Espresso Chocolate {avocado} Mousse

Today’s recipe is a sweet little treat made with healthy fats from avocado, naturally sweet Medjool dates, and mineral & antioxidant loaded raw CaCoCo chocolate blend. Not only is this dessert rich and flavorful, but it’s also vegan/plant based, refined sugar-free, and loaded with omega-3 fatty acids, vitamins, and minerals.

Don’t let the avocado scare you, I promise you cannot even taste it after the espresso, cacao, and Medjool dates are added! Avocado gives this recipe the perfect creamy texture that you will be sure to love. This kicks your typical Jell-O pudding to the curb! Plus you can make it in under 5 minutes!

Eat it plain, or spread it on a brown rice cake or whole grain toast for a quick snack!

Espresso Chocolate {avocado} Mousse
Serves 2

1/2 avocado
2 Tbsp Original CaCoCo (or raw cacao powder)
1 Tbsp coconut milk (or milk of choice)
1 shot of espresso (or 3 Tbsp strong french press)
4 Medjool dates, pitted

Remove pits from dates. Combine all ingredients in a food processor or blender and blend until smooth and mousse-like.

When Dole contacted me to make an original banana recipe, I knew it needed to be something different and out of the box. I use bananas daily in recipes from green smoothies and banana nicecream to banana roll-up snacks and banana bread breakfast quinoa, but this time I wanted to create something more savory and less expected. What’s better than a savory and sweet salsa for all of your summer parties and barbecues?! I’m so excited with how great the flavors and textures combined with my perfectly ripe Dole Banana! Serves 1

1 Dole banana
1/4 cup pineapple, chopped
1/4 cup mango, chopped
1/4 cup tomato, diced
1/4 cup corn
2 Tbsp jalapeño, diced
1 Tbsp cilantro

Chop banana into small pieces and chop and dice other ingredients. Gently fold all ingredients together until well combined. Serve with whole grain chips. Refrigerate leftovers for up to 3 days.

Crunchy Chia Energy Bites

I am off to one of my sister’s bazillion bridal showers this morning and after that I’m flying straight to San Francisco for 24 hours, and then leaving for Florida for a conference on Tuesday morning! The next month leading up to my sister’s wedding (July 19th) is going to be a serious whirlwind.

I picked up the new EMRF neon summer tanks, but I won’t be able to list them in my store until I get back from all of my crazy travels next week. Most of you already know, that this blog and store is run by me, myself, and I, so I didn’t want to post the new shirts and be unable to ship them for a week. I hope you guys understand! Today’s recipe is for Crunchy Chia Energy Bites! I took double back-to-back classes at Full Psycle the other day and wanted to share my secret pre and in-between workout snack. When you do a really intense cardio session like cycling/spinning, you don’t want to eat something heavy before because you will feel absolutely terribly during class, and you don’t want to go starving because you will be terribly weak. It can be really hard to find a snack suitable for you and your chosen workout, but this is what I love!

These energy bites are filled with natural sugars and carbohydrates from Medjool dates, a little dose of protein and healthy fats from cashews, and omega 3 fatty acid from chia seeds. They’re light enough that you can have one or two a half hour before class and one in-between grueling workouts! They also make a great afternoon snack for adults and kiddos!

Crunchy Chia Energy Bites
Makes about 8

1/2 cup cashews
1 cup medjool dates, pitted
1/2 tsp vanilla extract
1/4 tsp salt
2+ Tbsps chia seeds

In a food processor, pulse the cashews and salt until they are broken into tiny pieces (do not pulse for too long, as it will turn into powder). Pit the dates and add them along with vanilla extract to the food processor. Blend the dates and cashews together until dough is formed. The mixture should stick together and be pliable. Remove the mixture and form into 1 Tablespoon sized balls. Roll each ball in a bowl of chia seeds. Store in refrigerator for snacking!

Slam Dunk Lettuce Wraps + Dole Giveaway

I love DOLE Chopped Salads because it’s a quick and easy way to eat more rabbit food. They’re filled with all sorts of goodies like different lettuces (green cabbage, red cabbage, and kale), broccoli slaw, carrots, and even snap peas! It’s an easy way to change up my usual all spinach or all kale salad and get some different textures and new flavors in the mix. My fav way to eat a chopped salad is to pour the entire bag (yup, all 4 servings! Only 100 calories and 8 grams of fiber for the entire thing!) into a gigantic mixing bowl, throw on some homemade dressing, mix it up, and nom nom that shiznit up. Straight out of the mixing bowl. Awww yeahhhh. But besides eating the entire bag like a rabbit, I love branching out and making new recipes. For example, I love filling spring rolls with the Asian Blend for a quick and easy appetizer when friends come over!

Since March Madness is just around the corner and basketball is all about those slam dunks, I teamed up (no pun intended!) with DOLE Salads to make the ultimate dunk recipe! Serve them up while watching the March Madness games as a fresh snack that’s so healthy, you can dunk into that sauce alllll you want! I love that the Asian Blend is filled with green cabbage, red cabbage, kale, broccoli slaw, snap peas, and carrots. It makes for a super easy veggie filling for my lettuce wraps with little prep!

These fresh Asian lettuce wraps are so easy to make, and even easier to devour!
They’re a total slam dunk!

Slam Dunk Lettuce Wraps
Serves 4-5 as an appetizer or 1 as a meal!

Lettuce Wraps:
2 cups DOLE Chopped Asian Blend
1/2 cup cooked quinoa, chilled
2 Tbs cashews, chopped
2 Tbsp Sweet Chili Sauce
5 butter lettuce leaves

Sweet Chili Sauce:
3/4 cup rice vinegar
3/4 cup honey
3 garlic cloves, minced
1 Tbsp chili pepper, finely chopped
2 tsp red-pepper flakes
1/2 tsp coarse salt

Cook and chill quinoa beforehand. Combine all ingredients for the sweet chili sauce, mix well, and refrigerate. In a mixing bowl, combine the DOLE Chopped Asian Blend, quinoa, and sweet chili sauce. Scoop the filling into lettuce wraps using a 1/4 cup measuring cup. Dunk into sweet chili sauce as desired, and enjoy while watching March Madness!

Copycat {whole foods} Tropical Green Smoothie

I went to Whole Foods the other night after spin and ended up ordering the BEST smoothie. I’ve been making my Simple Green Smoothie every morning, but I’m quite certain that this is my new go to! The best part is that it’s just as simple to make! See my video below to watch me make this smoothie step by step!

Below is the 24 oz Tropical Green Smoothie that I purchased from Whole Foods for $5.95.
It consisted of spinach, coconut water, banana, pineapple, and mango.

I love getting smoothies from juice bars and markets when I’m low on time and groceries, but sometimes I don’t think their smoothies are thick enough for my liking and I drink them in a nanosecond. My recipe is a little bit thicker but to my knowledge, tastes exactly the same as theirs! If you like thick smoothies, you are in the right place! But if you like your smoothies a little thinner, no problem, just add some extra coconut water to this recipe!

Below is my Copycat Tropical Green Smoothie!

Copycat {whole foods} Tropical Green Smoothie
Serves 1

1/2 – 1 cup coconut water (I used O.N.E.brand)
1 frozen banana
1/2 cup pineapple
1/2 cup mango
huge handful of spinach

Start with 1/2 cup of coconut water and add more if needed or desired. Blend until creamy and smooth.

Vitamix Blending Tips:
Some of you have asked me what settings I use on my blender.
Vitamix blenders can look intimidating, but they are so easy to use!

  • Start by placing all of the ingredients into the blender, followed by the lid, and plunger.
  • I usually start off on variable 5 as I jam all of the ingredients down with the plunger.
  • Once the ingredients have all been pushed to the bottom, I like to bring the variable speed up to 7 or 8 until it starts moving on it’s own without the plunger.
  • Once the ingredients start blending without the help of the trusty Vitamix plunger, I hit the “HIGH” switch and let it run until it blends super smooth and even!
