3 Ingredient Magic Cookies

I remember seeing a banana oat cookie recipe floating around Pinterest a couple of years ago and I thought it was too good to be true. Welllll I pintested it and it was a total flop. My cookies were rubbery and looked like one of those typical “NAILED IT!” photos. It was bad. Like most of the omgsupercool intriguing Pinterest recipes that I’ve tried, I got super frustrated, annoyed, and never tried it again.

Well, here I am years later conquering the banana oat cookie, and not to toot my own horn but, TOOT FREAKING TOOT I actually nailed it! In the correct kind of nailed it way. And these cookies are seriously magical! The original recipe called for cinnamon, vanilla, and raisins, but I am giving a big N-O to those ingredients for my magical cookies. I’ve also mastered the ratio of ingredients so your cookies don’t look like a pile of unicorn poop when they come out of the oven. You’re welcome.

I am happy to tell you that these cookies are gluten-free (make sure to buy uncontaminated oats), vegan, nut-free, seed-free, dairy-free, soy-free, wheat-free, refined sugar-free, and absolutely magical. Plus, you might just happen to have two super ripe bananas on your counter just waiting to be used… for cookies!

3 Ingredient Magic Cookies

Yields 20 cookies

2 large ripe bananas
1 cup whole rolled oats
¼ cup vegan chocolate chips (I love Enjoy Life brand)

additional ¼ – ½ cup rolled oats as needed to thicken batter

1. Preheat oven to 350. Line a baking sheet with parchment paper.
2. Place bananas and 1 cup of oats in a food processor and blend until the bananas are smooth but you can still see bits of oats.
3. The consistency will depend on the size of your bananas, so if your mixture is too runny, transfer to a bowl and fold in ¼ cup of whole rolled oats to make it thicker. If the dough still isn’t stiff enough, add another ¼ cup of oats. Add chocolate chips and mix in with a spoon.
4. Using a 1 Tbsp sized measuring spoon scoop heaping spoonfuls of dough and place onto parchment paper.
5. Bake for 12 to 15 minutes until tops are golden.

Homemade Animal Cookies

Sorry for the lack of posts recently, little bunnies! My sister got married on July 19th, so as you could imagine, life has been pretty crazy! I finally got a few minutes to myself to relax and catch up on emails after our out-of-town guests had returned home and the newlyweds left for their honeymoon!

I want to introduce you all to Erin! Erin is one of my friends, and also my spin buddy at Full Psycle! She loves baking and creates the best low-ingredient desserts on her blog (3 ingredient red velvet cookies? I meannnnn). I am one lucky duck and get to taste test when she brings her creations to spin! She so totally spoils me!
Revenge Bakery and Rabbit Food For My Bunny Teeth
I love that she balances baking, healthy eating, and exercising. She loves green juice, and salads, but she also loves the occasional sweet treat. She’s seriously adorable and such an amazing person with mad style.

Erin and I had a fun girls’ day and made these adorable bunny ‘circus’ animal cookies!

I bought this adorable bunny cookie cutter from our favorite store Daiso! It’s a Japanese dollar store, so this cookie cutter was only $1.50 in store!

Instead of using artificial food coloring to dye our frosting pink, we used small amount of beet juice from canned beets!

{with vegan options}

1 ½ cups White Flour (or gluten free alternative)
½ cup Sugar
¼ tsp salt
½ cup Earth Balance Buttery Spread
1 egg (or egg replacer for vegan alternative)
½ tsp vanilla

Preheat oven to 350 degrees. Combine all dry ingredients (sugar, flour, salt) in one bowl. In a separate bowl, combine all wet ingredients (earth balance, egg, and vanilla) and beat using a hand mixer until well mixed. Slowly add the dry mixture into the wet mixture while beating with a hand mixer until dough has been formed. Place the dough in the refrigerator for about 30 minutes until dough hardens. Roll out dough with a rolling pin in between parchment paper (if the dough seems too sticky to roll out, add an extra tablespoon or two of flour). Cut desired shapes with cookie cutters until all the dough has been used. Bake for 5 minutes until lightly golden brown.

For the frosting:
Royal Icing
1 cup powdered sugar
1 Tbsp vanilla soy milk (or almond milk – creamer is best)
¼ tsp vanilla

Combine all ingredients with a small whisk. Divide frosting evenly into two separate bowls. Use 1/4 – 1/2 tsp of beet juice in one half of the frosting to give a light pink color.

Vegan option: Melt vegan white chocolate chips. Color half of the chocolate chips with about 1/4 – 1/2 tsp of beet juice for pink coloring.

Natural Products Expo West 2014

Special thanks to Newhope 360 for the press pass to the Natural Products Expo West 2014! I had a blast sampling and learning about new natural food brands from Friday-Sunday and came home with a ton of goodies! Below are my top picks from this year’s expo as well as photos from my adventure!

My Take: These crunchy little guys are pretty addicting, but they’re a snack with a purpose and offer complete protein that will keep you full between meals.

Fav Flav: Tuscan Herb
The 411: Tuscan These crunchy little O’s are made from quinoa, oat bran, organic brown rice, and real cheese!
My Take: They’re just as addicting as Cheez-Its, but they’re made of 100% natural ingredients, and they’re gluten free! Mr. Cheese O’s launched at Expo, and I cannot wait for them to hit stores! They’re to die for!

5. Dang Coconut Chips
Fav Flav: Caramel Sea Salt
The 411: Vegan, gluten free, non-GMO, no cholesterol, good source of fiber, high in lauric acid. Only 3 ingredients, coconut, coconut sugar, and sea salt.
My Take: Simple addicting. Delicious on it’s own for a little snack, or on top of yogurt, oatmeal, or in trail mix or cereal!

6. Go Lo Foods Dark Hazelnut Spread
The 411: It’s sugar free, gluten free, dairy free, Paleo, Vegan, low sodium, and Kosher. It’s only 65 calories per Tablespoon and contains 5.5g fiber and only 1 net carb.
My Take: I like to call this “healthy Nutella.” It doesn’t taste identical to Nutella, but I almost prefer it now. It has a stronger hazelnut flavor along with dark chocolate!

7. Go Lo Foods [36 Calorie] Cookies
The 411: They contain 0g fat, less than 1/4g of sugar, and only 36 calories per cookie with a whopping 13g fiber, 7g of protein, and only 2 net carbs PER COOKIE (and they’re big!)!
My Take: These cookies are insane. You may think these delicacies are too good to be true, but I promise that with one bite, these soft and chewy cookies will cure your sweet tooth! They’re totally my new secret weapon for my late night snacking and sweet tooth! 1 cookie and a glass of water and I’m good to go!

8. cruncha ma-me
Fav Flav: Onion & Chive
The 411: cruncha ma-me is an all natural, high protein, non-GMO Verified, gluten-free and vegan, freeze-dried edamame veggie snack.
My Take: Perfect for snacking on the go, cruncha ma-me edamame snacks come in six delicious flavors and are rich in plant-based protein from non-GMO soybeans.

My Take: They’re easy to grab and go for healthy snacking on busy days. Plus you don’t need a spoon! These aren’t just for kids, I eat them in the car al the time!

10. The Scoopie™
The 411: Made the same standard size as the scooper provided in most protein powders/supplement jars, The Scoopie™ has an added funnel with a spout smaller than the circumference of a water bottle opening for accurate pouring. My Take: This little tool is genius! So simple! Just scoop, snap, flip & pour! I’m waiting for all protein powder companies to start including these in their jars! I can’t tell you how many times I’ve scooped something and attempted to pour it into a bottle and watched it pour all over my counter! Never again!

11. Slow Food For Fast Lives Savory Bars
Fav Flav: Savory Thai
The 411: Savory, not sweet ,health food bars.
My Take: These are awesome! There is nothing like these bars on the market! They’re made of vegetables, spices, brown rice, nuts and or seeds to create a savory granola style bar. I’ve never had anything like this, and they are super good! I tried so many sweet bars at expo that this savory veggie bar was a breathe of fresh air!

12. Rise Protein+ Bar
Fav Flav: Sunflower Cinnamon
The 411: Gluten free, non-GMO, dairy free, preservative free, vegan, 15g plant-based pea protein.
My Take: This bar is so ooey gooey good, I can’t believe it’s a protein bar! This particular flavor is nut free (made with sunflower seed butter) and contains only 5 ingredients, awesome!

13. The Chia Co. Chia Pod
Fav Flav: Mango
The 411: Each dairy free and vegan Chia Pod® provides 100% of your recommended daily intake of Omega 3 and 25% of your fiber.
My Take: I love the convenience of these little pods, they have a spoon built in, and are completely recyclable. They’re also made of only 3 ingredients!

Every once in a while, the entire team did sets of burpees next to their booth and got everyone all riled up. They have SO much energy!!! It must be the Vega! They’re also super knowledgable about nutrition. I must’ve sampled every product and flavor they had and asked 10 million questions.

Every time I walked by their booth, I stared at them with envy, and on the last day of Expo, a member of the Annie’s team grabbed a bandana from underneath their product, handed it to me, and said, “here, you need this!!!” BEST. DAY. EVER.!!!!! I folded it up and wore it as a headband for the rest of the day!

Hoppy Fridayyyyy my little bun buns!

A few of you have asked me for more before and after photos because they help you to stay motivated and on track. I searched my computes for quite some time to find old photos, but noticed that I don’t have too many full body pictures of myself. I was usually very covered up or couldn’t stand photos of myself, so I deleted them. Anyways here is another before and after to show you guys what rabbit food can do for your body! I hope that this can inspire you guys to eat more rabbit food!

So last week I said that I was going to go prop shopping for my kitchen/blog photos. That semi-happened, but I literally cannot get away from black and white props! It’s my fav! The Coco Chanel kitchen lives on!

I love love love dessert. I get my sweet tooth from my mom, who can literally eat candy and cookies like there’s no tomorrow and maintain her petite frame. I wasn’t blessed with that same gene, but man I love me some sugaaaa! I’m the kind of person that cannot live without dessert or a little something sweet every day. Instead of traditional store bought cookies loaded with oil, salt, refined sugar, and bad saturated fats (not to mention the totally addictive-cannot-stop-eating-one-after-the-other feeling that comes along with them!), I took to my kitchen to give an old fav a healthy spin! I wanted to make a super clean, healthy, peanut butter cookie that can be enjoyed with coffee and good conversation. Something that feels indulgent and naughty, but is actually quite filling and good for you!

Believe it or not, this recipe only calls for 7 ingredients that you probably have in your kitchen already!

Single Serving PB Cookie

Single Serving PB Cookie
Serves 1

1 Tbsp almond flour
1 Tbsp coconut flour
1 Tbsp creamy peanut butter
1 Tbsp unsweetened almond milk
1/2 Tbsp egg whites
1/2 tbsp chocolate chips (or 1 tsp mini)
1 packet stevia

Combine all ingredients in a bowl and mix until well combined. Spread the dough onto a microwave safe plate and flatten into a cookie shape. microwave for 1:15-1:30 minutes.
