, my new craze with it is a spin off of Dean & Deluca’s basil mayo. My basil plant is growing like mad on my porch so why not put it to good use? Mmm, sub the mayo with simply CHO and chopped basil and this spread goes perfectly on sandwiches as Dean & Deluca serves it or my new found love, make it a veggie dip 🙂

    I love greek yogurt for smoothies but my all time favorite way is to add just a bit of all natural locally produced honey. yum! (I even add honey to the greek yogurt that comes with honey. I can’t have too much honey)

    I love to eat greek yogurt mixed with raw oats, chia seeds, and cottage cheese! Freeze for 15 mins and it gets really cold and delicious!

    I had a quick question… would this be OK to eat as an after dinner snack… before 7pm if I go to bed at 10? Do you think it’s too much for a “snack”?

    If I remember right, you usually don’t snack and if you do, not in the evening. I was curious what you thought because I LOVE after dinner sweets, my sweet tooth is out of control. A few 70% chocolate chips is never enough and I’m always looking for something other than yogurt or fruit.

    I always use greek yogurts for healthy dessert parfaits! I have recorded all of my favorite desserts with themes like berry, chocolate, or cereal! It is a great way to make a yummy dessert that doesn’t cause too much guilt!

    I have become a greek yogurt nut! I put it on everything and in everything. I love it with vanilla, fresh berries, granola and walnuts for breakfast. I will be said when berries are out of season as I will have to find another fruit to adorn my greek yogurt.

    My favorite way to eat Chobani is plain with organic Date Lady date syrup drizzled all over it – YUM!! My toddler’s breakfast as well! In fact, Chobani needs to make a yogurt sweetened with date syrup – then I’d buy that too!!

    I like to eat plain Chobani in celery stocks topped with a few blueberries and cinnamon. The celery is guilt free crunch and the BB and cinnamon are the perfect amount of sweet. Great for a snack.

    I like to chop up some fresh fruit to add to plain Greek yogurt – lately I’m all about plums. I also do a wicked dipping sauce out of plain Greek yogurt, cilantro, olive oil, lemon, and pepper. It’s killer.

    There are soooo many great ideas!!! I can’t write them down fast enough! And with the kids going back to school soon, these are great bfast ideas!! My son who has always been a “big” kid has lost 20 pounds this summer he is 11 and wanted to make weight for football. My daughter who is 14 and starting high school has always had the so called “baby fat” she has lost 15. Together as a family we have exercised and followed a whole food plan. Meaning, if it hasn’t come from the ground, we are not eating it. We have done that for quite some time. We eat Chobani just about everyday. I have a Popsicle maker and even made them like that. All of your recipes Catherine are outstanding. Thank you again for being an inspiration to all.

    I use plain Chobani to add creaminess to the sauce of a pasta dish that I make. It’s a perfect way to make a delicious dish while keeping it healthy.

    The dish consists of a cabernet marinara sauce with diced sautéed onions (in olive oil), diced tomatoes, fresh basil, spinach & feta chicken sausage, crushed red pepper, crushed garlic, and of course a bit of Chobani yogurt mixed in. Add in wheat penne and it’s a delicious, healthy pasta dish. So good!

    My favorite way to eat Greek Yogurt is by dumping the container into the bowl and mixing in 1/4 cup of whole grain rolled oats, fresh fruit, and sprinkling cinnamon on top! Super Yum!! :]

    i love the chobani champions as an afternoon snack. They taste delicious, and i like that they are only 3.5 oz! Other than that, i love greek yogurt as a sour cream replacement. I love to slather it on chicken or salmon and bake in the oven for a quick, delicious, healthy, meal!

    I LOVE making scones with my Chobani! They don’t have any oil or eggs, only limited sugar and just a few tablespoons of butter vs. 1 cup of it! And they seriously make THE BEST scones. Since you’ve provided me with so many delicious recipes, I’ll share my favorite “secret” recipe with rffmbt! haha
    Chobani Scones:
    1 1/2 C whole wheat flour
    1/2 C all purpose flour
    1/4 C sugar
    2 t baking powder
    1/2 t baking soda
    1/4 t salt
    4 T butter
    3/4 C (or one container) Chobani yogurt- any flavor is delicious
    Mix dry ingredients together. Add butter and combine till crumbly. Stir in Chobani and any other dried or raw fruits (I like adding lemon zest). Form into a round mound on a baking or cutting sheet and cut across 4 times to get 8 triangular pieces. Sprinkle a tad bit of sugar on top to get a scrumptious crunchy top and bake at 425 F for 12 minutes! Ta-da! Delicious scones thanks to Cho!

    my favorite way to eat chobani (or any greek yogurt) is to put it in my overnight oats! I mix multi-grain oats, original almond milk, a couple of spoonfuls of vanilla chobani, and cinnamon! In the morning I add in coconut peanut butter and banana. Yum!

      Hi Elyana! Most of my recipes are based on the guidelines of the rabbit food pyramid, but I also make healthy recipes like the “Chobani Muffin” which are not based on the pyramid!

    I usually make parfaits with Chobani plain, cinnamon, honey & nuts (usually sunflower seeds) sometimes I throw in uncooked oats. I love all of Chobani flavors but especially cherry & apple this summer

    I make a no bake breakfast with Greek yogurt:
    Take an 8oz mason jar
    1/4 cup up rolled oats
    1 teaspoon of Chia Seeds
    1/2 cup Greek yogurt
    1-3 table spoons of coconut milk
    fruit of choice ( I like bananas and 1 table spoon of PB2)
    Mix it all up refrigerate overnight.
    Enjoy in the morning

    I’ve tried two kinds of greek yogurt. The first time when it first came out, and it was soooo awful! Then a couple of days ago my daughter bought some from Aldis and it was better than the last kind but not good enough to eat!! So I don’t like greek yogurt, but love Yoplait yogurt! I don’t know why the greek part of it make it yukky……but if I see your brand I will try it for the last time…..lol. I thought you weren’t suppose to mix yogurt and fruit in smoothies……am I wrong?

    I love the Pomegranate nonfat Chobani…so good all on its own! I like to add plain nonfat Chobani to overnight oats, or to cereal/granola for a quick breakfast. Also use the plain to make a lower fat greek yogurt dip. Yum!

    Grapes! I love fresh fruit in my greek yogurt, specifically crisp fruit like grapes of apple slices. I recently became addicted after learning that my vegetarian self can get lots of amazing protein in such a yummy package. 😀

    I actually just found a website a few days ago and made this new favorite recipe with chobani!
    2 containers of chobani (plain)
    1 tbsp sour cream
    1 peeled cucumber, chopped
    3 garlic cloves
    Dill
    1 tbsp onion
    salt to taste
    lemon juice
    Blend, and serve with veggies.
    I found this recipe on youtube at leansecrets with Brenda.

    I always felt really bad that I couldn’t eat Chobani because the texture of yogurt disgusted me so much! Creamy things have never been my friend. To solve this dilemma, I mix in Kashi GoLean Crisp Cinnamon Crumble cereal as I eat (my favorite is raspberry because it turns the Chobani pink!) and my problem is solved! The crunchiness of the cereal makes the negative side of the texture go away and now I am happily eating Chobani whenever I can!

    Every morning I eat a cup of Chobani’s plain nonfat with blueberries, walnuts, cinnamon, and honey. Sometimes I throw in some bananas to mix things up 🙂 Best yogurt ever!

    I love Chobani yogurt plain, but sometimes you just need to change it up. The next best way to eat yogurt is to put it in the freezer for a little while. When you take it out stir it around (you might need to microwave it for a few seconds first) and ta-da, it’s just like eating ice cream!

    We love Chobani and was also glad they sponsor in the us Olympics , we have never gone back to any other yogurt since we started buying a few months ago . Personally love the pineapple and pomegranate it’s sour yet sweet . Freeze it for 15min and it makes a yum ice cream .

    The best way is blended with 2 teaspoons all natural almond butter and a tablespoon of 100 percent coco powder 🙂 If Im really hungry I cut up a banana and add that to the top.

    I mix mine up with fresh lemonjuice and low fat condensed milk then layer it over crushed and baked graham crackers to make the most delicious low fat lemony cheesecake! Although i can’t take full credit as it’s my mum’s recipe 🙂 Both her and rabbit food have taught me well!

    My favorite way to eat chobani is to mix 2 TBS sugar-free apple pie filling, cinnamon, and 2TBS crushed fiber one cereal into the plain-fat free yogurt. Throw it into the freezer for 45 min and its your own frozen yogurt that tastes just like apple pie!

    How great is Chobani!? I am seventeen years old and have an super busy schedule, and Chobani is a quick and HEALTHY. I use it for just about everything! My favorite is Cookies! It gives it a soft and smooth taste!
